1 cup plain whole-milk Greek yogurt
2 tablespoons honey, plus more for drizzling
2 teaspoons vanilla bean paste
¼ teaspoon kosher salt
4 assorted medium oranges (such as navel, Cara Cara, and blood oranges)
1 fresh medium pineapple, peeled and cored
½ cup toasted, sweetened coconut chips (such as Dang)

Steps:

  • Whisk together Greek yogurt, honey, 1 tablespoon water, vanilla bean paste, and salt in a medium bowl until smooth. (Store yogurt mixture, covered, in the refrigerator up to 2 days.)
  • Cut peel and pith from oranges; cut oranges into ¼-inch-thick rounds. Cut pineapple lengthwise into ¼-inch-thick planks; cut planks into 2-inch pieces. (Store orange rounds and pineapple pieces in an airtight container in the refrigerator up to 1 day.)
  • To assemble, spread yogurt mixture in a thick layer on a large platter. Arrange fruit over yogurt; drizzle with additional honey. Sprinkle with toasted coconut chips (breaking apart any larger chips), and serve.

1 package (3.4 ounces) instant vanilla pudding mix
1/4 cup honey
2 cups cold 2% milk
2 teaspoons grated orange zest
1/4 teaspoon vanilla extract
1 cup heavy whipping cream, whipped
1 banana, sliced
1 can (11 ounces) mandarin oranges, drained
1/4 cup sweetened shredded coconut
1/4 cup sliced almonds

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Add the honey, orange zest and vanilla. Fold in the whipped cream. , In individual dessert dishes, layer half of the pudding, banana slices, orange sections, coconut and almonds. Repeat layers. Chill.

1 (20 ounce) can crushed pineapple, undrained
1 (3.4 ounce) package instant vanilla pudding mix
2 (15 ounce) cans fruit cocktail, drained
2 (11 ounce) cans mandarin oranges, drained
1 (8 ounce) container frozen whipped topping, thawed
2 tablespoons sweetened flaked coconut, or more to taste

Steps:

  • Mix pineapple and pudding mix together in a bowl until pudding mixture is smooth. Fold fruit cocktail and oranges into pudding.
  • Fold whipped topping into pudding mixture until smooth; top with coconut.
  • Refrigerate until chilled, at least 30 minutes.

Who doesn't love pudding? No one & what a better pudding named after my grandmother.

2 c milk, low-fat
1 pkg jell-o vanilla flavor fat free sugar free instant pudding
1 can(s) mandarin oranges, drained
1/2 c baker's angel flake coconut

Steps:

  • 1. In a large bowl pour the milk. Then add in the pudding mix. Beat with a wire whisk for about 2 min or until well blended. Let tand for about 5 mins.
  • 2. Next stir in oranges & coconut. Spoon evenly into 6 dessert dishes.
  • 3. Then refrigerate at least 1 hour before serving. Store leftover pudding in the refrigerator.
  • 4. Special Tip: You may substitute 1/2 cup chopped fresh oranges.

This is a quick rich and yummy ambrosia made my way after looking at MANY different recipes. I hope you enjoy it. Rich and creamy its a great dessert in the summertime (or any other time). This recipe feeds anywhere for 12 to 20 depending on how hungry you are :) Cooking time is overnight in the fridge

2 can(s) 20 oz each crushed pineapple
2 can(s) 15 oz each mandarin oranges
1 c maraschino cherries - cut in halves can add more if you like
12 oz cool whip - thawed (1 container)
8 oz sour cream (1 container)
1 box instant vanilla pudding (3 1/2 ounces)
8 oz sweet coconut flakes ( 1 bag - i use bakers)
2 1/2 c marshmallows, mini

  • 1. Strain your pineapple and orange segments to get rid of extra juice. (I sometimes press on top of friut lightly to help this). You want your fruit as drained as possible, runny ambrosia is yucky :) add the cherries.

  • 3. Next fold in the cool whip and the sour cream. Then sprinkle the vanilla pudding and and give it another mix. Add the coconut, you can use more or less depending on how much you like coconut. Then mix it all together.
  • 4. Now I refrigerate overnight and then about 4 or 5 hours before you are ready to serve (in the morning is good)I add the marshmallows. This keeps them from getting too mushy. You can of course add them at the same time as the coconut. It's just a matter of preference Soon into cocktail glasses for a lovely presentation.

PUDDING:
4 cups white bread, cubed, about 8 slices
1/2 cup raisins
2 cups milk
1/4 cup butter
1/2 cup sugar
2 eggs, slightly beaten
1 tablespoon vanilla
1/2 teaspoon ground nutmeg
SAUCE:
1/2 cup butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup heavy whipping cream
1 tablespoon vanilla

Steps:

  • PUDDING: Heat oven to 350°F. Combine bread and raisins in large bowl. Combine milk and 1/4 cup butter in 1-quart saucepan. Cook over medium heat until butter is melted, about 4 to 7 minutes. Pour milk mixture over bread; let stand 10 minutes. Stir in all remaining pudding ingredients. Pour into greased 1 1/2-quart casserole. Bake for 40 to 50 minutes or until set in center. SAUCE: Combine all sauce ingredients except vanilla in 1-quart saucepan. Cook over medium heat, stirring occasionally until mixture thickens and comes to a full boil, about 5 to 8 minutes. Stir in vanilla. To serve, spoon warm pudding into individual dessert dishes; serve with sauce. Store any leftovers in the refrigerator.
