A slightly lighter version of the all-American classic, this satisfying meatloaf uses chicken broth and soaked panko to stay moist, and a mix of fresh herbs for flavor. It's the best turkey meatloaf you'll find!

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
  • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

I got this recipe online at www.epicurious.com. It does require a lot of prep time but is worth it. I also add some finely chopped red pepper. I've even used bbq sauce in place of ketchup for a change.

1 1/2 cups finely chopped onions
1 tablespoon minced garlic
1 teaspoon olive oil
1 medium carrot, cut into 1/8-inch dice
3/4 lb cremini mushroom, trimmed and very finely chopped in a food processor
1 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons Worcestershire sauce
1/3 cup finely chopped fresh parsley
1/4 cup plus 1 tablespoon ketchup
1 cup fine fresh breadcrumb (from 2 slices firm white sandwich bread)
1/3 cup 1% low-fat milk
1 whole large egg, lightly beaten
1 large egg white, lightly beaten
1 1/4 lbs ground turkey (mix of dark and light meat)

Steps:

  • Preheat oven to 400°F
  • Cook onion and garlic in oil in a 12-inch nonstick skillet over moderate heat, stirring, until onion is softened, about 2 minutes.
  • Add carrot and cook, stirring, until softened, about 3 minutes.
  • Add mushrooms, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, stirring occasionally, until liquid mushrooms give off is evaporated and they are very tender, 10 to 15 minutes.
  • Stir in Worcestershire sauce, parsley, and 3 tablespoons ketchup, then transfer vegetables to a large bowl and cool.
  • Stir together bread crumbs and milk in a small bowl and let stand 5 minutes.
  • Stir in egg and egg white, then add to vegetables.
  • Add turkey and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper to vegetable mixture and mix well with your hands. (Mixture will be very moist.)
  • Form into a 9- by 5-inch oval loaf in a lightly oiled 13- by 9- by 2-inch metal baking pan and brush meatloaf evenly with remaining 2 tablespoons ketchup.
  • Bake in middle of oven until thermometer inserted into meatloaf registers 170°F, 50 to 55 minutes.
  • Let meatloaf stand 10 minutes before serving.

1/2 cup milk
3 pounds lean (7 percent) ground turkey, preferably organic
1 medium onion, finely chopped
2 large eggs, lightly beaten
1/4 cup plus 2 tablespoons ketchup
1/4 cup chopped flat-leaf parsley
1 tablespoon plus 1 teaspoon Dijon mustard
1 tablespoon coarse salt
1 teaspoon rubbed sage
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Place panko and milk in a large bowl; stir until well combined. Let stand 5 minutes.

I've only been making meatloaf for a short time. This was the third recipe I've tried & this is by far the best! It's so simple! I'd recommend it to anyone, even those who are beginner cooks. I half the ingredients when I make it because I'm usually only cooking for 3.

1 cup milk
1 cup Italian seasoned breadcrumbs
2 eggs
1 teaspoon salt

3/4 lb colby cheese, cut into 1/2-inch cubes
1/2 cup ketchup (optional)

Steps:

  • Preheat oven to 400 degrees F.

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced

1 tablespoon Worcestershire sauce
