2 cups ice cubes
1 cup part-skim ricotta cheese
1/4 cup instant malted milk powder
1/4 cup chocolate syrup
2 tablespoons skim milk or 2 tablespoons 1% low-fat milk
1 teaspoon vanilla extract

Steps:

  • Put all in a blender and puree until smooth.
  • If not smooth, ice chips will distract from flavor.
  • Serve immediately.

This is a traditional recipe for Thanksgiving/Christmas from my husband's side of the family from Omaha, Nebraska. A delicious, addictive and very simple dish.

2 (13 ounce) cans crushed pineapple in juice, undrained
1 (3 ounce) package lime Jell-O gelatin
1 (10 1/2 ounce) package miniature marshmallows
7 ounces butter mints, shaved
1 pint whipping cream (or 2 envelopes Dream Whip )
1/4 cup chopped toasted pecans (optional)

Steps:

  • Mix undrained pineapple with dry Jell-O.
  • Fold in one package mini-marshmallows.
  • Cover and place in refrigerator overnight.
  • Next day, add shaved buttermints, whipping cream/Dream Whip and optional nuts to mixture.
  • Pour into 9x13 pan and freeze.

1 package (11 ounces) caramels
1 can (5 ounces) evaporated milk, divided
3/4 cup butter, softened
1 package German chocolate cake mix (regular size)
2 cups semisweet chocolate chips

Steps:

  • In a small saucepan over low heat, melt caramels with 1/4 cup milk; stir until smooth. Meanwhile, in a large bowl, cream butter until light and fluffy. Beat in dry cake mix and remaining milk., Spread half of the dough into a greased 13-in. x 9-in. baking pan. Bake at 350° for 6 minutes; sprinkle with chocolate chips. , Gently spread caramel mixture over chips. Drop remaining dough by tablespoonfuls over caramel layer. Return to the oven for 15 minutes.

While stationed at Offutt AFB near Omaha, Nebraska and living in the barracks back in the late 70's, inevitably someone in the lounge on a Friday or Saturday evening would say, "Who wants to make a run to Goodrich Dairy?" We'd scramble for our shoes and our wallets, and off we'd go. My friend Sharon got me hooked on these malts, and whenever I have one, I'm reminded of the fun we had together: cruising the base-gates & seeing which L.E's were working or those Saturday evenings when we'd get all gussied up & head over to The cHEETah to do some dancing or when we were really bored & go cruising 73/75 & waving to guys in hot muscle cars. 1/2 cup caramel ice cream topping
2 cups chocolate ice cream, softened
3 tablespoons instant malted milk powder
2 tablespoons chopped pecans (optional)

  • In a blender, combine all but the last two, process until smooth.
  • Pour into chilled glasses, poke a straw in, too.
  • Sprinkle with pecans & grated chocolate, if used.
