1 large onion, roughly chopped
10 garlic cloves
100g ginger, chopped
100ml vegetable oil
2 scotch bonnet chillies, chopped
small handful curry leaves
3 thyme sprigs
4 tbsp mild curry powder
700g mutton or goat shoulder, diced
400g can chopped tomato
300ml lamb or beef stock
410g can pinto, kidney or black-eyed beans
juice ½ lemon
small bunch coriander, chopped
warmed roti (Jamaican flatbread) and rice, to serve

Steps:

  • Place the onion, garlic and ginger in a food processor and blend to a purée. Heat the oil in a large flameproof casserole dish, add the onion mixture and cook for 5 mins until softened. Add the chillies, curry leaves, thyme, curry powder and 2 tsp salt. Cook for 2-3 mins until fragrant.
  • Tip the mutton or goat into the pan. Cook for 5 mins over a medium-high heat until the meat has browned. Add the chopped tomatoes and stock. Increase the heat, bring to the boil and cook for 10 mins. Reduce heat, cover and leave to simmer gently for 2½ hrs - remove the lid for the final 30 mins of cooking.
  • Add the beans to heat through, plus more chilli if you want it spicier. After 5 mins more, remove from the heat. Add the lemon juice and coriander, and stir well. Serve with warmed roti and rice.

An aromatic, comforting curry made in the pressure cooker. In India, this curry is normally made with kid goat meat but you could also use lamb. Serve with rice or hot chapatis.

3 ½ pounds baby goat meat, cut into small cubes
salt to taste
3 teaspoons ground turmeric, divided
5 tablespoons vegetable oil
1 teaspoon white sugar
3 medium potatoes, halved
3 pods cardamom
4 whole cloves
1 (1 inch) piece cinnamon stick
3 medium onions, thinly sliced
2 peppers green chile peppers, minced
4 cloves garlic, minced
1 (1 inch) piece minced fresh ginger root
2 medium tomatoes, sliced
¾ teaspoon chili powder
2 ¼ cups water, divided, or as needed
freshly chopped cilantro

Steps:

  • Wash goat meat well under cold running water and pat dry. Rub in salt and 1 teaspoon turmeric powder. Set aside for 10 minutes.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil and add sugar, allowing it to caramelize. Saute potatoes in the caramelized sugar until golden, about 5 minutes. Remove potatoes and set aside.
  • Stir in cardamom pods, cloves, and cinnamon stick. Add sliced onion, chile peppers, garlic, and ginger. Cook until onions are soft and golden, about 5 minutes. Stir in tomatoes, remaining 2 teaspoons turmeric powder, and chili powder; cook, stirring often, for about 5 minutes. Add goat meat, stirring to blend everything. Add enough water to cover the meat, about 2 cups.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid. Taste curry and adjust seasoning with salt and sugar to taste if necessary.
  • Check the goat to make sure it is tender. Add the potatoes and about 1/4 cup more water. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 minutes for pressure to build.
  • Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Adjust seasoning once more. Transfer to a serving dish and garnish with fresh cilantro.

1/4 cup vegetable oil
6 -8 tablespoons curry powder
1 tablespoon allspice (see step 1)
3 lbs goat meat (can use lamb or beef if you can't find goat)
salt
2 onions, chopped
1 habaneros or 1 jalapeno pepper, seeded and chopped
1 teaspoon ginger, garlic
1 tablespoon garlic, minced
1 (8 ounce) can coconut milk
1 (15 ounce) can tomato sauce or 1 (15 ounce) can crushed tomatoes
1 tablespoon dried thyme
3 -4 cups water
5 yukon gold potatoes, peeled and cut into 1-inch chunks

Steps:

