AUNT JUNE'S OLD FASHIONED FUDGE



Aunt June's Old Fashioned Fudge image

How to make fudge the old fashioned way: just minutes of your time plus a few dollars of pantry ingredients gives you a candy shop quality homemade chocolate fudge perfect for gifting (or keeping!)

2 cups granulated sugar
1/4 cup cocoa powder (Hershey's is fine)
1/2 teaspoon salt
2/3 cup half and half
1 tablespoon corn syrup
3 tablespoons butter
2 teaspoons vanilla extract

Steps:

  • Combine all ingredients except butter and vanilla. In a 2 quart saucepan, combine the sugar, half and half, cocoa, salt, and corn syrup. Mix well with a whisk and bring to a boil over medium-low heat. While the fudge is cooking, butter a plate or baking dish for pouring the mixture into later.
  • Heat until the mixture reaches 240 degrees. Let the fudge cook until it reaches 240 degrees, checked with a candy thermometer or instant-read thermometer. Don't stir during the cooking process. Once the temperature is reached, immediately remove the pan from the heat.
  • Place butter and vanilla on top and allow to cool. Place the butter and vanilla on top of the fudge and allow it to cool. Do not mix or disturb the pan. Let it cool about. 20 minutes until the side of the pan is warm but not hot to the touch.
  • Mix with a hand mixer until fudge begins to firm up. Using a hand mixer on medium-low, beat the fudge for 1-3 minutes until it just begins to firm up and lose its shine.
  • Quickly pour into a buttered dish, cool, and cut. Once the fudge changes texture, immediately pour it into a dish to set. Work quickly. It if is not pourable, just scoop it out and flatten in the best you can. Allow it to cool for 20 minutes and cut into one-inch squares.

GRAMMA'S FUDGE



Gramma's Fudge image

Been eating this fudge for 40+ years. After gramma could no longer make it I took over. Family tradition to always have this fudge at the holidays.

Number Of Ingredients 8

4 1/2 cups sugar
1 can evaporated milk
1/2 lb margarine
3 cups chocolate chips
2 (7 ounce) jars marshmallow creme
1 cup nuts, chopped fine (optional)
2 teaspoons vanilla
1 dash salt

Steps:

  • In large pan mix sugar, milk and margarine.
  • Boil until soft ball stage, about 8 minutes of a rolling boil.
  • Remove from heat and quickly add remaining ingredients.
  • Mix well.
  • Spread in 9x13 pan greased.
  • Let set.
  • Makes about 5 pounds.

GRAM'S FUDGE RECIPE

Number Of Ingredients 7

4-1/2 c. sugar
2 sticks (1/2 lbs) butter
1 can evaporated milk
1 Tbsp. vanilla extract
2 c. miniature marshmallows
2 c. chocolate chips (or vanilla, butterscotch, etc)
Optional: 2 c. nuts, dried fruit or a combination

Steps:

  • Butter 9×13 pan and set aside. Place a large heavy pot over medium heat. With a wooden spoon stir together sugar, evaporated milk, butter until it starts bubbling. Once it comes to a rolling boil set timer for exactly 11 minutes and keep stirring constantly. When timer goes off, turn off heat and remove pan. Add vanilla, marshmallows, chocolate chips and optional ingredients if using. Beat with wooden spoon until marshmallows and chocolate chips are dissolved and mixture is smooth and shiny. Pour mixture into prepared 9×13 inch pan. Cool long enough until set and cut before it becomes crumbly.

MY GRAM'S 5 LB FUDGE



My Gram's 5 lb Fudge image

My grandma has made this year after year and I was lucky enough to get this recipe from her. It is quite rich. I like to add all walnuts to it but pecans would be great too. Someone once mentioned adding cranberries which I think would be good too. Hope you like it. It is a great do ahead recipe.

2 package(s) good semisweet chocolate chips
1 cup(s) or 2 sticks of butter or margarine
1 jar(s) marshmallow cream or 16 lg marshmallows
1 can(s) 13oz evaporated milk
4 1/2 cup(s) sugar
2 tablespoon(s) vanilla
1-2 cup(s) chopped nuts

Steps:

  • Place the chocolate, butter and marshmallow cream in a large bowl. In a heavy 4 quart saucepan bring to a boil the milk and sugar, stirring constantly.
  • When mixture reaches full rolling boil start timing and cook for 8 minutes, stirring frquently. Pour over the chocolate mixture and stire until well blended. Beat in the vanilla then stir in the nuts. Pour evenly into a greased 15"x10"x1" jelly roll pan. Spread evenly. Cool for about 10 minutes then refrigerate to firm at least a couple hours to overnight. Cut into 1" squares when cooled. Remember it is quite rich so not too big. Yummy!

S'MORES FUDGE



S'mores Fudge image

Whipped this up for a birthday present and it was too excellent not to share! This is an excellent treat for your next holiday party or backyard barbecue! The amount of graham crackers and marshmallows used is based on personal preference. Feel free to experiment using more or less!

8 graham crackers, crushed
1 pound semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
¼ cup unsalted butter
2 tablespoons vanilla extract
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Line an 11x7-inch baking dish with parchment paper. Sprinkle half of the graham cracker crumbs on bottom of dish.
  • Melt chocolate chips, sweetened condensed milk, butter, and vanilla extract in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Pour half of melted chocolate mixture into prepared baking dish; sprinkle about half of the miniature marshmallows over the top, covering the chocolate mixture. Repeat with the remaining chocolate mixture and graham crackers, respectively.
  • Refrigerate until solid, 3 hours to overnight.
