Oatmeal, peanut butter, and chocolate no bake cookies.

3 tablespoons unsweetened cocoa powder
2 cups white sugar
½ cup milk
½ cup butter
3 cups quick cooking oats
½ cup crunchy peanut butter
1 tablespoon vanilla extract

Steps:

  • Heat cocoa, sugar, milk and butter over medium heat. Boil these verrrrry slowly (they will turn out better) when they reach the boiling point boil them for no longer than 90-120 seconds.
  • Stir together oats, peanut butter and vanilla with a big wooden spoon or Kitchen Aid. Pour the hot mix over the oatmeal mix and drop on wax paper.

3/4 cup butterscotch chips
3/4 cup creamy no-stir peanut butter
1 cup quick-cooking oats
1 1/4 cups unsweetened shredded coconut, divided
1/4 teaspoon kosher salt
2 ounces dark chocolate (optional)

Steps:

  • Heat butterscotch chips and peanut butter in a medium heatproof bowl set over a medium pot of barely simmering water (bottom of bowl should not touch water), stirring occasionally, or in short bursts in the microwave, stirring in between bursts, until butterscotch is melted and smooth. Add oats, 1 cup coconut, and salt; stir gently to combine.
  • Spoon mixture by the tablespoonful onto a parchment-lined sheet tray. Gently press balls in the center to flatten. Chill until set, about 10 minutes.
  • Heat chocolate, if using, in a medium heatproof bowl set over a medium pot of barely simmering water (bottom of bowl should not touch water), stirring occasionally, or in short bursts in the microwave, stirring in between bursts, until chocolate is melted and smooth. Drizzle cooled cookies with chocolate, top with remaining 1/4 cup coconut, and chill until set, about 5 minutes, before serving.

  • Cookies can be made 5 days ahead. Store in an airtight container and chill.

1/2 cup margarine
2/3 cup evaporated milk
1 1/2 cups sugar
1 cup butterscotch chips
4 cups quick oatmeal (have used the other & it turns out just fine)

Steps:

  • Put margarine, evaporated milk, and sugar in a pot.
  • Heat and stir until boiling.
  • Boil 1 minute, stirring constantly.
  • Remove from heat.
  • Add butterscotch chips, stir well.
  • Add oatmeal and stir again.
  • Cool silghtly until mixture can be handled.
  • Drop onto greased cookie sheets.
  • Chill until firm.
  • Can be frozen for future use.

- 1/2 bag of [a large bag] of coconut
- almost 1/2 bag choc chips
- 1/4 can coconut milk
- about 1/2 can sweetened milk
- cookie sheet lined with wax paper

Steps:

  • in double boiler melt choc chips. stir in sweetened milk til nice and smoothe. then stir in coconut milk til smooth
  • add the coconut 1 cup at a time. i added 3 cups and it did great. blend well. should b real thick.
  • with wooden spoon drop onto wax paper. i put mine in the fridge to set
  • take out and plate. hope u like these.

- 1 large bag coconut
- 1/2 teasp vanilla
- cookie sheet lined with wax paper
- 1 cup powdered sugar

Steps:

  • melt chips in double boiler til smooth. add milk stir til smooth. add vanilla
  • add powdered sugar and coconut 1 cup at a time til thick and coconut is covered in mixture
  • then drop by tabspfuls onto cookie sheet lined with wax paper. then place in fridge for about 30 mins. then take out and plate