  • If you can find Jamaican curry powder, use it and omit the allspice. If not, use regular curry powder and add the allspice to it. Add 6 tbsp of curry powder, more if you like it more spicy.
  • Cut the meat into large chunks, maybe 2-3 inches across. Feel free to add the bones if you have them; you can remove them later.
  • Heat the oil in a large pot over medium-high heat. Mix in 2 tablespoons of the curry powder and heat until fragrant.
  • Pat the meat dry and brown well in the curried oil. Do this in batches and don't overcrowd the pot. It may take a while to do this, maybe 30 minutes or so. Set the browned meat aside in a bowl. (When all the meat is browned, if you have bones, add them and brown them, too.).
  • Add the onions and pepper to the pot and sauté, stirring from time to time, until the onions just start to brown, about 5 minutes. Sprinkle some salt over them as they cook. Add the ginger and garlic, mix well and sauté for another 1-2 minutes.
  • Put the meat (and bones, if using) back into the pot, along with any juices left in the bowl. Mix well. Pour in the coconut milk and tomatoes and 4-5 tablespoons of the curry powder. Add 4 cups of water. Stir to combine. Add the thyme.
  • If you want to cook on the stove, bring to a simmer and let it cook until the meat is falling-apart tender, which will take at least 2 hours. Longer if you have a mature goat. If you want to cook in a crockpot, transfer the mixture to the crockpot and cook on low for 8-10 hours.
  • If you have cooked the meat on the stove, add the potatoes when the meat is close to being done - tender but not falling apart. Cook about 30 minutes or until the potatoes are done. Then, skim the fat off the top of the pot if needed.
  • If you cooked the meat in the crockpot, boil the potatoes until tender. Skim the layer of fat off the top of the curry, if needed, and mix in the potatoes.
  • If you used bones, remove them before serving.

JAMAICAN GOAT CURRY

½ cup white vinegar
1 large onion, chopped
½ cup Jamaican curry powder, divided
2 Scotch bonnet peppers, seeded and chopped

½ teaspoon ground black pepper
4 sprigs fresh thyme, leaves stripped
2 tablespoons vegetable oil
2 large potatoes, diced
2 carrots, diced

Steps:

  • Combine goat meat and vinegar in a large bowl; cover with water. Let stand, about 5 minutes. Drain, massaging the meat.
  • Mix onion, 6 tablespoons curry powder, Scotch bonnet peppers, garlic, allspice berries, salt, pepper, and thyme together in a bowl to make a spice rub. Rub into goat meat until coated. Cover with plastic wrap and refrigerate, 8 hours to overnight.
  • Scrape spice rub off the goat meat, reserving it in a bowl.
  • Heat oil in a large saucepan over high heat. Add remaining 2 tablespoons curry powder; stir until dark and fragrant, about 1 minute. Add goat meat; cook until browned, 1 to 2 minutes per side.
  • Stir reserved spice rub, potatoes, and carrots into the saucepan. Pour in enough water to cover. Bring to a boil; reduce heat to medium-low and simmer, covered, adding more water as needed, until goat meat is tender, 1 1/2 to 2 hours. Discard allspice berries. Season with salt and pepper.

2 tablespoons curry powder, such as Lalah's Madras Curry Powder
1/2 teaspoon salt
4 leaves shado beni, chopped (chopped cilantro can be substituted)
2 cloves garlic, crushed
1 medium onion, sliced
Cooking oil
Roti, for serving
Hot pepper sauce, for serving

Steps:

  • In a sealable container, combine the meat, 1 tablespoon curry powder, salt and shado beni. Mix and let sit for an hour, or while you prepare the other ingredients.
  • In a skillet or saucepan over medium heat, saute the garlic and onions in a little cooking oil until clear. Then stir in the remaining 1 tablespoon curry powder. Stir until the curry paste turns a little dark.
  • Then add the seasoned meat and increase the heat, stirring until the meat is slightly browned. Add 3 cups water and simmer covered, stirring every 15 minutes, for about an hour. It's finished when most of the water has cooked off and the meat is tender to your liking.
  • Serve with roti and a hot pepper sauce on the side.

