PUFF PASTRY BITES WITH GOUDA AND SPICED RUM CRANBERRY SAUCE



Puff Pastry Bites with Gouda and Spiced Rum Cranberry Sauce image

These bite-sized appetizers are the perfect holiday snack! They're filled with melty gouda cheese, homemade cranberry sauce spiked with spiced rum, and it's all nestled into a perfectly flaky pastry nest.

1/2 cup water
1/2 cup granulated sugar
2 cups fresh or frozen whole cranberries (If using frozen, don't thaw them)
2 tbsp real maple syrup
2-3 tbsp Blue Chair Bay Spiced Rum
1 tsp orange zest
1 pinch allspice
6 ounces gouda, grated
1 sheet puff pastry (thawed according to package directions)
1 large egg, for egg wash
fresh rosemary, for garnish (optional )

Steps:

  • Prep: Make sure your puff pastry is thawing while you start on the cranberry sauce!
  • Make the Spiced Rum Cranberry Sauce: Add the sugar & water to a medium saucepan over medium high heat. Bring this to a boil, and then reduce the heat to medium, stirring constantly until the sugar is dissolved (this will only take a couple of minutes). Once the sugar is dissolved, lower the heat to a simmer over low heat, and add the cranberries. Bring the mixture to a boil again, and then reduce the heat to a simmer over medium low heat. Cook, stirring occasionally, until the cranberries are mostly broken down - about 10 minutes. (Don't' freak if the cranberries aren't breaking down - just turn up the heat a bit, and keep cooking them until they're mostly all broken down.)Next, stir in the maple syrup, spiced rum, allspice, and orange zest. Taste and add more rum or any of the other mix-ins if desired. Stick your pot of cranberry sauce in the fridge to chill and thicken up while you get the rest of the recipe ready. (You can scrape it into a smaller bowl if your fridge is too full to stick the pot in).
  • Assemble the Puff Pastry Bites: Preheat your oven to 375 degrees F. Roll your thawed puff pastry out on a lightly floured counter until it's about 14 x 12. Cut into 12 equal (doesn't need to be perfect) squares. Spray a muffin tin well with nonstick spray. Place one square into each of the muffin cavities. Add about 1 tablespoon of gouda to each, and top with 1 tablespoon of the chilled cranberry sauce. Beat the egg in a small bowl and brush the exposed parts of the puff pastry with the egg.
  • Bake: Bake the bites for 21 to 23 minutes. The puff pastry will be golden brown and the cranberry sauce and cheese will be bubbly. Let cool in the pan a few minutes, then use a butter knife to loosen and pop them out of the muffin tin.
  • Serve + Store: Enjoy immediately! These are best while fresh the first day, but leftovers can be stored in an airtight container in the fridge for 1-2 days.

Puff Pastry Bites with Caramelized Onions and Gouda image

Sweet, savory and perfectly bite-sized for entertaining, these puff pastry squares are filled with caramelized onions, Gouda cheese and fruit spread. Great for a holiday celebration....or for any regular old Saturday night.

1 sheet Puff Pastry ((about 10"x10" and 8 oz))
1 Tbsp Cooking Oil
1 medium Onion, halved and sliced
1 Tbsp Butter
1 tsp Brown Sugar
1/2 tsp Salt
1/4 cup Fruit Spread, jam or jelly ((any kind will work, but I used a triple berry fruit spread))
3 oz Gouda Cheese, grated

Steps:

  • Defrost puff pastry according to package directions. (Most need to defrost at room temperature for 40 minutes, until they can be easily rolled out.)
  • While puff pastry defrosts, caramelize onions (you can also do this up to a week ahead). Heat oil in a large saute pan over high heat. Add onions and stir to coat in oil. Cook onions over high heat until they start to soften and break down, ~5 minutes. Reduce heat to medium and continue to cook onions, stirring every few minutes, until deep golden brown, ~30 minutes more. (If onions appear dry while cooking, add an extra splash of oil.) Stir in butter, sugar and salt and continue cooking until sugar is fully dissolved.
  • Heat oven to 400 degrees F.
  • Spray a mini muffin tin (this makes 24 pastry bites, so bake in rounds if your mini muffin tin only has 12 spaces) with nonstick cooking spray. Slice puff pastry into 24 even squares.
  • Place one puff pastry square into each space in the mini muffin tin.
  • Fill each pastry square with 1/2 tsp fruit spread, 2 tsp of grated cheese and then 1 tsp caramelized onions (no need to be super precise about these measurements, just don't overfill the puff pastry because it will expand as it cooks).
  • Bake until pastry is golden brown and cheese is melted, 15 to 17 minutes.
  • Let pastry bites cool completely before serving. Enjoy!

1 1/4 cups finely diced fully cooked ham
1/2 cup shredded Gouda cheese (2 ounces)
1/4 cup sun-dried tomatoes in oil, drained and chopped
2 tablespoons sour cream
4 medium green onions, chopped ( 1/4 cup)
2 packages (17.3 ounces each) frozen puff pastry, thawed

Steps:

  • Heat oven to 400°. Mix all ingredients except pastry.
  • Cut pastry into circles with 2 1/2- to 3-inch round cookie cutter or pastry wheel. Spoon about 1 rounded teaspoon ham mixture on center of each circle; brush edges with water. Fold each circle over filling, pressing edges to seal.
  • Place in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch. Bake 18 to 22 minutes or until golden brown. Serve warm.
