This brings much luck and never to go hungry and always wanting to share with those in need or want. I make 12 pint jars and give for Christmas gifts. Oh So So so perrrfect for the cold weather to come......................

1/2 cup dried split yellow peas or 1/2 cup dried split green peas
1/3 cup chicken bouillon granules or 1/3 cup vegetable bouillon granules
1/4 cup pearl barley
1/2 cup dry lentils
1/8 teaspoon red pepper flakes
1/2 teaspoon black pepper
1 teaspoon basil
1 teaspoon garlic powder
1/4 cup dried onion flakes
1 pinch saffron (but really good) (optional)
1/2 tablespoon dried Italian seasoning
1 -2 tablespoon sun-dried tomato, diced very fine
2 tablespoons dehydrated mixed vegetables
1/2 cup wild rice, uncooked (I used Lundberg wild rice blend consisting of Long grain brown rice, sweet brown rice, wild rice bit)
2 bay leaves
1/2 cup alphabet pasta
1 lb ground chicken, beef or 1 lb turkey
2 garlic cloves, minced
1 (28 ounce) can diced tomatoes
6 ounces tomato paste
2 1/2 quarts hot water

Steps:

  • In a 1 1/2 pint jar, layer the bouillon, to the Bay leaves. Tap jar so ingredients settles. Wrap the pasta in a baggie, and place in the jar. Seal tightly.
  • Attach a label to the jar with the following instructions:.
  • TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef and drain excess fat add garlic to brown slightly. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 minutes, or until the pasta, peas, lentils and barley are tender.
  • Season with salt and pepper if needed.

1/2 cup dried lima beans
1/2 cup dried pinto bean
1/2 cup dried great northern beans
1/2 cup dried red beans
1/2 cup dried split peas
1/2 cup dried black-eyed peas
1/2 cup dried lentils
1/2 cup dried black beans

Steps:

  • Use 2 (1 pint) clamp top jars. In each jar, layer 1/4 cup of each type bean.
  • Seal lid and attach cooking instructions.
  • INSTRUCTIONS:.
  • Rinse beans, place in large bowl, add one to 2 tsp of salt and cover with water.
  • Let stand overnight.
  • Drain beans, place in a large kettle, add 2 quarts of water, one cup chopped ham and one chopped onion.
  • Simmer for 1 1/2 to 2 hours; add one chopped green pepper and 3 tbls lemon juice or one tsp lemon pepper.
  • Makes 4 servings.

13 BEAN CROCK POT SOUP



13 Bean Crock Pot Soup image

A crock pot version of 13 bean soup. Super easy & super yummy! I buy the 13 bean soup mix in the bulk section of my supermarket. It contains the 13 varieties of dry beans as follows: Baby limas, large limas, garbanzo, great northern, black-eyed peas, navy, black, red pinto, red lentils, green lentils, yellow splits, green splits, and kidney beans. Even my toddler had fun eating this soup. It was almost like watching a kid sort their M&M candies into colors! We took the opportunity to teach her the name of each bean as she picked it out to eat. Be sure to plan ahead, as the beans need to soak overnight or for 8 hours before cooking. (Cook time noted includes soaking time.) *Update December 2011: Since hosting the January 2011 Soupfest tag game in the Topic of the Month forum I have been using Sharon123's recipe for homemade Herb & Garlic broth (link in ingredients section) instead of just plain water as the soup base. It's absolutely delicious and so easy to make and store in the freezer. Feel free to use that recipe or any other broth for some or all of the water in the soup (not for soaking the beans).

bean soup mix (2 cups of 13 bean soup mix)
6 cups water
1 cup ham, cooked & diced
2 leeks, sliced (white part only)
2 garlic cloves, minced
2 carrots, chopped (or 8 baby carrots cut in thirds)
2 stalks celery, sliced
1 teaspoon basil
1 teaspoon thyme
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
6 cups water (*or substitute some broth for part of the water. I always keep some Herb and Garlic Broth-Aigo Bouido in the freezer an)

Steps:

  • Place beans in a colander and sort through them, picking out any rocks or debris. Rinse the beans with water and then drain the water away.
  • Place beans in crock pot and add the 6 cups of water. Put the lid on the crock pot (but don't turn it on) and leave the beans to soak in the cold water overnight or for at least 8 hours.
  • Pour the beans and water into the colander. Rinse gently, drain and return beans to the crock pot.
  • Add the rest of the ingredients to the crock pot and stir to combine.
  • Set the crock pot on LOW and cook for 3-5 hours or until beans and veggies are soft.
  • Serve with fresh garlic bread and enjoy!

1 1/2 lbs ground sausage
1 large onions, chopped or 1 cup chopped onion
2 garlic cloves, minced
3 (15 ounce) cans black-eyed peas, rinsed and drained
2 -3 cups cabbage, chopped
2 cups water
2 (14 1/2 ounce) cans stewed tomatoes
1 (10 ounce) can Rotel Tomatoes
1 tablespoon beef bouillon granules
1 tablespoon molasses (you could substitute brown sugar) or 1 tablespoon honey (you could substitute brown sugar)
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin

Steps:

  • In a large stock pot or Dutch oven, brown sausage along with onion and garlic. When the sausage browned add all of the other ingredients and mix well. Bring up to a boil. Reduce heat to simmer and cook for 45 minutes to an hour.
  • If you want to do this in your slow cooker. Brown the sausage with the onion and garlic first in a skillet. When browned place the meat with the other ingredients in a 5 - 6 quart slow cooker and cook on low 6-8 hours or on high for 3-4 hours.
  • Serve with your favorite cornbread. Letting this soup sit a day or 2 will meld the flavors even more.
