INSTANT POT GOLDEN LENTIL & SPINACH SOUP



Instant Pot Golden Lentil & Spinach Soup image

A thick and hearty lentil soup packed full of flavor. Made specifically for the it-appliance of the moment, The Instant Pot!

2 teaspoons olive oil
1/2 medium yellow onion ((diced) (about 1 cup))
2 medium carrots ((peeled and diced) (about 1 cup))
1 medium stalk celery ((diced) (about 1/2 cup))
4 medium cloves garlic ((minced) (about 2 tablespoons))
2 teaspoons ground cumin
1 teaspoon ground turmeric
1 teaspoon dried thyme
1/2 teaspoon kosher salt (+ more to taste*)
1/4 teaspoon freshly ground black pepper (+ more to taste)
1 cup dry brown lentils ((rinsed well in cold water))
4 cups low-sodium vegetable broth ((one 32-ounce box))
8 ounces baby spinach ((about 6 cups))

Steps:

  • Hit "Saute" button on Instant Pot. Add oil. When hot, add the onions, carrots, and celery. Saute, stirring occasionally, until tender, about 5 minutes. Add the garlic, cumin, turmeric, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, stirring constantly, for one minute.
  • Add the lentils and pour in the broth. Stir.
  • Place the lid on the Instant Pot and make sure the release valve is in the "sealing" position. Press the "Manual" button and set the timer at 12 minutes.
  • The Instant Pot will warm up for about 10 minutes and then start cooking. After the 12 minutes is up, quick-release by flipping the release valve to "venting" (a little bit at a time at first).
  • Once venting is complete, remove the lid of the Instant Pot. Stir in the spinach. Taste and add additional salt and pepper if desired. Serve.
  • Keeps in the refrigerator for about 3 days. Freezes well too!

Your family and friends will be delighted with the result and may be a little surprised to find that they are eating lentil soup.

3 tablespoons olive oil
1 1/2 cups chopped red onion
1/2 cup diced carrot
5 cloves garlic, chopped
1 tablespoon turmeric
2 teaspoons ground cumin
1/2 celery stalk
1 branch fresh parsley
1 branch fresh thyme
1 pound golden lentils (or regular lentils, if not available)
10 cups chicken stock, heated, recipe follows, or store-bought chicken broth
Salt and freshly ground pepper
Pinch chili pepper flakes
1/2 cup fresh bread crumbs
1/4 cup milk
1 pound ground lamb
1 cup blanched almonds, toasted and ground
1/3 cup chopped onion
1/3 cup raisins, coarsely chopped
1 egg, lightly beaten
3 cloves garlic, minced
2 tablespoons chopped fresh parsley leaves
1 tablespoon chopped fresh cilantro leaves
1/4 teaspoon chili pepper flakes
Salt and freshly ground pepper
2 tablespoons olive oil, plus more for drizzling
1 cup plain yogurt
1 tablespoon chopped fresh mint leaves
1/2 teaspoon lemon zest
1/2 teaspoon fresh lemon juice
1 teaspoon honey
Pinch salt
5 to 6 pounds chicken bones, including necks and feet, coarsely chopped
3 1/2 quarts cold water
1 medium carrot, peeled and sliced
1 medium onion, quartered
1 small celery stalk, sliced
1 small leek, sliced
3 sprigs parsley with stems
1 bay leaf
1/2 teaspoon whole white peppercorns

Steps:

  • Prepare the soup: In a large saucepan, heat the olive oil. Add the onion, carrot, garlic, turmeric, and cumin. Saute over high heat until the onions are glassy, about 5 minutes. Meanwhile, make a bouquet garni by tying together the celery, parsley, and thyme, and add to pan. Stir in the lentils and the chicken stock, season lightly with salt, pepper, and chili flakes, and bring to a boil. Reduce the heat and simmer for 25 to 30 minutes, or until the lentils are tender. Skim as necessary.
  • Meanwhile, prepare the meatballs: Preheat the oven to 350 degrees F.
  • In a small bowl, soak bread crumbs in milk. In a mixing bowl, combine the lamb, almonds, soaked bread crumbs, onion, raisins, egg, garlic, parsley, cilantro, and chili pepper flakes. Season lightly with salt and pepper. Drizzle olive oil on the platter you will place the meatballs on and rub oil into the palm of both hands. Form meat mixture into 40 golf ball-size meatballs, each approximately 1-inch in diameter.
  • Heat 2 tablespoons olive oil in a large ovenproof skillet or saute pan. Arrange the meatballs in 1 layer in the pan, quickly sear meatballs over high heat, and then place in the oven. Cook until the meatballs are well browned and firm to the touch, turning to brown all sides, 8 to 10 minutes.
  • Prepare the garnish: In a small bowl, combine all ingredients. Refrigerate until serving time.
  • Return to the soup: Remove the celery bouquet. With an immersion blender, lightly blend soup (you want it to still be a little chunky). Correct seasoning, to taste. Alternatively, transfer 2/3 of the soup to a blender*. Blend until smooth and return to the saucepan.
  • Ladle soup into 8 or 10 soup bowls. Divide the meatballs evenly among the soup bowls and drizzle the yogurt mixture over. Serve immediately.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
  • Place the chicken bones in a 6-quart pot, pour water over to cover, and bring to a rolling boil. Skim off the scum that collects on the top. Add the remaining ingredients, lower the flame, and simmer about 2 hours, skimming as necessary. Strain into a clean bowl and cool. Refrigerate in a covered container for up to 3 days, discarding hardened layer of fat before using or freezing.
  • Yield: about 2 quarts

1 large onion, diced
2 carrots, peeled and sliced
2 parsnips, peeled and sliced
1 golden beet, peeled and diced
½ large rutabaga, diced
1 bulb fennel, diced
4 cups vegetable broth

¼ teaspoon dried thyme
2 bay leaves
1 bunch fresh parsley, finely chopped

Steps:

  • Cook and stir olive oil, onion, carrots, parsnips, beet, rutabaga, and fennel in a soup pot over medium heat until vegetables begin to soften, about five minutes.
  • Mix vegetable broth into vegetables and bring to a boil. Add lentils, dried thyme, bay leaves, and parsley. Reduce heat to low and simmer until lentils are tender, about 35 minutes. Season with salt and ground black pepper to taste.

