GOURMET FOUR CHEESE MACARONI AND CHEESE
When a recipe is SO good that it haunts your memory for over 40 years, you know it had to be good! As a young bride, I made this macaroni and cheese dish from a requested recipe from Bon Appetit magazine. Sadly, if I saved the recipe, it was lost along the years of moving. After the Internet, I searched, in vain, for this recipe for years, until I discovered 3/4's of it in a women's magazine. With the help of many Zaar members that helped me find the missing cheese that was needed, I now have the long lost recipe and the ability to make it again and again for an entire new generation of friends and family! This is NOT meant to be an everyday mac & cheese. It's great comfort food when you want to celebrate something special: a good grade, a birthday, or an "I love you!" kinda day. Don't skimp on the cheeses; they will be slightly costly. But, the end result is Oh So Good ! You will not be disappointed in the complex flavours of this simple dish, with a twist.

- PLEASE NOTE: This is a BAKED macaroni and cheese, therefore, it will NOT turn out with a lot of extra cheesy sauce asis absorbed into the pasta while baking. If you require an extra saucy mac & cheese, just reduce the amount of pasta you place into the dish or make more sauce so it is creamier. Thanks so much for making this dish; I hope you enjoy it! :).
- Heat oven to 350 degrees. Coat a 3 quart rectangular baking dish with non-stick spray. Bring a large pot of lightly salted water to boiling.
- Toss all the shredded cheeses together in a large bowl, set aside.
- Melt butter in a medium-sized saucepan over medium heat. Whisk in the flour until smooth and slightly bubbly.
- In a thin stream, whisk in the milk. Stir in the onion powder, salt, nutmeg, dried mustard and cayenne.
- Bring to a boil over medium high heat. Reduce heat and simmer 3 minutes. Remove from heat; whisk in 2 1/2 cups of the cheese mixture and stir until smooth. Cover to retain the heat.
- Once water boils, add pasta. Cook until your desired doneness, then drain. In the pasta container, stir together the cooked pasta and cheese sauce.
- Pour half of the mixture into the prepared dish. Sprinkle with a generous cup of the reserved cheese. Spoon remaining cheese-covered pasta into the dish and top with the remaining cheese.
- Add 1 cup of Japanese Panko Bread crumbs to the top of mixture.
- Bake at 350 degrees for 30 minutes or until the Panko crumbs are lightly browned and the cheese is bubbly. Cool slightly before serving.

- 1. Making a roux In a heavy large saucepan over high heat, melt 6 tablespoons of the butter. When it bubbles, gradually sprinkle and whisk in the flour to form a smooth paste. Reduce the heat to medium. Cook, whisking constantly for 1 to 2 minutes, without browning. 2. Completing and enriching the béchamel Whisking continuously, gradually pour the hot milk into the roux. Adjust the heat to maintain a simmer. Season with salt, pepper, and 1/4 teaspoon nutmeg. Briskly whisk the egg yolks into the pan. 3. Making the cheese sauce Whisk in the Cheddar until smooth. Simmer over low heat, whisking often, until the sauce is thick enough to coat a spoon, 15 to 20 minutes. Add and whisk in one-half cup Parmesan. Adjust seasonings to taste, adding more nutmeg if you like. 4. Cooking the macaroni Cook the macaroni in a large pot of boiling salted water until al dente, tender but still slightly chewy. Drain the pasta, reserving 1/2 cup of the cooking water. Rinse the macaroni under cold running water to stop the cooking, and drain again. 5. Combining macaroni and sauce Butter a 10- to 12-cup baking dish. Transfer the macaroni to a large bowl. Add the cheese sauce and stir well to combine, adding some reserved cooking liquid by tablespoonfuls if needed to coat the pasta well. Spread the mixture in the prepared dish. 6. Topping the casserole Position a rack in the center of the oven and preheat to 400 degrees F. Sprinkle the mozzarella evenly over the top of the macaroni mixture. Sprinkle with the remaining Parmesan cheese, then the breadcrumbs. Dot the top with 1 to 2 tablespoons butter. 7. Baking and serving Bake until the pasta is heated through and the topping is crisp and deep golden brown, 30 to 40 minutes. To serve, scoop onto individual plates or into bowls.

- Preheat oven to 350°F.
- Meanwhile, melt 4 T. of the butter in a medium saucepan over medium heat.
- Saute onions until tender and translucent.
- Whisk in flour to make a roux and cook for a couple minutes, stirring, until golden.
- Slowly whisk in the milk with a wire whisk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes.
- Remove pan from heat and whisk in grated cheese. Stir vigorously until cheese has just melted.
- Then whisk in heavy cream to achieve the desired consistency and season to taste with the salt, white pepper and mustard.
- In a mixing bowl combine sauce with drained macaroni and adjust salt and white pepper to desired flavor.
- Transfer mixture to a 13 x 9 inch baking dish and spread it out evenly.
- Sprinkle bread crumbs on top and dot with remaining 4 T. of butter.
- Bake until hot and bubbly, about 30 minutes.
- Let stand 5 minutes before serving.

