36 slices (1/2-inch thick) baguette bread, about 1 loaf
1/4 cup extra-virgin olive oil
8 ounces Gorgonzola, sliced
3 tablespoons honey

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the sliced baguette on a baking sheet. Brush with olive oil. Bake until the bread is pale golden and crisp, about 10 minutes.
  • Arrange the cheese on the toasts and bake until the cheese is melted, about 3 minutes.
  • Drizzle the toasts with honey. Place on a serving platter and serve immediately.

Good olive oil
1 red bell pepper, seeded and sliced into thin strips
1 yellow bell pepper, seeded and sliced into thin strips
1/2 teaspoon sugar
1 tablespoon capers, drained
2 tablespoons julienned fresh basil leaves
Kosher salt
Freshly ground black pepper
Baguette
3 ounces creamy Gorgonzola or other blue cheese, at room temperature

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat 2 tablespoons of olive oil in a medium saute pan over medium-high heat. Add the peppers and cook until soft, about 12 to 15 minutes. Sprinkle with the sugar and continue cooking for 2 more minutes. Stir in the capers and basil, and season, to taste, with salt and pepper. Set aside.
  • Slice the baguette crosswise into 18 thin round slices. Brush the bread rounds lightly with olive oil on 1 side. Arrange them in rows, oil side up, on a sheet pan lined with parchment paper and toast in the oven until lightly browned, about 7 to 10 minutes.
  • Top each toast round with a teaspoonful of the pepper mixture. Place 2 small pieces of Gorgonzola on top. Return the toast to the oven for 1 to 2 minutes and warm through. Serve immediately.

1 large onion, thinly sliced
1 loaf Italian bread, cut diagonally into 1/2-inch-thick slices*
1 clove garlic, halved
2 cups Bertolli® Vodka Sauce made with Fresh Cream
1 cup crumbled Gorgonzola cheese
2 Tbsp. toasted pine nuts, chopped

Steps:

  • Preheat oven 425 degrees.
  • Heat 2 tablespoons olive oil in 10-inch nonstick skillet over medium heat and cook onion, stirring frequently, 15 minutes or until onion is golden.
  • Arrange bread on baking sheet. Evenly rub with garlic, then brush with remaining olive oil. Bake 10 minutes or until golden. Evenly spread Pasta Sauce on bread, then top with cheese, onion and pine nuts. Bake 5 minutes or until cheese is melted.
  • *SUBSTITUTION: Use your favorite prepared pizza crust instead of bread for a quick meal.

1/3 cup fresh basil leaves

12 ounces Gorgonzola, at room temperature

2 yellow bell peppers, grilled, peeled, seeded and thinly sliced

Steps:

  • Heat the grill to high.
  • Combine the oil, basil and salt and pepper in a blender and blend for 5 minutes. Strain the oil into a bowl.
  • Grill the bread on both sides until lightly golden brown. Remove from the grill and spread some of the blue cheese on 1 side of each slice, top with some of the peppers and drizzle with a little of the basil oil.

Steps:

  • Set oven control to broil. Place bread slices on broiler pan or cookie sheet. Broil with tops 3 to 4 inches from heat 1 minute. Turn slices over; broil 1 minute longer.

8 slices (about 3/4-inch thick) good, crusty bread
1 tablespoon plus 2 teaspoons olive oil
2 cloves garlic, peeled and halved
8 ounces Gorgonzola cheese
2 ripe peaches

Steps:

  • Preheat the broiler. Brush both sides of the bread with 1 tablespoon of the olive oil and lay on a baking sheet. Broil until lightly browned, about 1 minute a side. While the bread is still hot, gently rub both sides with the garlic. Spread the cheese evenly over each slice.
  • Peel the peaches and split each in half vertically, gently twisting the halves in opposite directions to separate them from the pit. Lay each half cut side down and slice into 1/4-inch slices. Divide each half in half again and fan the slices over the cheese. Drizzle with remaining olive oil and rebroil until peaches are soft and hot, about 1 to 2 minutes. Serve immediately.

1/4 cup extra virgin olive oil
1 garlic clove
8 ounces gorgonzola, sliced
3 tablespoons honey

Steps:

  • Preheat oven to 400ºF.
  • Arrange the sliced baguette bread on a baking sheet.
  • Brush with olive oil.
  • Bake bread until pale golden and crsip, about 10 minutes.
  • Rub garlic clove over all the toasts.

1 tbsp brandy (cognac)
1/8 tsp black pepper
12 oz french bread (diagonally cut french bread about 1 inch thick)
cooking spray
6 garlic cloves (halved)
3 granny smith apples (cut into 8 wedges about 18 ounces)

Steps:

  • Prepare grill. Combine first 4 ingredients in a small bowl, stirring until blended. Place bread slices on grill rack coated with cooking spray; cook 2 minutes on each side or until lightly browned. Remove from grill. Rub cut sides of garlic over one side of each bread slice. Spread 2 teaspoons cheese mixture over each bread slice. Serve with apple wedges.
