GRAND MARNIER CHOCOLATE FONDUE
Simple but elegant. Serve with assorted seasonal fruits (strawberries, grapes, banana slices, apple, star fruit) or perhaps even shortbread, etc. A wonderful romantic dessert or brunch special. :o)

Steps:
- In the top of a double boiler set over simmering water, combine the chocolate with the cream and Grand Marnier.
- Stirring occasionally, cook until mixture is smooth and heated through.
- Transfer to individual serving dishes, if desired, and arrange fruit around the fondue for dipping.
- Garnish with mint leaves, etc, if desired.

CHOCOLATE FONDUE
Steps:
- In a small saucepan heat cream and Grand Marnier to a boil. Place chocolate in a fondue pot or top of a double broiler. Pour cream mixture over chocolate and heat over low heat, stirring constantly, until smooth. Arrange fruits on a pretty platter, garnished with mint sprigs. Place pot of chocolate over a small candle or alcohol burner and adjust so heat is very low. Use long forks to dip fruits and sweets into chocolate.
CHOCOLATE ORANGE FONDUE
Steps:
- For serving: pound cake, doughnuts, long-stemmed strawberries, bananas or pretzels
- Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Add the cream, zest, coffee, and liqueur and stir constantly until the chocolate is melted and smooth. Transfer the mixture to a fondue pot and serve warm with pound cake, doughnuts, strawberries, bananas or pretzels.

- Bring whipping cream and grated orange peel to simmer in heavy medium saucepan. Reduce heat to low. Add chopped chocolate and 1 tablespoon Grand Marnier; whisk until mixture is smooth. Remove fondue from heat and blend in remaining 2 tablespoons Grand Marnier.
- Transfer fondue to fondue pot. Place over candle or canned heat burner. Serve with cake pieces and fruit for dipping.

- In a large saucepan, stir together the half-and-half, the milk, the orange juice, the zest, and a pinch of salt and bring the mixture just to a boil over moderate heat.
- In a small heatproof bowl, whisk together the chopped chocolate and about 2/3 cup of the hot milk mixture until the mixture is smooth and whisk the chocolate mixture into the remaining milk mixture.
- Simmer the hot chocolate, whisking, for 2 minutes, discard the zest, and stir in the Grand Marnier.
- (For frothy hot chocolate, in a blender blend the hot chocolate in batches.) Divide the hot chocolate among heated mugs and garnish each drink with some of the whipped cream and grated chocolate.