Steps:

  • Heat 1 teaspoon of oil in a saucepan over medium heat. Stir in the chopped onion, and cook until the onion turns translucent and the edges begin to brown, about 7 minutes. Scrape the onion into the container of a blender, and set aside.
  • Return the saucepan to the stove, and stir in the curry leaves and peppercorns. Cook and stir until the curry leaves wilt and turn almost dry, about 5 minutes. Stir in the coriander, and cook 1 minute more. Scrape the curry leaves into the blender, and pour in 1/2 cup of water. Blend until the mixture has turned into a coarse paste.
  • Heat 3 tablespoons of oil in the saucepan over medium heat. Stir in the sliced onions, and cook until the onions have softened and turned translucent, about 5 minutes. Stir in the ginger and garlic, continue cooking until the garlic softens and mellows, about 3 minutes more. Stir in the cayenne pepper, salt, and turmeric; continue cooking 2 minutes.
  • Mix in the tomato paste, goat meat, pureed peppercorn sauce, and the remaining 1/2 cup of water. Bring to a simmer, then reduce heat to medium-low, cover, and simmer until the meat is tender, about 30 minutes.

1 lime, juiced
1 tablespoon salt
1 teaspoon freshly ground black pepper
1 Scotch bonnet pepper (any color), seeded and minced
1/2 teaspoon dried thyme
1/2 teaspoon ground allspice (dry pimento berries)
3 tablespoons curry powder
2 whole scallions, sliced
1 onion, sliced
3 cloves garlic, minced
1/4 cup vegetable oil
3 tomatoes, diced
1/2 cup coconut milk (optional)
3 cups water

Steps:

  • Rinse goat meat well, rub lime juice over it (from 1/2 whole lime), place meat in a bowl, then add salt, black pepper, Scotch bonnet, thyme, allspice, curry powder, scallions, onion and garlic. Leave to marinate for at least 2 hours in the refrigerator, longer would be ideal. Heat the oil in a skillet until it is very hot, and saute the meat until golden brown. Then add the marinade, tomatoes and coconut milk, if using, and simmer for approximately 3 more minutes. Add water, reduce heat and allow to simmer for 2 to 3 hours stirring occasionally until meat is tender. Instead of simmering for 2-3 hours you can cook goat in a a Pressure Cooker for ~40-45 minutes

SLOW COOKER GOAT CURRY

A wonderfully flavourful versatile spicy curry with Indian and Jamaican influences. Goat or mutton is marinated overnight for depth of flavour, then slowly cooked for at least 5 hours to create truly irresistible, melt-in-the-mouth meat and a dish to warm the soul.

Steps:

  • The evening before you want the curry: Wash the meat in cold water and remove the bones (you can leave a few bones if you don't mind them as they can help enhance the flavour too). Pat the meat dry with kitchen roll and place in a large bowl. Add lemon juice, 2 tablespoons of Jamaican curry seasoning, finely chopped garlic, ginger and chopped onion. Use your hands and rub the mixture into the meat. Cover the bowl with cling film; leave it in the fridge to marinate overnight.
  • At least 5 hours before you want to serve: Heat oil in large fying pan so its hot but not smoking. Add marinated meat and fry until lightly browned on all sides, around 2-3 minutes. Add any marinade juices that are left and 1 tablespoon plain flour; fry for another minute or so. Transfer the meat to the slow cooker.
  • Stir in onion slices, cauliflower florets, minced chilli pepper, 1 tablespoon curry seasoning, chopped tomatoes and coconut milk. (If you are adding/using different vegetables, add them now).
  • Turn the slow cooker onto high setting for 5 hours or low setting if you plan to leave it over 6 hours or all day... It can't be overdone so 8+ hours is no problem but will need 5 hours minimum for the meat to get really juicy and soft.

