Cook, stirring frequently, until you create a blond roux, about 5 minutes. Add the milk, cheese and mustard and use a whisk to stir all together. Season with salt and pepper and let cook for 5 minutes on low.

Pour the warm cheese sauce over the top and sprinkle with the jalapenos and cilantro. Garnish with dollops of the sour cream.
GRAMMA'S HOT AND SPICY NACHO DIP
My mother-in-law is an excellent cook. She serves this at family gatherings; it's a hit with everyone who likes hot dip with a bit of fire. This recipe freezes well. I have made it successfully in the crockpot, using pre-cooked burger crumbles.

ZESTY NACHO DIP
To increase this hearty dip's zip, use another can of chilies and Mexican-style stewed tomatoes and processed cheese. You could also keep it warm in a slow cooker or fondue pot. It's tasty served over a baked potato, too. Denise Hill - Ottawa Lake, Michigan

OUTRAGEOUS WARM CHICKEN NACHO DIP
This is my jazzed up version of classic queso dip taken to a heartier level, perfect for football games, tailgating or for taking along to pot lucks in a slow cooker! This is a serious crowd-pleaser that is served hot as a dip, spooned over crisp tortilla chips nacho-style, or rolled up in a warm flour tortilla! The heat can be turned up or down with the addition of jalapenos to taste.
