GORILLA BREAD
This is a vamped-up version of monkey bread. Amazingly delicious, and so tempting to the sweet tooth. If you want to be generous, the cream cheese adds some protein too!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch tube pan.
- Cut bread dough apart 2 1/2-inch pieces. Chop cream cheese into 1/2-inch cubes. Flatten the same number of dough pieces into small circles as you have pieces of cream cheese (reserve remaining dough). Fold a piece of cream cheese into each flattened dough circle and pinch the seams closed. Roll all the filled and unfilled pieces of dough into balls.
- Combine sugar with cinnamon in a bowl and roll all the dough balls in the cinnamon sugar; set aside. Bring butter and brown sugar to a boil in a saucepan, reduce heat, and simmer for 1 minute.
- Layer half the filled and unfilled dough balls with half the walnuts and raisins in the prepared tube pan; pour half the brown sugar syrup over the mixture. Layer remaining dough balls, walnuts, and raisins into the pan and pour remaining syrup over the gorilla bread.
- Bake gorilla bread in the preheated oven until golden brown and the dough has baked through, 35 to 45 minutes. Let bread cool in the pan for 10 minutes before turning out onto a serving platter. To serve, pull the bread apart.

- Preheat oven to 350°F.
- Lightly coat a bundt pan with non-stick cooking spray.
- Mix the cinnamon and sugar together.
- In a scaucepan over low heat, melt the brown sugar and butter, stirring well.
- Remove the brown sugar mixture from the heat.
- Next, press out each biscuit and sprinkle with ½ teaspoon of the cinnamon sugar mix.
- Cut the cream cheese into 20 equal cubes and place each one in the center of a biscuit.
- Seal the cream cheese by completely wrapping the biscuit around the cube.
- Sprinkle ½ cup of walnuts into the bottom of the bundt pan and cover them with half of the prepared biscuits.
- Sprinkle the biscuits in the pan with the cinnamon sugar, pour half of the brown sugar mixture over them, and sprinkle them with ½ cup of walnuts.
- Place the remaining biscuits in the pan and sprinkle with the remaining cinnamon sugar.
- Pour the remaining brown sugar mixture over the biscuits and sprinkle with the rest of the walnuts.
- Bake the bread for 30 minutes, then remove from the oven and let cool for 5 minutes.
- Place a serving plate on top and invert the pan.
- Serves 12.
MONKEY AND GORILLA BREAD
Make each of these breads in separate bundt pans. For serving, layer the 2 cakes, with the Monkey Bread as the top tier and the Gorilla Bread as the bottom tier.

- Butter and flour a bundt pan and set aside. Preheat oven to 350 degrees F.
- Combine sugar and cinnamon. Cut refrigerator biscuits in half and toss in cinnamon and sugar mixture. Melt the 1 stick of butter in a saucepan and add brown sugar and bring to a boil; then add nuts. Line the bundt pan with biscuits and pour butter mixture over them.

- Mix granulated sugar and cinnamon.
- In a sauce pan, melt the butter and brown sugar over low heat, stirring well; set aside.
- Cut the cream cheese into 20 equal cubes.
- Press the biscuits out with your fingers and sprinkle each with 1/2 teaspoon of cinnamon sugar. Place a cube of cream cheese in the center of each biscuit, wrapping and sealing the dough around the cream cheese.
- Sprinkle 1/2 cup of the nuts into the bottom of a bundt pan. Place half the prepared biscuits on top of the nuts.

This is a really cute idea for a simple King Cake. The addition of strawberries and cream cheese brings this gorilla bread to a whole new level. The flavor combination is fabulous. Great for a Mardi Gras party!

- 1. PLEASE READ THROUGH THE ENTIRE RECIPE BEFORE YOU BEGIN:
- 2. Preheat the oven to 350 degrees F.
- 3. Spray a bundt pan with nonstick cooking spray.
- 4. Mix the granulated sugar and cinnamon; set aside.
- 5. In a saucepan, melt the butter and brown sugar over low heat, stirring well; set aside.
- 6. Cut each cream cheese block into 20 equal cubes.
- 7. Press the biscuits out with your fingers, cut in halves; sprinkle each with 1/3 teaspoon of cinnamon sugar. Place a cube of cream cheese in the center of half of the biscuits, wrapping and sealing the dough around the cream cheese. Roll into a ball. Place half a strawberry in the center of the other half of the biscuits, wrapping and sealing the dough around the strawberries. Roll into a ball.
- 8. Sprinkle 1/3 of the nuts into the bottom of the bundt pan. Pour 1/3 of melted butter mixture over the nuts. Place half of the prepared biscuits in the pan. You can mix the cream cheese balls with the strawberry balls or have one layer of the cream cheese balls and then the other layer with the strawberry balls. It's your call.
- 9. Sprinkle with cinnamon sugar, pour 1/3 of the melted butter mixture over the biscuits, and sprinkle on 1/3 of nuts.
- 10. Layer the remaining biscuits on top, sprinkle with the remaining cinnamon sugar, pour the remaining butter mixture over the biscuits, and sprinkle with the remaining 1/3 of nuts.
- 11. Bake for 30-45 minutes or until golden brown. Remove from the oven and cool for 5 minutes.
- 12. Place a plate on top and invert. Decorate the top with colored sugars (green, gold, purple), in alternating sections, about 2 inches each.
- 13. Don't forget to hide the plastic baby charm inside one of the dough balls, but warn everyone to look for it!