VIJ'S STEWED CINNAMON SCENTED GOAT OR LAMB CURRY- ADAPTED

This is my version of Vij's recipe. I used half of the ghee and oil recommended and half the garlic.

2 tablespoons ghee or 2 tablespoons canola oil
1 tablespoon cumin seed
2 large onions, chopped
3 1/2 large garlic cloves, chopped (about 1/2 oz)
1 tablespoon lightly crushed gingerroot
2 tablespoons ground cumin
2 teaspoons ground coriander
1 teaspoon turmeric
10 cloves
1 cinnamon stick, 2 inches long (add another 1-inch stick if you prefer a stronger taste)
1 teaspoon ground cayenne pepper
1/2 tablespoon salt
5 ripe tomatoes, chopped (about 11/2 lbs)
1 cup plain yogurt, stirred
1 cup water
1/8 cup canola oil
2 lbs leg of lamb or 2 lbs goat meat, fat trimmed, cut in 1 1/2-inch cubes
1/2 cup chopped fresh cilantro

Steps:

  • Melt ghee on medium heat in a large, heavy stockpot. Add cumin seeds and sauté until they sizzle, about 45 seconds. Add onions and sauté until golden brown, about 8 to 10 minutes. Add garlic and sauté 2 to 3 minutes, or until golden brown. Stir in ginger. After 1 minute, add ground cumin, coriander, turmeric, cloves, cinnamon, cayenne and salt. Cook on medium heat, stirring regularly, for 5 to 10 minutes or until ghee (or oil) separates from the spices. Add another tablespoon of ghee or oil if spices are sticking to the bottom of the pot.
  • Add tomatoes and cook for 3 to 4 minutes, until ghee (or oil) separates again and glistens. Stir in yogurt and cook for another 1 to 2 minutes, then add water (add an extra cup of water if serving with rice). Bring to a boil, then remove from the heat.
  • In another large, heavy frying pan, add 1/8 cup oil. On medium to high heat, sauté lamb (or goat), stirring regularly, until you notice small, thin lines of blood on the meat. Remove from the heat and transfer meat to the stew.
  • Return stew to medium-low heat and cook covered, stirring occasionally, for 2 hours or until meat is cooked through. Add more water, 1/2 cup at a time, if the stew becomes dry while cooking. This should be a moist, thick curry.
  • To Serve: Just before serving, remove cinnamon stick and cloves. Stir in cilantro. Ladle equal amounts of curry into each bowl.
  • Pairing: Zinfandel.

1 small yellow onion, minced

2 chayotes, cut into lengthwise strips
1/4 fresh coconut, julienne
1/2 cup dark rum
2 cups chicken stock or 2 cups water
2 yellow bell peppers, roasted and peeled, cut into lengthwise strips

1 coconut, its liquid

Steps:

  • Scrub limes well. Use a peeler to remove only the zest. Set zest aside and juice the limes. Set juice aside.
  • Heat peanut oil in a heavy skillet until shimmering. Add garlic, onion, ginger and lemon grass; cook, stirring, until tender but not beginning to brown. Add goat meat and reduce heat to medium; cook until all sides are brown but the interior is not cooked. Add lime zests, sweet potatoes, chayotes, coconut, rum and stock/water. Simmer 45 minutes. Add water as needed but take care towards the end of the cooking time, as the final result should be stew rather than soup. You may also use a little more rum, but take care to taste first.
  • Meanwhile, dice half the red and yellow pepper strips.
  • At the end of the simmering time, stir in the pepper dice and some of the curry paste. Taste and add more curry paste accordingly. Simmer 5 minutes, stirring occasionally. Stir in coconut liquid; simmer, stirring, for 1-2 minutes. Stir in reserved lime juice and remove lime zest. Turn off heat and taste before adding salt as desired.
  • Place cooked rice on a platter and make a well in the middle, mounding it around the edges. Put the goat curry mixture into the well. To garnish the top of the stew, alternately arrange strips of red and yellow peppers in spoke formation. Arrange the egg quarters around the edges and arrange or scatter cilantro prettily. Place lime wedges around the edges of the rice.
  • Diners can squeeze lime juice over their own portions to taste.

