3 lbs idaho potatoes, peeled and cubed
6 tablespoons unsalted butter
3/4 cup heavy cream, plus more if needed
3/4 lb shredded smoked gouda cheese
salt
fresh ground white pepper

Steps:

  • Place potatoes and 1 teaspoon of salt in a saucepan and cover with cold water.
  • Bring to a boil and cook over medium heat until fork tender, 15 to 20 minutes.
  • Drain.
  • Return the potatoes to the saucepan and add the butter, cream, and cheese.
  • Mash the potatoes, stirring to incorporate the seasonings.
  • Season with salt and freshly ground white pepper. Serve warm.

6 cups cubed peeled baking potatoes (about 1 1/2lbs)
2/3 cup 1% low-fat milk
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 cup shredded smoked gouda cheese (3 oz)

Steps:

  • Place potatoes in a saucepan; cover with water.
  • Bring to a boil; reduce heat and simmer for 20 minsutes.
  • Drain.
  • Return potatoes to pan; add milk, salt and pepper.
  • Mash with potato masher.
  • Stir in the cheese.
  • Serve and enjoy.

I got tired (but still love them) of Garlic Mashed Potatoes and wanted to try something new, this is what I came up with. Please keep in mind I am a chef who cook's by feel and taste so all measurements are subjective (guess that's why I don't bake much). Use your math and this recipe can be reduced or multiplied easily. Peel on or peel off? Up to you.

5 lbs potatoes, cubed, use spuds with a high moisture content (or add extra moisture using cream or butter, if you must use some potato "broth")
1 lb smoked gouda cheese, shredded
5 tablespoons prepared horseradish or 3 tablespoons fresh grated horseradish
1/4 lb butter, cut into small bits
1 cup half-and-half
salt and pepper, I let my family and guests do this for themselves

Steps:

  • Boil potatoes until tender, drain (DO NOT rinse), return to pot and place over LOW heat.
  • Add half and half and start mashing.
  • Add Smoked Gouda, keep mashing.
  • Add horseradish, keep mashing.
  • Add butter and stir a bit.
  • Serve, the bits of butter should still be melting.

1 ⁄2 cup buttermilk, warmed
1 ⁄2 cup plain Greek-style yogurt
1 Tbsp. chopped fresh chives
Salt and black pepper to taste

Steps:

  • Boil potatoes in a large pot of salted water until fork-tender, 10-15 minutes. Drain potatoes and return to pot, stirring over medium heat to evaporate excess liquid, 30 seconds. Stir Gouda, buttermilk, yogurt, and chives into potatoes, then mash and season with salt and pepper.
