A wonderful, very rich pudding recipe that is one of our family's favorites. My husband's grandma makes it every Thanksgiving and Christmas. This delicious dessert never lasts long, and it's very filling, too.

½ cup butter, melted
½ cup brown sugar
24 graham crackers, crushed
1 quart milk
1 pinch salt
3 egg yolks, beaten
1 tablespoon vanilla
1 cup white sugar
¼ cup cornstarch
3 egg whites
1 teaspoon confectioners' sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, mix butter, brown sugar, and 2/3 of the crushed graham crackers. Press lightly into the bottom of a 9x13 inch baking dish.
  • In a medium saucepan over medium heat, mix milk, salt, egg yolks, vanilla, white sugar, and cornstarch. Stirring constantly, cook until thickened, about 12 minutes. Pour into the baking dish.
  • In a medium bowl, beat egg whites until soft peaks form, then mix in confectioners' sugar. Spoon over the mixture in the baking dish, and top with remaining crushed graham crackers.
  • Bake 15 minutes in the preheated oven, until lightly browned.

6 whole cinnamon graham crackers
1 cup applesauce
1 cup whipped topping
Chopped walnuts, optional

Steps:

  • Place one graham cracker on a serving plate. Spread with 2 heaping tablespoons of applesauce. Repeat layers, ending with applesauce. Spread the whipped topping over top and sides. Sprinkle with nuts if desired. Refrigerate for 2 hours before slicing.

1 teaspoon vanilla
2 eggs, beaten
3/4 cup heavy cream (half-and-half is fine)
2 1/2 cups graham cracker crumbs
1/4 cup melted butter

Steps:

  • Combine applesauce, vanilla, eggs and heavy cream. Mix well.
  • Combine graham cracker crumbs and butter and add one cup of crumbs to the applesauce mixture.
  • Pour the applesauce mixture into a greased 8 x 10-inch pan and top with remaining crumbs. Bake in a moderate oven for 30 minutes.

This is a recipe I came up with when trying to get my son to eat more fiber. He hated the store bought brands of applesauce and who could blame him. We like this served hot with a little butter and is a great addition to oatmeal, cream of wheat or spooned over vanilla ice cream. *Use whatever variety of apple that is your favorite.*

5 apples, peeled and cored
1/4 cup brown sugar
1 dash salt
1 vanilla bean
1 cinnamon stick
water

Steps:

  • * Cut your apples into wedges and transfer to a medium sauce pot.
  • * Barely cover the apples with water and add the vanilla bean and cinnamon stick.
  • * Cover the pot and bring to a boil. Then remove the cover and allow everything to simmer till apples appear to be falling apart.
  • * Do not drain. Remove apples from heat and carefully take out the vanilla bean and cinnamon stick. Add the brown sugar and salt.
  • * With a potato masher or fork mash up the apples until they obtain the desired consistency. Serve hot or cold.
  • SUBSTITUTIONS:.
  • Replace vanilla bean for 1 teaspoon of vanilla extract.
  • Replace cinnamon stick for 1/2 teaspoon of ground cinnamon.