Not too spicy, but spicy enough to taste like a true curry. An easy dish that you can cook in only about half an hour. And best of all - no cow's milk! Serve with quinoa or rice.

1 sweet potato, cubed
3 tablespoons canola oil, divided
1 large onion, chopped, divided

  • Place sweet potato cubes on a large microwave-safe plate. Cook in the microwave until softened, about 10 minutes.

2 lbs goat meat, cut into 1-2 inch pieces
1 medium onion, sliced
3 garlic cloves, crushed
3 teaspoons thyme
1 tomatoes, sliced
1/2 habanero pepper
2 scallions
1/2 teaspoon curry powder, for seasoning the meat
1 1/2 tablespoons curry powder, for cooking
1/4 teaspoon cumin
3 tablespoons cilantro
1/2 teaspoon ketchup
3 1/4 cups water

Steps:

  • Wash and drain goat. Season with salt, pepper, thyme, tomato, 1/2 teaspoon curry, cumin, cilantro, and ketchup. Mix well and marinade in fridge for at least 2 hours
  • In a coated pot on medium/high heat, saute onion and garlic.
  • Add the pepper and 1 1/2 tbsp curry and cook about 2 minutes, until it's really thick.
  • Add 1/4 cup of water and cook on medium heat for 5 minutes. Keep stirring.
  • Raise heat and add goat, stirring to coat the meat. Cover and simmer.
  • Add 3 cups of water to the bowl that had the goat and set aside.
  • Stir every few minutes for about 25 minutes, remove lid and turn up the heat. When you can stir and see the bottom without any liquid, add the water. Bring to boil, turn heat to low.
  • Cover cook for about 2 hours, stirring every 15 minutes. If needed, turn up the heat to thicken the gravy, being careful not to burn.

3 lbs goat meat, cubed
4 tablespoons curry powder
1 medium onion, diced
3 tablespoons oil
1/4 teaspoon thyme
1/2 ounce vinegar
1 teaspoon salt
1 teaspoon black pepper (optional)
3 potatoes (optional)
2 tablespoons breadcrumbs (optional)

Steps:

  • Cut the goat into cubes.
  • Peel skin off potatoes and cut into cubes.
  • Wash the meat with the vinegar and hot water for 30 minutes, then rinse.
  • Season meat with 2 tblspn curry powder, diced onions, salt and pepper and refrigerate for an hour or more.
  • In a pot, add the oil and the 2 tblspn of curry powder.
  • When powder changes color add meat and fry for 2 minutes, add 2 cups of water immediately, and add potatoes,turn heat down to medium.
  • Boil for 15 minutes, then taste the stew, add any extra salt if necessary.
  • Boil for an extra 45 minutes, adding water when needed.
  • Too make the stew thicker add the breadcrumbs.

5 pounds frozen goat meat, defrosted
7 to 8 whole allspice
3 cloves garlic, coarsely chopped
1 onion, chopped
1 to 2 Scotch Bonnet peppers
1/2 sprig fresh thyme
1 cup spicy curry powder
2 tablespoons seasoning salt, such as Lawry's

Steps:

  • In a large bowl, mix the goat, allspice, garlic, onion, peppers and thyme. Sprinkle the curry and seasoning salt over the mixture and mix well.
  • Place the bowl in the refrigerator to marinate for overnight, about 12 hours.
  • After marinating, place the mixture into a pot and add water just under the level of the meat. Cover the pot and cook over high heat for 30 minutes. After 30 minutes, lower the heat to medium and cook for another 1 to 1 1/2 hours. (Use a long spoon to stir the meat from bottom to the top every 15 to 20 minutes until the heat is turned down.)
  • When the meat can be cut easily with the spoon, it is fully cooked. Remove from the heat and let the meat sit so the oil from the meat can rise to the top. Skim off the oil and discard.

