Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) image

Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Number Of Ingredients 7

1 cup crushed pineapple (drained with juice reserved)
1 cup water (more or less depending on what's needed, see instructions below)
2 packages lime jello (3 oz each)
1 cup mayo
1 cup evaporated milk (canned)
1 cup small curd cottage cheese
1/2 cup walnuts (chopped)

Steps:

  • In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
  • Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
  • In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
  • Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

  • In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
  • Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
  • In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

2 pkg lime jello, 3 oz each
1 can(s) crushed pineapple, 8 oz, drained /reserve the juice
water with pineapple juice to equal 2 cups.
3 Tbsp lemon or lime juice
1 1/4 c chopped celery
1 pkg cream cheese, 8 oz, softened
3-4 Tbsp mayonnaise
1/2 to 3/4 c small curd cottage cheese, drained
1/3 c roughly chopped toasted pecans

Steps:

  • 1. Place water and pineapple juice to measure 2 cups, and lemon/lime juice in a medium microwaveable mixing bowl and heat to boiling on high in microwave. 3 to 4 minutes.
  • 2. Stir in Lime Jello and stir to dissolve completely 2 to 3 minutes. Refrigerate until slightly thickened and "syrupy".
  • 3. Whip together the cream cheese and mayo til smooth. Add the drained pineapple and celery and stir to mix.
  • 4. When Jello mixture is thickened, stir in the cream cheese mixture until well blended. Add cottage cheese and stir until evenly distributed.
  • 5. Pour mixture into 9 x 12 casserole and top with chopped toasted pecans.
  • 6. Cover and return to refrigerator to complete setting, 3 to 4 hours or overnight.
  • 7. To serve, cut into squares and top with a combination of whipped cream and mayonnaise mixed together. (about 1/2 and 1/2)

A Pennsylvania woman won 3rd place with this salad and, now her salad is famous and the other 2 recipes that got the higher awards are unknown. PERFECTION SALAD:
2 pkg (6 ounces each) lime jell-o
4 c boiling water
3 c cold water
2 c finely shredded cabbage
1 c finely shredded carrot
1/4 c thinly sliced celery
1 c crushed pineapple, well drained
1 pkg (3 ounces) lemon jell-o (plus water called for on package)
OPTIONAL DRESSING:
1 c mayonnaise or miracle whip
1-2 Tbsp milk, (more or less to your preference)
1-2 Tbsp sugar, (more or less to taste)

Steps:

  • 1. Combine the 2 packages of lime Jell-O with 4 cups of hot water in a large bowl, stirring until dissolved. Stir in cold water. Immediately add vegetables and well drained pineapple. Pour mixture into a mold or serving dish. Refrigerate until mixture has set (about 2 or 3 hours).
  • 2. Prepare the lemon Jell-O package following directions on package. Pour over the first mixture after it has set. Refrigerate the salad for several hours more or overnight. Unmold by dipping into hot water for 10 seconds.
  • 3. OPTIONAL: Serve with a sauce made of 1 cup mayonnaise or Miracle Whip thinned with 1-2 tablespoons milk, and sweetened with 1-2 tablespoons sugar. mix well until sugar is dissolved. Adjust amounts of milk and sugar to your taste. Spoon over salad as it is served.

Whenever I invite my big family for dinner, my grandchildren request this favorite fruit salad. My sons have always liked it, too - maybe the taste runs in our family! This salad is also good for potluck gatherings.

2 cups boiling water, divided
1 package (3 ounces) lemon gelatin
2 cups ice cubes, divided
1 can (20 ounces) crushed pineapple, liquid drained and reserved
1 package (3 ounces) orange gelatin
2 cups miniature marshmallows
1/2 cup sugar
2 tablespoons cornstarch
1 cup reserved pineapple juice
1 large egg, lightly beaten
1 tablespoon butter
3 large bananas, sliced
1 cup whipped topping
1/2 cup finely shredded cheddar cheese

Steps:

  • In a large bowl, combine 1 cup water and lemon gelatin. Add 1 cup ice cubes, stirring until melted. Stir in pineapple. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until set but not firm., Repeat with the orange gelatin, remaining water and ice. Stir in marshmallows. Pour over lemon layer; refrigerate until firm. , Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in reserved pineapple juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in butter. Cool to room temperature without stirring. Refrigerate for 1 hour or until chilled., Arrange bananas over gelatin. Stir whipped topping into dressing. Spread over bananas. Sprinkle with cheese.

A family recipe dating back to the early part of the 20th century, by my great-grandmother. I have a tendency to think of this as Grandpa's salad, because he always prepared it for us. My mom and sister still make it for our holiday family gatherings, although now we usually use sugarfree Jello. (I've recently discovered that Perfection Salad is not something unique to our family - there are a lot of old recipes on net for it. They're generally similar to the one below.)

1 cup boiling water
1 (3 ounce) package lemon Jell-O gelatin
2 tablespoons vinegar or 2 tablespoons lemon juice
1 teaspoon salt
1 cup cold water
1 cup finely diced celery
1 cup finely shredded cabbage
1 tablespoon dried onion flakes
2 tablespoons chopped pimiento
mayonnaise (Best Foods, Helmann's, or Vegenaise)

Steps:

  • Pour boiling water over jello in bowl.
  • Stir until jello is disolved.
  • Stir in vinegar, veggies, salt, and cold water.
  • Pour into mold, chill until firm.
  • Serve unmolded on chilled plate, topped with a generous dollop of mayonnaise (family tradition of the last 30 years or so demands that you use Best Foods mayo brand - *never* Miracle Whip).
  • If preferred, use 1/2 cup celery and 1 cup grated carrot.
  • You can use sugar-free jello for a diabetic/lowcarb version of Perfection Salad. Sometimes lemon jello is difficult to find - we've sometimes used lime instead.

1 package (6 ounces) lime gelatin
1 cup boiling water
1 package (8 ounces) cream cheese, softened
1/2 teaspoon vanilla extract
1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1 cup lemon-lime soda
1/2 cup chopped pecans
1 carton (8 ounces) frozen whipped topping, thawed, divided

Steps:

  • Dissolve gelatin in water. In a bowl, beat cream cheese until fluffy. Stir in gelatin mixture and beat until smooth. Stir in vanilla, oranges, pineapple, soda and pecans. Chill until the mixture mounds slightly when dropped from a spoon. Fold in three-fourths of the whipped topping. Pour into a 13x9-in. dish. Refrigerate for 3-4 hours or until firm. Cut into squares; garnish with the remaining whipped topping.