BONNIE'S GOURMET THREE CHEESE MACARONI AND CHEESE

- PREHEAT OVEN TO 375*F. THEN START BY COOKING THE PASTA BY THE BOX DIRECTIONS BUT ALWAYS ADD SALT TO THE WATER AND OLIVE OIL BECAUSE THIS IS THE ONLY TIME TO FLAVOR THE PASTA. THEN WHEN DONE, DRAIN AND RINSE WITH HOT WATER. SET ASIDE. THEN START IN A LG. POT ADD MELT- ED BUTTER LET THE BUTTER HEAT THROUGH ENOUGH THAT LIT- TLE BUBBLES FORM, THEN ADD THE FLOUR. RIGHT AWAY WHISK THE FLOUR SO AS TO COMBINE TOGETHER AND LET THE RAW FLOUR TASTE COOK OUT. ABOUT 2 OR 3 MINS. THEN SLOWLY STREAM IN THE MILK AND THE CREAM WHILE STILL WHISKING. LET IT BECOME THICK WHEN YOU KNOW IT WILL STICK TO THE BACK OF A WOODEN SPOON. NOW ADD ALL 3 CHEESES AND WHISK UNTIL IT IS SMOOTH. THEN ADD ALL SEASONINGS WHISK UNTIL WELL BLENDED. TAKE OFF HEAT. GOURMET BUTTERNUT SQUASH MACARONI & CHEESE
My sister clipped this from the Bucks County Courier Times because this foodie loves squash and mac n cheese, so the two of them together = heaven. I'm posting the recipe here for safekeeping although I'm probably going to tweak it according to size and budget (do you know what Locatelli cheese is...? I'll probably just use cheddar. And I'm too lazy to cut a piece of squash, I'm using that frozen pureed squash!) And I'll probably skip the panko topping or at least do it un-buttered to save on calories.

- Season the squash with salt and pepper as desired.
- Spread water and butter on a sheet pan. Place the squash, flesh side down, on the pan.
- Roast until the squash is tender (fork-able) them remove from oven and cool.
- I guess if you're using frozen squash, you can skip the next step.
- Scoop out the flesh and place in a food processor, pulse until the squash is pureed. Measure out 1/2 cup puree; save the remainder for soup or another use.
- Cook pasta al dente in salted water, and drain.
- For the sauce: Melt butter in a heavy-bottomed saucepan.
- Whisk in the flour and dry mustard.
- Add the milk slowly, whisking continuously until smooth.
- Add some nutmeg and cook on low heat until the sauce thickens and the flour taste dissipates.
- Whisk in the cheese, a little at a time, until all the cheese has been incorporated. Fold in the 1/2 cup squash puree. Season with salt and white pepper.
- Stir together the pasta and sauce in a large mixing bowl. Spread in a greased shallow baking dish.
- To make the topping, melt the butter in a pan then stir in the pank and mix until the crumbs are well coated with butter. Stir in the cheese.
- Sprinkle the topping evenly over the pasta.
- Bake at 350 until golden brown, probably 25-35 minutes.

GOURMET MACARONI AND CHEESE WITH CHICKEN
This is adapted from a recipe I found in a "Cook's Country" magazine, which among other things different, used 4 cups colby cheese to my 2 (I got tired of shredding). However, I found the 4 cups total cheese to suit me just fine. Also, I think I used less butter, but I don't remember exactly how much so I'll stay true to the recipe on that one.

- Pulse bread, Parmesan, garlic, and 2 tablespoons of butter in a food processor until coarsely ground. (Alternatively, using your hands to do such also works.).
- Cook pasta as directed, drain it, and pour into a baking dish of choice.
- Preheat the oven to 375 degrees, and make sure there is an oven rack in the middle position.
- Heat remaining butter, flour, mustard, and cayenne over medium-high heat, stirring constantly, until golden, 1 to 2 minutes.
- Slowly whisk in broth, drained chicken broth, and cream and bring to a boil.
- Reduce heat to medium and simmer until slightly thickened, about 15 minutes.
- Take the pot off the heat, and whisk in the cheese, chicken, salt, and pepper until smooth.
- Mix the sauce in with the pasta, cover with aluminum foil, and bake in the middle oven rack for 20 minutes.
- Remove the foil, top with breadcrumbs, and bake until the breadcrumbs are golden brown and crisp, about 20 minutes.

- Add salt, sugar and velveeta. Stir until velveeta melts.
- Mix in sour cream and cottage cheese.

- Cook and drain macaroni and place in a 2 1/2 quart (2.5 L) greased casserole.
- Melt butter over medium heat; stir in flour; mix well.
- Add milk and cook over medium heat, stirring constantly until sauce thickens.
- Add salt, sugar and cheese. Mix well.
- Mix sour cream and cottage cheese into sauce.
- Pour sauce over macaroni. Mix well.
