One 25-ounce ball high-gluten dough
8 ounces ricotta cheese
4 ounces rehydrated sun-dried tomatoes
8 ounces fresh Roma tomatoes, sliced
11 ounces grated mozzarella
1 ounce granulated garlic
1 ounce grated Pecorino-Romano
8 ounces pesto

Steps:

  • Preheat the oven to 500 degrees F.
  • Start by stretching out the dough to the desired size. Spread the ricotta cheese over the whole surface area of the stretched pizza dough. Next spread the rehydrated sun dried tomatoes liberally over the ricotta cheese. Then add the Roma tomatoes. Spread the mozzarella, sprinkle with the granulated garlic and hit it with the Pecorino Romano. Finally, add the pesto. Bake the pizza until the crust is golden brown, about 15 minutes.

It is claimed that in 1973, Glamour Magazine posted this recipe based on a scene in the movie "The Godfather": "Heh, come over here, kid, learn something. You never know, you might have to cook for 20 guys someday. You see, you start out with a little bit of oil. Then you fry some garlic. Then you throw in some tomatoes, tomato paste, you fry it; ya make sure it doesn't stick. You get it to a boil; you shove in all your sausage and your meatballs; heh...? And a little bit o' wine. 2 tablespoons olive oil
3 garlic cloves, chopped
2 (28 ounce) cans tomatoes (whole, crushed or chopped)
2 (6 ounce) cans tomato paste
3 Italian sausages, grilled and sliced
1 lb meatballs, cooked (use your favorite recipe)
red wine, just a splash
1/4 cup sugar (or to taste)

Steps:

  • Heat the oil over medium heat in a large pot.
  • Add garlic and cook for a few minutes. Do not let the garlic burn.
  • Add tomatoes and tomato paste. Cook for about 5 minutes, stirring continuously so that a relatively smooth consistence is reached.
  • Add sausages and meatballs and stir until the meat is coated.
  • Add a splash of red wine, then the sugar according to taste.
  • Reduce heat to medium-low and let simmer for a minimum of 20 minutes, stirring occasionally to prevent scorching.
  • Serve by ladling over cooked pasta.
  • Tip: It's not in the movie, but a teaspoon each of basil and oregano is suggested.
  • Tip 2: If you're using canned whole tomatoes, draining them and then crushing them by hand will result in a chunky sauce. Canned crushed tomatoes will create a slightly thinner sauce, while canned chopped tomatoes will result in a thicker sauce.

There are times in our daily lives when we just have a case of the blues & nothing is as therapeuitc for it as a grilled cheese sandwich - the ultimate comfort food! This unique grilled cheese sandwich uses blue to cure the blues & puts a bit of an Italian twist on an otherwise British effort .. hence the Godfather title. I can't recall now where the idea originated, but I've been playing w/it for quite a while & have modified it from the original to suit our preferences. I suggest you try it - it may work well as a blues preventative for you too!

4 ounces cream cheese (softened)
2 ounces blue cheese (crumbled)
3 ounces bacon (cooked crisp & crumbled)
3 ounces fresh tomatoes (diced, use only tomato meat or pulp)
4 tablespoons Italian salad dressing
8 slices bread

Steps:

  • Combine the cream cheese w/the blue cheese & mix well to a smooth consistency.
  • Add crisped bacon pieces & diced tomato to the cheese mixture & mix just well enough to achieve a good distribution.
  • Put 8 slices sandwich bread on your cutting board or counter. Using a pastry brush, brush approx 1/2 tbsp of the Italian salad dressing on ea slice of bread.
  • Turn over 4 slices of the bread & spread 3 oz of the cheese mixture on those 4 slices (You should have 12 oz of cheese mixture for this).
  • Top ea of those slices w/the other 4 slices so all the exposed bread surfaces are the ones spread w/the Italian salad dressing.
  • Grill your sandwiches & enjoy!