The combination of sweet, savory, and spicy flavors makes this hearty (check out that protein and vitamin A content!) but healthy soup a perfect choice for whatever you happen to be in the mood for. The spices I chose gives it almost an Indian or Moroccan feel; whichever gastronomic prefix sounds tastier to you. It serves well both hot and cold and is delicious over some steamed rice or any other starchy filler.

1/2 cup dried lentils, soaked
3/4 cup sweet potato, peeled and cubed (or 1 medium sized)
1 cup red onion, diced (or 1 medium sized)
3 garlic cloves, minced
1/2 cup carrot, thinly sliced
1 1/2 cups low sodium chicken broth or 1 1/2 cups low sodium vegetable broth
2 cups water
1/4 cup red wine
1/2 tablespoon fennel seed
1/2 tablespoon cumin
1/2 tablespoon cinnamon
1/2 tablespoon chili powder
1/2 tablespoon cayenne pepper
1/2 tablespoon red pepper flakes
salt, to taste

Steps:

  • Soak the lentils in roughly 1 cup of cold water or green tea for at least 30 minutes.
  • In a medium-sized stock pot over medium-high heat, sauté the diced onions and garlic in 1/4 cup of the chicken broth until the onions become translucent (around 5 minutes).
  • Add the carrots, sweet potatoes, and red wine. Cook for around 1 minute or until the wine becomes very fragrant.
  • Add the lentils, water, and chicken broth. Bring to a rolling boil, stirring the mixture occasionally.
  • Reduce the heat. Add the red pepper flakes and fennel seed and cover, allowing the soup to simmer for about 20 minutes or until the lentils and sweet potatoes begin to fall apart.
  • Remove the lid and add the spices. If you would like to get a thicker consistency, kick the heat back up and reduce until it hits the desired thickness. You may want to adjust the amounts of salt and pepper, depending on your own tastes.
  • Serve the soup either on its own or over a starch with a dollop of raita (thick yogurt mixed with vegetables) or sour cream. Garnish with whatever you like (Featured in the photo is yogurt, carrot, and a dash of paprika.).

1 lb. Red Lentils (rinsed and drained, just prior to adding to the soup)
3 Tbsp. Olive Oil
3 to 4 oz. Lean Salt Pork or smoked bacon (sliced into 1" pieces)
2 Carrots (peeled and sliced)
2 Celery stalks with leaves (sliced)
1 Onion (chopped)
1 Bay Leaf
1 to 2 Tsp. Ground Cumin
1 Qt. Low Sodium Chicken Broth
1 Qt. Water
2 to 3 Garlic Cloves (sliced and/or chopped)

Steps:

  • In a heavy pot, heat 1 tbsp. olive oil until hot. Add salt pork and saute until it begins to brown. Add carrots, celery and onion and stir to combine. Add another tbsp. olive oil, stir and continue to saute until carrots and celery begin to soften and onion begins to brown. Add the last tbsp. of olive oil and stir in lentils, cumin and bay leaf. Cook another minute until very fragrant. Add the chicken broth and bring to a gentle boil. Add chopped garlic, stir and reduce heat to a simmer. Begin adding the water a cup at a time to thin the soup. It will be very thick at this point. Once it reaches the desired consistency, continue to heat for 15 to 20 minutes, stirring occasionally. If too thick, thin with additional water. If you want to make a vegetarian version of this, substitute all of the liquid with water and omit the salt pork. Add a drop or two of liquid smoke for flavor and season with salt.

2 cups dried red lentils
5 large onions, chopped
2 large carrots, chopped
2 stalks celery, chopped
7 garlic cloves, minced
1 teaspoon ground turmeric
2 teaspoons ground coriander
4 teaspoons ground cumin
olive oil
7 cups vegetable broth
salt & fresh ground pepper

Steps:

  • Rinse lentils and then cover with water in a large saucepan and bring to a boil. (Stir occasionally to prevent burning.) Cook, uncovered, for 9 minutes. Drain and place aside.
  • Chop carrots, celery, onion and garlic. (Using a food processor saves time if available).
  • In a large stockpot, saute the chopped onions, carrot, celery, garlic, turmeric, and cumin in olive oil until onions are translucent.
  • Transfer lentils and broth to the pot. Add coriander and salt and pepper to taste.
  • Bring soup to a boil. Lower heat, cover, and simmer for 40 minutes. Serve with crackers.

1 cup red lentil
6 cups water
4 chicken stock cubes (use vege stock for vegetarians)
4 carrots, Chopped
1 onion, Chopped
2 garlic cloves, Minced
2 teaspoons curry powder
cayenne (To Taste) (optional)

Steps:

  • Place all ingreidients in a large pot and bring to a boil.
  • Turn pot down to a simmer and simmer for 20-30 minutes, or until the lentils are tender. Puree them with a stab mixer or a blender till smooth.
