SIMPLE POACHED EGG AND AVOCADO TOAST

This Simple Poached Egg and Avocado Toast recipe is so simple and so delicious! Real, healthy food never tasted so good. YUM!

2 eggs
2 slices whole grain bread
1/3 avocado (usually I cut it in half but don't use all of it. okay fine maybe I do.)
2 tablespoons shaved Parmesan cheese
salt and pepper for topping
fresh herbs (parsley, thyme, or basil) for topping
quartered heirloom tomatoes for serving

Steps:

  • Bring a pot of water to boil (use enough water to cover the eggs when they lay in the bottom). Drop the metal rims (outer rim only) of two mason jar lids into the pot so they are laying flat on the bottom. When the water is boiling, turn off the heat and carefully crack the eggs directly into each rim. Cover the pot and poach for 5 minutes (4 for super soft, 4:30 for soft, 5 or more for semi-soft yolks).
  • While the eggs are cooking, toast the bread and smash the avocado on each piece of toast. When the eggs are done, use a spatula to lift the eggs out of the water. Gently pull the rim off of the eggs (I do this right on the spatula, over the water) and place the poached eggs on top of the toast. Sprinkle with Parmesan cheese, salt, pepper, and fresh herbs; serve with the fresh quartered heirloom tomatoes.

2 large eggs
1 tsp white vinegar
2 slice bread
1 or 2 Tbsp butter
salt and pepper to taste

Steps:

  • 1. Place about 2 inches of water in a medium saucepan and bring to a boil over high heat. Reduce heat to medium-low as soon as water starts to boil. Add the vinegar to the water.
  • 2. Break each egg carefully, so as not to break the yolk, into a separate cup and carefully add each to the water. Cook uncovered for 3 minutes.
  • 3. Remove eggs from pan with a slotted spoon and drain on paper towels while the bread is toasting.
  • 4. Butter the toast and, again with a slotted spoon, lay each egg atop a slice of buttered toast. Salt and pepper to your taste.
  • 5. NOTE: The addition of vinegar to the water helps the whites of the eggs firm up and not spread out into the water.

I love poached eggs on toast, but never knew quite how to make them till I found these easy instructions in my 1979 Pillsbury Cookbook, a cookbook which I've had for many years.

1 slice of bread (toasted & buttered)
2 eggs
1/4 tsp. salt
black pepper, add according to taste
dried parsley flakes, optional

Steps:

  • 1. Lightly grease a deep skillet, or a saucepan. (I spray the skillet or saucepan with a no-stick cooking spray.)
  • 2. Add 1-inch of water to the skillet, but if using the saucepan, add 1-1/2-inches of water.
  • 3. To the water, add the 1/4 teaspoon of salt; then heat water just to boiling.
  • 4. Break eggs into 2 separate custard dishes.
  • 5. When the water comes to a boil, carefully slip the eggs into the skillet or saucepan.
  • 6. Cover the pan or skillet, and cook over low heat for 3 minutes.
  • 7. Remove poached eggs with a slotted spoon or pancake turner.
  • 8. Serve poached eggs on buttered toast, then season with black pepper and a light sprinkle of dried parsley flakes.

2 large eggs
1 avocado
50g feta
1 tsp chilli flakes
juice ½ lemon
2 slices of sourdough

Steps:

  • Fill a large saucepan with water, add the vinegar and bring to a hard boil over a high heat. Once boiling, reduce the heat so the water is simmering, then use a spoon to swirl the water into a whirlpool. Crack in both eggs and cook for 2 1/2 mins.
  • Meanwhile, in a small bowl, mash the avocado, feta, chilli flakes and lemon juice, and season well with black pepper. Toast the bread.
  • Pile the avocado and feta on the toast, then put a poached egg on top of each.

You don't even need a toaster to make perfect toast. Crisping bread in a skillet - in melted butter, of course - gives it a tasty brown crunch and leaves you with a hot pan ready to scramble eggs. Be sure to swipe up all the butter and crumbs with the toasted bread when you take it out to keep the eggs nice and golden. Because more butter is added to the pan at the same time as the eggs, it melts slowly into the eggs while you stir them, leaving you with a creamy mix that ends up even creamier when cheese is melted in at the very end.

1 1/2 tablespoons unsalted butter
1 slice bread
1/4 cup shredded cheese (Cheddar, Monterey Jack or a blend)

Steps:

  • Crack the eggs into a bowl and sprinkle generously with salt and pepper. Beat with a fork until evenly yellow. Leave the bowl next to the stove while you make the toast.
  • In a small nonstick skillet, melt a thin slice of the butter over medium-low heat. Swipe the bread in the melted butter to soak it all up. Let sit until golden brown, 2 to 3 minutes. Add another thin slice of butter to the pan then flip the bread, swiping it in the newly melted butter until it's all soaked up. Turn the heat to the lowest setting and let the bread sit until lightly browned, 1 to 2 minutes. Transfer to a plate.
  • Add the remaining butter and the eggs and cook, stirring gently and constantly with a wooden spoon, until the butter melts and the eggs are half wet and half solid, 15 to 45 seconds. Turn off the heat, add the cheese and continue stirring until the mixture is creamy but no longer wet, about 30 to 45 seconds. Scrape onto the toast right away and enjoy.

1 tbsp olive oil
1 onion, sliced
1 small garlic clove, crushed
2 tsp smoked paprika
400g can cannellini beans, drained and rinsed
400g can chopped tomatoes
½ tbsp soft brown sugar
1 tbsp Worcestershire sauce
2 large eggs
2 large slices wholemeal bread
4 thin slices crispy pancetta or bacon (optional)

Steps:

  • Heat the oil in a small saucepan and fry the onions with a pinch of salt for 10-12 mins over a medium heat until softened and starting to caramelise. Add the garlic and paprika, and cook for 1 min more. Stir through the beans, tomatoes, sugar and Worcestershire sauce. Continue to cook for 10 mins over a medium heat, stirring regularly until thickened and saucy. Season.
  • Bring a large pan of salted water to a simmer. Stir the water with the end of a wooden spoon, then crack an egg into the centre of the swirling water. Poach for 3 mins. Repeat with the second egg.
  • Toast the bread, then top with the beans, eggs and pancetta, if you like.
