GOOD CANNED GREEN BEANS - FROM BLAND CANNED TO GARDEN FRESH
This is how I make my green beans in the winter, when I don't have access to fresh produce. Growing up, my mother never would use canned green beans because she said they were disgusting and lacked flavor. When I got older, someone told me to cook them with oil, and that got me started on the quest for the perfect way to doctor canned green beans to make them taste closer to fresh. And here it is! (TIP: I love the big can of Hanover green beans, in the white can. They seem to have better flavor.)

Steps:
- Drain liquid out of can.
- Place green beans in pot and add water to cover.
- Add oil and seasonings. You may adjust seasoning amounts to taste.
- Bring to a boil.
- Reduce heat and simmer for about 45 minutes.
GOOD GOOD GREEN BEANS
For someone who likes to be in and out of the kitchen, this recipe lets me do just that and gives the illusion that it was a lot more work than it was. But I'm not telling!

- Break fresh green beans in half and cook trimmed beans in salted water to desired tenderness.
- Saute diced bacon until brown, add onions and garlic and saute until onion is translucent.

"GOOD GREEN BEANS"
This is my "go to" green bean dish. They are very similar to what Furr's Cafeteria had (we don't have one close any more). My #4 granddaughter named them "Good green beans". She still asks for them and she is a Jr in college @ Texas State (Go Bobcats) now. They look so much prettier than the cut green beans, but you can use those too if you want (less expensive).

Steps:
- Cut bacon into about 1" squares (say 4-5 pieces per slice) Place in medium size sauce pan and cook, stirring so it won't burn. Add thinly sliced onion, continue cooking bacon and onion for a few minutes.
- Pour vinegar over bacon and onion, let cook for a about 2 minutes. Drain 2 cans of beans and leave the juice in the 3rd can. Add to sauce pan.
- Add: garlic salt, sugar, salt and pepper. Turn beans with large spoon, try not to chop them up. Turn fire down and let simmer about 30 minutes.
