Homemade rich tasting choclate cream filling silky in texture and delicious covered with whipped topping. This was my grammy's chocloate pie and a favorite to our family and anyone who knew her.

Number Of Ingredients 8

1 cup milk, hot
2 squares baking chocolate squares, grated
2 egg yolks
1 tablespoon flour
3/4 cup sugar
1 teaspoon vanilla
1/3 cup cold milk
1/2 teaspoon salt

Steps:

  • Heat 1 Cup milk in pan and turn fire off. Add grated choclate to melt. In separate bowl mix flour, sugar, egg yolks, vanilla and salt to cold milk. Mix well and add to hot milk. Cook mixture over low heat until smooth keep stiring to keep from scorching.
  • Add mixture to pie shell and bake at 350 degrees for 30 minutes. Transfer to fridge to cool and set up. Top with whipped topping.

This is your grandma's puddin' pie, only it's vegan - a smooth, cool and creamy pudding in a classic graham cracker shell. To make life even easier, you can use a store-bought crust. For added grandma love, serve with vegan whipped cream and shaved chocolate. (This recipe is an adaptation of one found in "Vegan Pie in the Sky: 75 Out-of-This-World Recipes for Pies, Tarts, Cobblers and More" by Isa Chandra Moskowitz and Terry Hope Romero.)

Number Of Ingredients 11

1 3/4 cups finely ground graham crackers (made from 10 ounces of whole graham crackers)
3 tablespoons sugar
4 tablespoons melted nonhydrogenated margarine, melted coconut oil or canola oil
1 tablespoon plain soy milk or almond milk
3 cups almond milk
1/4 cup cornstarch
1/3 cup sugar
3 tablespoons unsweetened cocoa powder
Big pinch of salt
1/4 cup semisweet chocolate chips
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees and lightly spray a 9-inch pie plate with nonstick cooking spray.
  • In a mixing bowl, combine the graham crumbs and sugar. Drizzle in the oil or melted margarine. Use a spoon to blend the mixture thoroughly to moisten the crumbs, then drizzle in the soy milk and stir again to form a crumbly dough.
  • Pour the crumbs into the pie plate. Press crumbs into the sides of the plate first, then work your way down to the bottom. Bake for 8 to 10 minutes until firm. Let the crust cool before filling.
  • In a small (2-quart) saucepan off the heat, combine 1 cup of the almond milk and the cornstarch. Use a fork to whisk until the cornstarch is good and dissolved. Whisk in the remaining almond milk, the sugar, cocoa powder and salt. It's O.K. if the cocoa is a bit clumpy at first; it will dissolve eventually.
  • Bring the mixture to a boil, whisking occasionally. Keep a close eye because once boiling, you want to lower the heat and bring it to a slow rolling boil. Whisk consistently until the mixture is thickened, which should be about 7 minutes.
  • Add the chocolate chips and mix to melt. Stir in the vanilla extract. Pour the pudding into the prepared pie shell and let cool for about 15 minutes on the counter, just until it stops steaming like mad. To keep a skin from forming, place a circle of parchment paper over the filling. Refrigerate and let set for at least 3 hours.

3 egg yolks, beaten
1 cup sugar
1/4 cup plain flour
2 cups milk
4 tablespoons cocoa, heaping
1 teaspoon vanilla
2 tablespoons butter
1 pie shell, baked
3 egg whites
1/4 teaspoon cream of tartar
8 tablespoons sugar
1 teaspoon vanilla

Steps:

  • Combine sugar, flour and cocoa in saucepan.
  • Stir in milk and cook over medium heat until thick.
  • Remove from heat and temper in egg yolks.
  • Return to heat and simmer 2 more minutes.
  • Remove from heat and stir in butter and vanilla.
  • Pour into baked pie shell.
  • Top with meringue.
  • Bake 400 degree oven for 10 minutes until lightly brown.
  • Chill.
  • Merinque:.
  • Beat egg whites and cream tartar until frothy.
  • Beat in sugar and vanilla until stiff peaks form.
  • Spoon on top of custard.

dash of salt
3 egg yolk (save whites)
2 cups milk
1 tablespoon vanilla
1 (9-inch) pie crust, baked and cooled

Meringue:
3 egg whites
6 tablespoons sugar

Steps:

  • Mix dry ingredients. Add egg yolks and milk. Cook over medium-high heat, stirring constantly, until thick and bubbly. Take off heat and add vanilla. Stir. Pour into the baked pie crust. Meringue: Beat egg whites until stiff. Fold in sugar. Put meringue on pie filling and brown in 375° oven.

2 (8 ounce) packages cream cheese, softened
½ cup white sugar
3 eggs
4 ounces German sweet chocolate, melted, divided
4 ounces semisweet chocolate, melted, divided
1 (8 inch) prepared graham cracker crust
½ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix cream cheese and sugar together in a bowl using an electric mixer. Mix in eggs. Add 1/2 the German chocolate and 1/2 the semisweet chocolate; beat until thick and smooth. Pour into the prepared pie crust.
  • Bake in the preheated oven until set, 30 to 35 minutes. Let cool completely, about 30 minutes. Chill in the refrigerator for 4 hours.
  • Mix remaining German chocolate and semisweet chocolate with sour cream in a bowl. Spread over chilled pie. Return to the refrigerator until firm, about 1 hour.

1/2 cup cocoa
1/4 cup cornstarch/or arrowroot powder (or 1/2 cup all purpose flour)
3 egg yolks
1 1/2 cup sugar
1/4 teaspoon salt
2 cup milk
1 teaspoon vanilla
9 " pre-baked pie shell

Steps:

  • Mix cocoa, cornstarch, beaten egg yolks; sugar and salt, then add milk gradually, while stirring in a pot over med-high heat. Cook until thick, beating it smooth. While stirring, mix in the vanilla. Cream pies take some time to thicken, so stir... and stir (10 to 15 minutes). Using a heavy bottom pan really helps. Just keep it up until it thickens. Pour into a pre-baked pie shell. Put in the fridge to chill for several hours before serving. Add whipped cream, cool whip, or a baked meringue for the topping if you like :)