salt to taste
1 pinch ground turmeric (holud powder), divided
3 potatoes, peeled and halved
5 tablespoons vegetable oil
1 teaspoon white sugar, divided
3 cardamom pods
4 whole cloves
1 (1/2 inch) piece cinnamon stick
3 onions, sliced
4 cloves garlic, minced, or more to taste
1 (1 inch) piece fresh ginger, cut into thin slices
2 small tomatoes, chopped
1 green chile pepper, chopped, or more to taste
¾ teaspoon cayenne pepper
2 cups water, or as needed

Steps:

  • Season goat meat with salt and 1 teaspoon turmeric. Sprinkle salt over potato halves.
  • Heat oil in a pressure cooker over medium heat; add 1/2 teaspoon sugar and cook until browned, 2 to 3 minutes. Place potatoes in the caramelized sugar and cook until potatoes are golden, 2 to 3 minutes per side. Transfer potatoes to a plate.
  • Combine cardamom, cloves, and cinnamon stick in the pressure cooker. Add onions, garlic, and ginger; cook and stir until softened and golden, 5 to 10 minutes. Mix tomatoes, remaining turmeric powder, and cayenne pepper into onion mixture; cook for 5 minutes. Season mixture with salt. Add goat meat; cook and stir until goat meat is coated with spice mixture and browned, 10 to 15 minutes. Pour enough water over mixture to cover goat meat. Cover pressure cooker with lid and cook according to manufacturer's instructions for 15 minutes.
  • Remove pressure cooker from heat and let the steam release by itself; open the lid and season with more salt. Add remaining sugar and cut a piece of goat meat to ensure meat is cooked through.
  • Return potatoes to pressure cooker. Add 1/2 cup water, cover pressure cooker with lid, and cook according to manufacturer's instructions for 2 whistles. Remove pressure cooker from heat and let the steam release naturally; check the salt and transfer goat meat to the serving container. Garnish with cilantro leaves.

2 1/2-3 lbs goat meat, shoulder (bone in)
6 ounces coconut milk (1/2 can)
1 teaspoon fresh ground ginger
2 tablespoons curry powder (get an authentic ethnic curry, not McCormick)
4 tablespoons olive oil (to cover bottom of pan)
1 -2 coarsely chopped white onion
3 smashed garlic cloves
4 medium potatoes (peeled and sliced)
1 -2 cup water
1 1/2 teaspoons salt
1/4 cup chopped fresh cilantro
1 dash cinnamon
1 teaspoon ground cumin
4 -6 serrano chilies (chopped seeds and all)
1 pinch chili powder (optional)
vegetable oil (for frying)
chopped scallion (to garnish, optional but so good) (optional)
1 1/2 cups whole wheat flour
1 teaspoon melted butter
1/4 cup warm whole milk or 1/4 cup skim milk
1/2 cup warm water
1 teaspoon white sugar
1/2 teaspoon salt
1/2 teaspoon baking powder

Steps:

