Melanzane Ripiene is it's translation. This recipe just called to me, I got it from the dietician's magazine, "Diet & Nutrition." So am keeping it here for safe-keeping. Have not allowed for cooling times.

3 ounces feta cheese
8 ounces laura chenel goat cheese
1/4 cup chopped of fresh mint
1 tablespoon chopped garlic
1 eggplant, cut into 10 lenghtwise slices
2 tablespoons garlic oil
10 baby spinach leaves
2 fresh roasted red peppers, cut into wide strips
1 garlic clove, minced
1/4 teaspoon chili pepper flakes, red crushed
2 tablespoons fish sauce
2 teaspoons sugar
1 teaspoon lime peel, minced
2 teaspoons lime juice (not the bottled kind)
3 tablespoons water

Steps:

  • ROASTED RED PEPPERS:.
  • To fire roast red peppers, put both red peppers on top of gas burner and cook on each side until the skin is black and crispy, about 3 minutes per side depending on your burners.
  • Put charred peppers in a paper bag and allow to cool.
  • Brush the charred skin off and then deseed, derib and slice into strips. (Have those ready before you prepare the rest of the dish.).
  • GOAT CHEESE FILLING:.
  • Blend feta and goat cheese with mint and garlic; put aside.
  • EGGPLANT:.
  • Brush both sides of the eggplant slices with garlic oil and bake in a 400ºF oven for 15-20 minutes or until lightly brown.
  • When cooled, flip each eggplant slice over on a work surface.
  • Lay one spinach leaf on each slice, followed by a red pepper slice. Roll about 2 tablespoons of the goat cheese mixture into a cigar-shaped log the width of each eggplant slice and lay on top.
  • Roll the eggplant slice widthwise.
  • VIETNAMESE SPICY HOT SAUCE:.
  • Combine garlic, lime peel, and red pepper flakes then add lime juice, fish.
  • sauce, water, and sugar.
  • Increase red pepper flkes, as needed.
  • Whisk until all ingredients are blended.
  • and sugar is dissolved.
  • Will keep short periods if refrigerated.
  • ASSEMBLY:.
  • Cut on a bias and serve garnished with a small amount of Vietnamese Spicy Hot Sauce.

1 garlic clove, minced
2 ciabatta rolls, split
4 slices eggplant (1/2 inch thick)
1 medium heirloom tomato, cut into 1/2-inch slices
1/4 teaspoon salt
1/8 teaspoon pepper
2 ounces fresh goat cheese, softened
6 fresh basil leaves

Steps:

  • Mix oil and garlic; brush onto cut sides of rolls and both sides of vegetables. Sprinkle vegetables with salt and pepper., Grill eggplant, covered, over medium heat until tender, 4-5 minutes per side. Grill tomato, covered, until lightly browned, 1-2 minutes per side. Grill rolls, cut side down, until toasted, 1-2 minutes., Spread roll bottoms with goat cheese. Top with basil, eggplant and tomato; close sandwiches.

What a wonderful way to enjoy your veggies! We've both roasted and grilled the vegetables at different occasions and they turn out deliciously either way. Enjoy!

Number Of Ingredients 11

1/2 c olive oil (may need less)
2 large onions (mix it up, red, yellow, green)
4 zucchini - sliced about 1/2 inch thick circles
4 red peppers (any pepper you like - mix it up); stemmed, seeded and quartered
1 eggplant - sliced about 1/4 inch thick circles
3 or 4 carrots slices anyway you like
any other vegetable of your choice (mushrooms, tomatoes, etc.)
1/2 c balsamic vinegar
8 oz goat cheese (or soft cheese of your choice); bleu cheese works great too
kosher salt and pepper to taste
1 handful of pine nuts or nuts of your choice (optional)

Steps:

  • 1. Wash and cut all vegetables and cut. Place in a large bowl, plastic Ziploc bag or vessel of choice.
  • 2. Add 1/2 the olive oil, salt, and pepper and mix well. (I have also marinated the veggies in Italian dressing and other combinations). Place in the refrigerator for at least 1 hour.
  • 3. If grilling outside, preheat your grill to medium-low and brush grate with olive oil. Indoor grill, the same. Place vegetables on grill for 2-4 minutes each side, turn. If roasting in the oven, preheat oven to 350 degrees (I have a hot oven so I usually have it at 325). Lightly coat pan with olive oil and cook until each side has a nice golden brown color; turn.
  • 4. While veggies are grilling/roasting, heat balsamic vinegar in a saucepan and reduce by at least half.
  • 5. Arrange cooked veggies on a platter, top with goat cheese and drizzle balsamic vinegar over the top and nuts (optional).
  • 6. Serve with crunchy bread, warm, soft pita/flat bread.

I love these - these are so easy and such great flavor. I get a nice loaf of fresh pumpernickel and cut thick slices. Add some very thin sliced red onion, grilled eggplant, crumbled goat cheese, fresh basil, garlic aioli and roasted red peppers. Just perfect! I like to press it down lightly as it grills simply brushed with a little oil on the grill and it is a perfect sandwich. Served with a salad, soup or fresh grilled fries.