- Grease a Bundt or tube pan with BUTTER; set aside.
- Pre-heat oven to 400*.
- Remove biscuits from tube, flattening each round.
- Cut cream cheese brick into 30 small squares; set aside.
- In a small bowl, mix white sugar & cinnamon; set aside.
- Mix melted butter and brown sugar in another small bowl--it will be grainy; set aside.
- ASSEMBLE: place one cheese square into center of each flattened biscuit.
- Wrap biscuit dough around each cheese square, pinching edges; roll biscuit ball in dipping cinna-sugar; load into prepared pan.
- When you have one layer in the pan, sprinkle about 3 tablespoons of the drizzling butter-sugar mixture over those biscuit balls.
- Continue with the next layer & some drizzling mixture, finishing with the drizzling mixture at the top.
- Pop the pan into the oven for about 30 minutes -- dough should still be just a teensy doughy (not completely dry).
- Flip out of pan immediately; cool.
- Best if served while luke-warm.

PUMPKIN GORILLA BREAD WITH SOCO TOFFEE SAUCE
Wow, your friends and family with this gorilla bread (aka monkey bread). Biscuits are stuffed with pumpkin and cream cheese. It's a fantastic flavor combination that adds tons of flavor to the treat. With the cinnamon, sugar, butter coating, the gorilla bread alone is quite tasty. The addition of toffee sauce, though, makes it even better. It's buttery and has a slight flavor of Southern Comfort. Altogether, it's a dreamy autumn dessert. Don't let the steps scare you. Seems like a lot, but it's easy to make.

- Melt 1 stick of butter and 1 cup of brown sugar in a small pot over low heat.
- Stir together the white sugar and the cinnamon. Set aside.
- Open up the cream cheese and cut into 16 evenly sized cubes.
- Next, open up the cans of biscuits and flatten each biscuit to about 1/2 inch. Place one cube of cream cheese, a dollop of pumpkin, and a sprinkle of cinnamon sugar in the center of each flattened biscuit.
- Now seal up each biscuit to make individual dumplings.
- Now, spray a Bundt pan with non-stick cooking spray. Pour 1/3 of the melted butter/brown sugar into the bottom of the Bundt pan.
- Next, place 1/2 of the pumpkin/cream cheese/biscuit dumplings into the pan. Sprinkle with cinnamon sugar. Then pour another 1/3 of the melted butter/brown sugar on top of the dumplings.
- Layer the rest of the pumpkin/cream cheese/biscuit dumplings.
- Then sprinkle with more cinnamon sugar. Then top with the rest of the melted butter/brown sugar.
- Bake in a 350-degree oven for 45 minutes.
- To make the SoCo Toffee Sauce, place all ingredients into a saucepan over medium heat. Stir, bring to a boil. Once it boils, turn the heat down to low. Continue cooking/stirring until it comes together and is smooth and velvety.
- Once the Pumpkin Gorilla Bread is baked, wait 5 minutes and invert onto a serving dish.
- Serve with warm SoCo Toffee Sauce. Be prepared to be asked to make this for every potluck moving forward. NOM NOM NOM

- Preheat oven to 350 degrees. Spray bundt pan with nonstick cooking spray. Place 1/2 cup of the nuts in the pan.
- Mix cinnamon and sugar in a small bowl. In a small saucepan melt butter and brown sugar on low heat, stirring frequently.

- Sprinkle cinnamon sugar over biscuits already in pan. Pour half of butter mixture over biscuits. Sprinkle 1/2 cup pecans.
- Repeat step 3 with second can of biscuits.
- Sprinkle biscuits with remaining cinnamon sugar, pour last of butter mixture, and finish with the nuts.
- Bake for 40-45 minutes. Let cool 10 minutes before flipping it onto a serving platter. Serve warm and enjoy!
- Options: Seal in a whole pecan OR apple pie filling along with the cream cheese before folding with bread.
