- Preheat oven to 350 degrees F (175 degrees C). Grease 1 large loaf pan.
- Blend bananas, chickpeas, butter, dates, almond flour, honey, eggs, baking soda, ginger, cinnamon, vanilla extract, and salt together in a blender or food processor until batter is smooth. Pour batter into the prepared loaf pan.
- Bake in the preheated oven until golden brown and a knife inserted in the center of the loaf comes out clean, about 1 hour. Cool in pan for 15 minutes before slicing.

- Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups.
- In large bowl, mix almond flour, baking soda, salt and cinnamon. In another large bowl, mash bananas; stir in maple syrup, eggs, vanilla and coconut oil. Pour banana mixture into almond flour mixture, and stir until just combined. Divide batter evenly among muffin cups (cups will be full).
- Bake 22 to 27 minutes or until tops turn golden brown. Cool 5 minutes. Remove from pan to cooling rack. Cool completely.

- Preheat the oven to 350ºF. In a large mixing bowl, whisk together the mashed bananas, mayo, and honey until combined.
- In a separate bowl, combine the remaining dry ingredients. Whisk together to remove any clumps and all the dry ingredients are fully incorporated. Add the dry ingredients to the wet, banana mixture. Whisk to combine.
- Line a 9×5 inch loaf pan with parchment paper. Pour the batter into the lined loaf pan and bake for 60-65 minutes. Oven times may vary depending on how uniform your oven is. Allow banana bread to cool for at least 10 minutes before serving.