8 slices of thick fresh pumpernickel bread
1 eggplant, cut into rounds (I like to use the Japanese eggplant that do not need to be peeled and much sweeter -1/2-inch thick)
1 tomatoes, sliced
1/2 cup red roasted red pepper (jarred peppers work fine for this)
8 ounces goat cheese, crumbled
1/3 cup basil leaves, rough chopped
1 red onion (medium, cut in half and then thin sliced)
1 tablespoon olive oil, to roast the eggplant
salt
pepper
1/3 cup mayonnaise
1 teaspoon garlic, minced
1/2 teaspoon parsley
1/2 teaspoon lemon juice

Steps:

  • Aioli -- Mix the mayonnaise, garlic, parsley and lemon in a small bowl. Cover and refrigerate until later.
  • Eggplant -- Drizzle the eggplant with olive oil, salt and pepper. Roast at 425 degrees on a cookie sheet lined with parchment paper or foil 10-12 minutes on the middle shelf until tender. Remove and let cool.
  • Sandwich -- Spread the aioli on the bottom slice of the bread and top with the red onion, then the eggplant, tomato, basil, goat cheese, and red peppers. Top with another slice of bread also slathered with the aioli.
  • Grill -- Season your grill pan with a little olive oil and just grill the sandwich on each side until golden brown. It only takes a few minutes.
  • ENJOY! a nice light, bit healthier sandwich.

I made up this sandwich because I grow my own herbs, eggplants and tomatoes in my garden.

1 eggplant (sliced horizontally)
two tomatoes
1 red onion
goat cheese
basil
olive oil
baguette or any good bread

Steps:

  • Place sliced eggplant on hot grill (make sure to coat eggplant with olive oil). Slice tomatoes and red onion into 3/4 inch slices. Place tomatoes and onion on grill.
  • Meanwhile, spread goat cheese on any type of your favorite bread (I usually use a baguette or some kind of country bread.) When eggplant and other veggies have good grill marks, place eggplant on top of goat cheese, then tomato slices, then onion and top with basil. Spread another layer of goat cheese on top half of bread.

2 medium eggplants (about 2 1/2 pounds)
Coarse salt
3 to 4 tablespoons extra-virgin olive oil
2 to 3 ripe round tomatoes
1/2 pound soft white goat's cheese
1 1/2 pounds ripe Italian plum tomatoes
Coarse salt and freshly ground pepper to taste
Fresh basil leaves to garnish

Steps:

  • Slice the eggplant thin and sprinkle with salt. Allow to drain in a colander for an hour.
  • Preheat broiler.
  • Pat the eggplant dry with paper towels and brush the slices on both sides with the olive oil. Place them on a broiling pan lined with aluminum foil and broil them lightly, turning once, until the slices are golden but not overbrowned. Cool.
  • Meanwhile, make the tomato sauce, or puree. Boil the tomatoes in their skins for 10 minutes. Drain and, when cool enough to handle, peel the skins. Squeeze out the juice and seeds and discard. Place the pulp in a food processor. Process until smooth and pour into a noncorrosive saucepan. The puree should be quite thick. Season with salt and pepper and set aside.
  • Slice the round tomatoes thin. Place two slices eggplant per person, overlapping them slightly, on a broiling pan lined with foil. (You should have eight portions.) Top each portion with a slice or two of tomato and a generous tablespoon of goat's cheese. Set aside.
  • Preheat broiler. Broil the eggplant until the cheese is browned and bubbling. While it is cooking, warm the tomato sauce.
  • Place the eggplant portions on individual plates, with a pool of sauce on the side. Garnish with basil and serve.

3 tablespoons olive oil
7 Japanese eggplant, ends trimmed, cut into 1-inch wide slices
1/2 cup toasted pine nuts
3 ounces goat cheese, crumbled
1/3 cup basil, thinly sliced
2 tablespoons chopped mint
3 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the olive oil over the slices of eggplant and toss to coat. Grill the eggplants until tender and grill marks appear, about 3 to 4 minutes per side.
  • Place the eggplants side-by-side on a serving platter. Sprinkle with the pine nuts, goat cheese, basil, and mint. Drizzle with extra-virgin olive oil, balsamic vinegar, salt, and pepper.
  • Cook's note: Plating the eggplant salad this way allowed the cheese to stay bright white. The salt and pepper showed up on it. The herbs remained green and fluffy. The grill marks on the eggplant were distinct.

BAREFOOT CONTESSA'S ROASTED PEPPER AND GOAT CHEESE SANDWICHES

I had seen Ina Garten prepare this sandwich on one of her Barefoot Contessa episodes. It looked to die for, and when I finally had time to try it, my suspicions were confirmed. It is so flavorful and just down right yummy. She also prepared a Fresh Pea soup to pair with it, I can't wait to try that, too.

4 large red bell peppers, may substitute yellow
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 garlic cloves, minced
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
2 tablespoons capers, drained
1 large ciabatta, halved horizontally
1 (11 ounce) garlic and herb goat cheese, at room temperature
8 -10 large basil leaves
3 slices red onions, very thin
kosher salt
fresh ground black pepper

Steps:

  • Preheat the oven to 500 degrees F.
  • Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.
  • Meanwhile, combine the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl. Set aside.
  • Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil and vinegar mixture over the peppers. Stir in the capers. Cover with plastic wrap and refrigerate for a few hours to allow the flavors to blend.
  • To assemble the sandwiches, spread the bottom half of the loaf with the goat cheese. Add a layer of peppers and then a layer of basil leaves. Separate the onions into rings and spread out on top. Sprinkle with salt and pepper. Cover with the top half of the ciabatta and cut into individual servings.

2 slices olive bread or any rustic country bread
3 1/4-inch grilled eggplant slices*
1/2 large roasted red pepper**
1 teaspoon lightly salted butter

Steps:

  • 1. Spread goat cheese on one side of bread.
  • 2. Place eggplant and pepper on the other piece of bread.
  • 3. Close sandwich.
  • 4. Spread evenly 1/2 teaspoon of butter onto each slice of bread.
  • 5. Grill over moderate heat for approximately 3-4 minutes.
  • *To grill eggplant:
  • Slice thinly, brush with olive oil, sprinkle with salt and pepper to taste, and grill or broil for 4-5 minutes.
  • **To roast peppers (also available in jars):
  • Hold peppers over a flame until blackened, place peppers in a paper bag, peel and discard skins when cooled.
