A cousin in North Carolina gave me the recipe for these delicious honey-glazed rolls. Using my bread machine to make the dough saves me about 2 hours compared to the traditional method. The rich buttery taste of these rolls is so popular with family and friends that I usually make two batches so I have enough! -Sara Wing, Philadelphia, Pennsylvania

Number Of Ingredients 14

1 cup warm 2% milk (70° to 80°)
1 large egg, room temperature
1 large egg yolk, room temperature
1/2 cup canola oil
2 tablespoons honey
1-1/2 teaspoons salt
3-1/2 cups bread flour
2-1/4 teaspoons active dry yeast
GLAZE:
1/3 cup sugar
2 tablespoons butter, melted
1 tablespoon honey
1 large egg white
Additional honey, optional

Steps:

  • In bread machine pan, place the first 8 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed.), When cycle is completed, turn dough onto a lightly floured surface. Punch down; cover and let rest for 10 minutes. Divide into 24 pieces; shape each into a ball. Place 12 balls each in 2 greased 8-in. square baking pans. Cover and let rise in a warm place until doubled, about 30 minutes. , For glaze, combine the sugar, butter, honey and egg white; drizzle over dough. Bake at 350° until golden brown, 20-25 minutes. Brush with additional honey if desired.

Number Of Ingredients 13

1 package (1/4 ounce) active dry yeast
1 cup warm 2% milk (110° to 115°)
1/2 cup canola oil
2 tablespoons honey
1 egg
1 egg yolk
1 teaspoon salt
3-1/4 to 3-3/4 cups all-purpose flour
TOPPING:
1/3 cup confectioners' sugar
2 tablespoons butter, softened
1 tablespoon honey
1 egg white

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the oil, honey, egg, egg yolk, salt and 2 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough. Dough will be sticky., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Divide into 20 pieces. Shape each into a ball. Divide between two greased 9-in. round baking pans. Combine the topping ingredients; brush 3 tablespoons over rolls. Cover and let rise until doubled, about 30 minutes. Brush with remaining topping. , Bake at 350° for 18-20 minutes or until golden brown. Remove from pans to wire racks.

I turn leftover sweet potatoes into these soft, tender sweet rolls packed with honey flavor. It's a great way to surprise the family the day after Thanksgiving.

2 tablespoons active dry yeast
1-1/4 cups warm 1% buttermilk (110° to 115°)
1 tablespoon honey
3 eggs, lightly beaten
3/4 cup cold mashed sweet potatoes (without added milk and butter)
1/2 cup butter, softened
1/3 cup packed brown sugar
2 teaspoons salt
1/2 to 3/4 teaspoon ground mace
5 to 5-1/2 cups all-purpose flour
TOPPING:
2 tablespoons butter, melted
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/2 cup honey, warmed
FILLING:
2 tablespoons butter, softened
3/4 cup sugar
1-1/2 teaspoons ground cinnamon

Steps:

  • In a large bowl, dissolve yeast in warm buttermilk. Stir in honey; let stand for 5 minutes. Add the eggs, sweet potatoes, butter, brown sugar, salt, mace and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a firm dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Pour melted butter into a greased 13-in. x 9-in. baking pan. Sprinkle with brown sugar and pecans. Drizzle with honey; set aside. , Punch dough down. Turn onto a lightly floured surface; roll into a 16-in. x 10-in. rectangle. Spread with softened butter; sprinkle with sugar and cinnamon. Roll up jelly-roll style, starting from a long side; pinch seam to seal. Cut into 12 slices. Place cut side down in prepared pan. Cover and let rise until doubled, about 40 minutes. , Bake at 350° for 40-50 minutes or until golden brown. Immediately invert onto a serving platter. Serve warm.