  • Before you make curry, prepare Roti dough:.
  • In a large bowl, combine the flour, salt, sugar, baking powder.
  • Make a well in the center and add warm water, melted butter and milk, mixing it with the flour until a soft dough is formed. If dough is still too dry add teaspoons of water till your dough is soft, slightly sticky, but not wet.
  • Dust kneading board with flour; place the dough on the board and knead for 2 minutes or so.
  • Cover with plastic wrap and let rest for an hour or so.
  • To make Curry:.
  • Wash the goat and set a pot of water to boil. Enough water to cover the meat. Add goat to boiling water. Let boil till foam comes to top. Skim off till no more arises. (15 - 20 min depending how much goat you put in.).
  • Drain and set meat aside to cool.
  • In a heavy bottomed pot, cover bottom with olive oil, and heat. When oil shimmers, add chopped onions, and serranos, cook till onions become translucent. Keep heat low to medium, you don't not want to burn onions or you will impart a burnt taste to whole dish.
  • When onions are turning golden, add cumin, cinnamon, curry powder, stir and cook for 2 minutes. Then shut off heat.
  • Debone goat and slice meat finely. Add all meat back to the onions. (Make sure there are no bone chips, because it will be impossible to find them once you add the potatoes!).
  • Add water, bring back up to a boil. Add salt and coconut milk. Cover and let simmer for 20 - 40 minutes. Taste sauce. If it is too hot add more coconut milk. Too bland, you can add a pinch of chili powder. (and I mean a pinch, a 1/4 tsp can ruin an entire pot).
  • Now test goat. If meat is tender, add potatoes. If meat is very chewy, wait a bit longer till meat softens up. When meat is ALMOST as tender as you want it, add potatoes and recover pot.
  • Potatoes sliced thinly can take 10 - 20 minutes to soften up. Check after 10 minutes.
  • If sauce is too thick, add water. Potatoes will absorb water, so keep a close eye on them. ALSO: Don't stir too much, or you will break your potatoes and you will have potato soup.
  • When everything is tender, and potatoes are done, add garlic and cilantro. Stir, and cook for 5 minutes. Shut off heat.
  • Now its time to make the Roti.
  • To make ROTI:.
  • Divide the dough into three-inch balls. Dust board. Roll out the dough balls into 6-7 inch circles. Dust each flat as you create them, before you stack them so they do not stick together.
  • In a cast iron pan, (or a pan that can get very hot) Add vegetable oil. Test oil by dropping small bit of dough. If it comes to the top as soon as it hits the bottom of the pan, oil is ready. Place flat carefully in oil, it will sizzle and bubble up immediately.
  • Push dough under oil to force air into it. It will brown very quickly (30 - 60 seconds) Flip once and place on paper towels to drain. Make all dough at once. Salt them while they are still hot.
  • Plating : I enjoy a meal I can sink my teeth, and hands into. I serve this meal in a large shallow bowl. Place the chopped scallions in a bowl off to the side, or sprinkle over the curry. On a separate plate, stack the roti. The idea is to spoon the curry into small bits of the roti and pop into your mouth.
  • Serve this with cold beer and lots of napkins. Expect a little splatter but a lot of laughs. This meal is unbelievable good. And your friends and loved ones will never forget it.

5 pounds goat meat, cut into bite sized pieces
1 bunch of scallions, chopped
3 large onions, chopped
3 Scotch bonnet peppers, minced. (For less heat, seed the peppers and remove the veins.)
1 teaspoon allspice
salt to taste
black pepper to taste
About 6 tablespoons curry powder (more or less to taste)
2 tablespoons butter
1/4 cup frying oil of your choice
2 garlic cloves, minced
4 cups chicken stock
1 cup coconut milk
Juice of 2 limes

Steps:

  • In a large bowl, combine the goat meat, scallions, half of the onions, 1-3 Scotch bonnet peppers, allspice, salt and pepper, and 4 tablespoons of curry powder. Mix the ingredients together, coating the pieces of goat well with the mixture. Cover the bowl and place it in the refrigerator to marinate overnight. The following day, remove the goat meat from the refrigerator and set aside. Place a large soup pot over medium high heat. Add 1/4 cup frying oil. When the oil is hot, add two tablespoons of curry powder to the pot and stir it into the oil. Cook the curry powder for a few minutes, stirring it constantly and taking care that it does not burn. Add the remaining onions and cook them until they are translucent. Add the garlic and the seasoned goat meat to the soup pot and mix well to combine all of the ingredients. Add the stock, the coconut milk and the lime juice. Bring the mixture to a boil, then turn down the heat, cover the pot and simmer the goat meat for 2 or3 hours (or until the meat is very tender), adding water as needed
