ROASTED NUGGET POTATOES
An easy dish to prepare that looks and tastes great. Recipy can be easily increased, and amounts of seasonings can be changed to your prefrences.

Steps:
- Preheat oven to 400°F.
- In bowl mix together oil and spices and herbs.
- wash and quarter potatoes.
- Put potatoes into oil mixture and toss to coat.
- When oven is heated, put potatoes onto a cookie sheet and pop into the oven, for about 25-30 minutes depending on your oven.
- Watch them in the last 10 minutes, they don't taste so good burnt.
- Potatoes are done when a fork easily goes into a large piece of potato, and skin is crispy.

Ever have any leftover baked potatoes and not sure what to do with them ? Well, here's a way they can be used. And if you don't have any leftover baked potatoes, just nuke a couple in the microwave until fork tender. ( If using microwave potatoes, please cool to room temp. ) The amount of servings you get will depend on how many baked potatoes you use.And adjust the amount of salt to your taste. - Heat about 1 1/2 cups of oil in a medium sized sauce pan or deep fryer until hot but not smoking.
- While oil is heating, peel and dice potatoes into bite sized chunks ( for even cooking, cut in equal sized pieces ).
- When oil is hot, add potatoes pieces a few at a time and fry until golden brown.
- Drain on paper towels, and salt immediately.

- Heat oven to 425°F.
- In 10-inch ovenproof skillet, cook beef over medium heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain. Stir in cheese sauce. Layer frozen peas and cheese on top of beef mixture. Top with even layer frozen potatoes.
- Bake about 25 minutes or until potatoes are crispy and golden brown and mixture is bubbling.
