No matter how you form these tender, golden rolls (cloverleaf or Parkerhouse shapes also work well), it's impossible to eat just one. My husband's aunt gave me this treasured recipe. -Pat Habiger, Spearville, Kansas

Yield 3-1/2 dozen.

Number Of Ingredients 9

2 packages (1/4 ounce each) active dry yeast
1 cup plus 2 tablespoons sugar, divided
1-1/2 cups warm water (110° to 115°), divided
1 cup milk
1/2 cup butter, cubed
2 eggs
2 teaspoons salt
8-1/2 to 9 cups all-purpose flour
Melted butter

Steps:

  • In a large bowl, dissolve yeast and 2 tablespoons sugar in 1/2 cup water. In a saucepan, heat the milk, butter and remaining water to 110°-115°; add to yeast mixture. Add eggs, salt, 5 cups flour and the remaining sugar; beat until smooth. Add enough of the remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Divide into thirds; roll each portion into a 14-in. roll. Divide each roll into 14 pieces. Roll pieces into 9-in. ropes and tie into knots. Place the rolls 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes. Bake at 350° for 15-20 minutes or until golden brown. Brush with melted butter.

Prepare and partially bake these rolls on a day when you have plenty of time. Then freeze them for busy days ahead!

Number Of Ingredients 8

2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (110° to 115°)
1/2 cup plus 2 teaspoons sugar, divided
1-1/2 cups warm milk (110° to 115°)
1/4 cup canola oil
4 teaspoons salt
7-1/2 to 8-1/2 cups all-purpose flour
Melted butter

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 2 teaspoons sugar; let stand for 5 minutes. Add the milk, oil, salt, remaining sugar and 4 cups flour. Beat until smooth. Add enough flour to form a stiff dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Divide into four portions. Cover three pieces with plastic wrap. Shape one portion into 12 balls. To form knots, roll each ball into a 10-in. rope; tie into a knot. Tuck and pinch ends under. Repeat with remaining dough. , Place rolls on greased baking sheets; brush with butter. Cover and let rise until doubled, about 20-30 minutes. , To serve immediately, bake at 375° for 15-18 minutes. To freeze for later use, partially bake at 300° for 15 minutes. Cool and freeze. , To use frozen rolls: Reheat frozen rolls at 375° for 12-15 minutes or until browned.

The best sweet rolls you'll ever taste! They don't last long in my house. They are delicious with or for breakfast...also a delicious roll for dinner! Enjoy!

2 (.25 ounce) packages active dry yeast
2 tablespoons white sugar
1 ½ cups warm water (110 degrees F/45 degrees C)
1 cup milk
½ cup butter
1 cup white sugar
2 eggs
2 teaspoons salt
8 cups all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a small bowl, dissolve yeast and 2 tablespoons sugar in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in the butter and remaining 1 cup sugar; stir until melted. Let cool until lukewarm.
  • In a large bowl, combine the yeast mixture with the milk mixture, eggs, salt and 3 cups of flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  • Punch down dough and divide into thirds; divide each portion in a 14 inch roll; divide each roll into 14 pieces. Roll the pieces into 9 inch ropes and tie into knots. Place the rolls 2 inches apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 45 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven) for 15 minutes until lightly browned. Remove from oven and brush with melted butter.