Godfather's Streusel Dessert Pizza Recipe - (4.2/5) image

Pizza dough
1 TBSP butter, melted (or 1 TBSP oil)
Cinnamon
Streusel (makes enough mix for 3 pizzas)
1/2 cup plus 1/3 cup bread flour
1/3 cup white sugar
1/8 cup brown sugar
2 TBSP solid shortening
2 TBSP olive oil
Icing
1/2 - 3/4 cup powdered sugar
1 TBSP water
1/2 tsp. vanilla

Steps:

  • Mix together streusel ingredients with a pastry knife, then side aside. To make pizza, pat dough into a 12 inch pie pan that has been sprayed with oil, then brush with 1 TBSP melted butter. Sprinkle cinnamon all around buttered crust. Top pizza crust with 1/2 - 3/4 cup streusel mix (freeze remaining streusel mix for another pizza). Bake at 460 F for 8 to 9 minutes depending on the thickness of the pizza. Cover with aluminum foil halfway through to keep streusel from burning. Mix icing ingredients until it is of a drizzle consistency. If it is too thick, then thin with a small amount of water until you have reached your desired thinness. When finished baking, top with icing in a circular pinwheel pattern. I usually ice the pizza with a sandwich bag with the end cut off.

50ml scotch whisky
25ml amaretto
ice
strip of orange peel, to garnish

Steps:

  • Pour the whisky and amaretto into a mixing glass or jug. Add a large handful of ice, then stir with a long-handled spoon until the outside of the glass feels very cold. Taste to check the dilution, then fill a tumbler or rocks glass with ice.
  • Strain the cocktail into the ice-filled glass. Either drop in the strip of orange peel or, to make a twist, trim the ragged edges from the peel and twist into a spiral around a skewer. Hold for a moment, then release gently and drop into the glass.

I first ate this wonderful burger while on vacation in Colorado Springs, at a restaurant called Paravicini's Italian Bistro. This is not their recipe, yet my recreation of that delicious burger. Delizioso!

1 slice bread
1/4 cup milk
1 lb lean ground beef
2 garlic cloves, minced
3 tablespoons grated parmesan cheese
1/2 teaspoon oregano
1/2 teaspoon parsley
1/2 teaspoon red pepper flakes
1/4 teaspoon pepper
1/4 teaspoon salt
2 tablespoons olive oil
1 tablespoon butter
1/2 red onion, sliced
2 roasted red peppers (Such as Roasted Red Bell Peppers)
4 slices provolone cheese
4 slices mozzarella cheese
4 buns, rosemary focaccia (See note)

Steps:

  • ~NOTE~ I use Recipe #82337 for the buns which can be made up a day ahead of time or several weeks ahead of time if frozen. The recipe makes 2 loafs, but I divide the dough to make 8 buns. If you don't have time to make the focaccia buns, then regular buns can be used.
  • In a large mixing bowl, combine bread and milk and allow to sit for several minutes.
  • Squeeze the milk from the bread and discard milk.
  • In the same mixing bowl, combine the wet bread, ground beef, garlic, parmesan cheese, oregano, parsley, red pepper flakes, pepper, and salt.
  • Mix ingredients by hand to combine well.
  • Divide meat mixture into 4 and form 4 patties about 3/4-inch to 1-inch thick.
  • In a large skillet, heat 2 tablespoons olive oil with butter.
  • Once butter is melted, add sliced red onions and saute until tender, but not brown.
  • Remove onions from skillet and place on a plate.
  • Place patties in hot skillet.
  • Cook patties 5-6 minutes on each side, or until done to your liking.
  • While patties are cooking, you can toast the buns, if desired.
  • Just before patties are done, place 1 slice of provolone cheese and 1 slice on mozzarella on top of each patty and allow to melt.
  • Remove patties from skillet and place them on paper towels to drain.
  • Place each patty on a rosemary focaccia bun.
  • Top each patty with a slices of roasted red bell pepper and a few grilled onions.
  • Serve open face and allow your guest to dress up their burgers with the condiment of their choice - such as lettuce, tomatoes, mayo and mustard.
