'21' CLUB HAMBURGER

'21' Club Hamburger image

When the "21" Club reopened in the spring of 1987, the new menu - not to mention the new décor - was the talk of both the food world and the society that considered the place home. The principal question in food circles about the menu had nothing to do with such elegant fare as breast of guinea hen or lobster. No, it was the direction of the restaurant's "new" hamburger that stirred the most curiosity. Craig Claiborne and Pierre Franey went to investigate, and the result was this marvelous, butter-rich recipe for hamburger, one that should take its place in your repertory.

Time 1h20m

Yield One hamburger

Number Of Ingredients 12

8 tablespoons butter at room temperature
1 tablespoon finely chopped fresh thyme
2 tablespoons finely chopped fresh basil
1 tablespoon finely chopped fresh parsley
12 ounces freshly ground choice chuck (preferably with a 22 percent fat content)
Salt to taste, if desired
Freshly ground pepper to taste
2 slices Italian peasant bread, each slice about 1/2 inch in thickness and 5 inches in diameter
3 tablespoons olive oil
2 to 4 thin slices red, ripe tomatoes
2 thin slices red onion
2 teaspoons freshly squeezed lemon juice

Steps:

  • Combine the butter, chopped thyme, one tablespoon chopped fresh basil and chopped fresh parsley. Blend well. Place the mixture on a rectangle of waxed paper or aluminum foil and roll it into a sausage shape about one inch in diameter. Place in the freezer for an hour or longer, until it is frozen. This butter may be used a portion at a time and refrozen.
  • Preheat a gas or charcoal broiler to high.
  • Shape the meat into a round ball without kneading. With the finger, make a partial indentation through the center of the ball. Shove one frozen tablespoon of butter into the center of the ball and press to close the opening. Flatten the meat into a patty shape about three-quarters of an inch thick. Sprinkle on both sides with salt and pepper. Place the meat on the grill and cook about four minutes until it is well seared on one side; turn the meat and cook about four minutes longer or to the desired degree of doneness.
  • Brush the bread slices on one side with one tablespoon of olive oil. Place the slices oiled side down on the grill and cook briefly until lightly toasted. Turn and cook briefly on the second side.
  • Meanwhile, as the meat cooks, place the tomato and onion slices in a small bowl and sprinkle with the remaining two tablespoons of oil, the lemon juice, salt, pepper and remaining tablespoon of chopped fresh basil. Toss briefly.
  • Place one slice of the warm grilled bread on a dinner plate, place the hamburger in the center and cover with the second slice of bread. Serve the tomato and onion slices on the side to be added to the hamburger as desired. Serve tomato ketchup only on request. The hamburger is also served with freshly cooked gaufrette potatoes on the side.

Time 40m

Yield 4 servings

Number Of Ingredients 9

1 1/2 pounds boneless lamb, preferably from shoulder, excess fat removed
1 medium onion, peeled and quartered
1 egg
Salt and pepper
1/4 cup minced shallot or white onion
1/4 cup minced parsley or mint
Juice of 1/2 lemon
4 hard rolls or hamburger buns
Roasted red peppers, optional

With wet hands, shape into four kofte burgers.
  • Grill kofte, undisturbed, until nicely browned on one side, about 5 minutes. Turn and brown the other side. These can be medium to well-done and will still be moist.
  • While meat is cooking, combine shallot, parsley and lemon juice, adding a pinch of salt. Serve the meat on rolls or buns. Garnish with shallot mixture and some red peppers.

THE REAL BURGER

The Real Burger image

"Grinding" may sound ominous, conjuring visions of a big old hand-cranked piece of steel clamped to the kitchen counter, but in fact it's not that difficult. As the grinder was an innovation in its day, the food processor has taken over. It does nearly as good a job - not perfect, I'll admit - in a couple of minutes or less. Take a nice-looking chuck roast, or well-marbled sirloin steaks or some pork or lamb shoulder. Cut the meat into one- to two-inch cubes, and pulse it with the regular steel blade until it's chopped.

Time 20m

Yield 4 servings

Number Of Ingredients 3

1 1/2 to 2 pounds not-too-lean sirloin, in chunks
1/2 white onion, peeled and in chunks, optional
Salt and pepper to taste

Steps:

  • Start a charcoal or wood fire or preheat a gas grill. Or, on stove top, heat a large, heavy skillet over medium-high heat for 3 or 4 minutes.
  • Put meat and onion in a food processor, in batches if necessary, and pulse until coarsely ground: finer than chopped, but not much. Put it in a bowl and sprinkle with salt and pepper. Taste, then add more seasoning if necessary. (If desired, cook a teaspoon of meat in a pan before tasting.) Handling meat as little as possible to avoid compressing it, shape it lightly into 4 or more burgers.
  • Fire is hot enough when you can barely stand to hold your hand 3 or 4 inches over rack for a few seconds. Grill burgers about 3 minutes a side for very rare, and another minute a side for each increasing stage of doneness, but no more than 10 minutes total unless you like hockey pucks. (Timing on stove top is the same.)
  • Serve on buns, toast or hard rolls, garnished as you like.

BEEF TARTARE BURGER

Beef Tartare Burger image

Provided by Mark Bittman

Categories     dinner, easy, quick, weekday, burgers, main course

Time 30m

Yield 4 burgers

Number Of Ingredients 16

1 1/2 pounds fatty sirloin or chuck, cut into 1-inch chunks
1 shallot
1 medium garlic clove
1 tablespoon capers
2 anchovy fillets (optional)
1/2 cup chopped parsley
1/2 teaspoon Tabasco sauce, or more to taste
2 teaspoons Worcestershire sauce
Salt
pepper to taste
Chopped medium-cooked egg to garnish (optional)
capers to garnish (optional)
whole anchovies to garnish (optional)
diced sweet white onion to garnish (optional)
chopped parsley to garnish (optional)
peeled lemon slices, to garnish (optional)

Steps:

  • If grilling or broiling, heat should be medium-high and rack about 4 inches from fire. Put beef, shallot, garlic, capers and anchovy, if using, into a food processor and pulse until coarsely ground - finer than chopped, but not much. Put it into a bowl with parsley, Tabasco sauce and Worcestershire sauce, and sprinkle with salt and pepper. Mix gently, then taste and adjust seasoning. Handling meat as lightly as possible to avoid compressing it, shape it into 4 or more burgers.
  • To broil or grill, cook about 3 minutes on each side for rare and another minute per side for each increasing stage of doneness. For stovetop, heat a large skillet over medium heat for 2 or 3 minutes, then add patties; cook, undisturbed, for about 2 minutes, then rotate them so they brown evenly. Turn once and cook for a total of about 6 minutes for rare.
  • Garnish with chopped medium-cooked egg, capers, whole anchovies, diced sweet white onion, chopped parsley and peeled lemon slices.
