Easy Goat Cheese Appetizer image

Be ready when friends stop by -- or make a family dinner more special -- with this warm, hearty appetizer made from grocery store ingredients that keep for weeks.

8 to 12 ounces marinated goat cheese or feta, broken into large chunks
2 to 3 teaspoons olive oil
4 to 5 sprigs fresh thyme
1/2 teaspoon whole pink peppercorns
Sliced baguette or crackers, for serving

Steps:

  • Place cheese in a small ovenproof dish, and bake at 325 degrees for 15 to 20 minutes until golden brown. Remove the dish from the oven, drizzle with olive oil, and garnish with fresh thyme (if desired) and whole pink peppercorns. Serve with sliced baguette or crackers.

1 baguette
24 ounces goat cheese (more or less to taste)
3 tart apples
4 tablespoons heavy cream
pepper
herbes de provence

Steps:

  • Cut the baguette in half lengthwise.
  • Drizzle the cream onto both halves of the bread.
  • Peel, core and thinly slice the apple.
  • Spread the apple slices on the bread.
  • Spread the goat cheese over the apple slices. (Depending on the age of the goat cheese, you may have better luck putting the cheese on in slices.).
  • Sprinkle with pepper and Herbes de Provence.
  • Bake in 350 oven for about 10 minutes, then broil until cheese browns slightly.
  • Cut each half into about 12 pieces. (These can be assembled individually on precut bread slices if you prefer.).

This has it all...tons of flavor with pine nuts, fresh basil, sun dried tomatoes how can you go wrong? **Watch the pine nuts closely while toasting they burn really quick** servings and time are a complete guess but rest assured this is simple! 1 (16 ounce) jar roasted red peppers, drained
1 (8 ounce) package goat cheese, room temperature
1 garlic clove, minced
3 tablespoons olive oil
3 tablespoons pine nuts, toasted
1/2 teaspoon red pepper flakes
1/4 teaspoon pepper
5 slices garlic bread

Steps:

  • Swirl half of the olive oil into an attractive baking dish - 9x13 or so.
  • Combine the softened Goat Cheese with the garlic, stuff gently into the Red Peppers and place them in a single layer into the baking dish. Sprinkle with the pine nuts, red pepper flakes and pepper, drizzle with remaining olive oil.
  • Cut garlic bread (I use the frozen box of garlic toast) into "fingers" and kind of place them on their sides in the dish, so they will brown.
  • Bake about 350 degrees for about 15 minutes.

1/4 cup walnut roasted and chopped

Steps:

  • Line a small mixing bowl with 2 pieces of plastic wrap crosswise overlapping bowl by 3 inches on each side Mix goat and cream cheese together in a another bowl in food processor add garlic, spinach, basil, chop with off and on until chopped. With processor running slowly add slowly add oil. Open processor and add Parmesan cheese use off / on until blended. spread 1/3 of goat and cream cheese to bowl lined with plastic wrap add 1/2 of pesto mixture and spread on top of cheese in plastic lined bowl spread 1/2 of sun dried to tomatoes on top of pesto mixture in plastic lined bowl spread 1/2 of roasted walnut on top of pesto and sun dried tomato mixture in plastic lined bowl spread 1/3 of goat and cream cheese mixture on top of goat cheese, tomato and nut mixture in the bowl lined with plastic wrap repeat adding the pesto, sun dried tomato and nuts to plastic lined bowl cover with balance of cheese mixture. fold over excess plastic wrap and refrigerate for 4 hours Remove fro refrigerator mixture from bowl unwrap and place on plate let the mixture return to room temperature prior to serving

12 ounces log of fresh mild goat cheese
1 (8 ounce) package cream cheese, softened at room temperature
6 sun-dried tomatoes, dry and not packed in oil
1/4 cup dry white wine
1/2 teaspoon dry basil
1 teaspoon minced garlic
1/4 teaspoon salt
1 dash white pepper
8 frozen puff pastry shells

Steps:

  • Soak the sundried tomatoes in the wine for 30 minutes or overnight for best results.
  • Mix the goat and cream cheeses together in a bowl, blending well.
  • Remove the sundried tomatoes, chop them fine, and discard the wine. Add to cheese mixture.
  • Add all other ingredients.
  • Mix very well until evenly blended.
  • Cover and refrigerate until ready to use.
  • To serve in a puff pastry shell, bake the shells according to the package instructions. Cool them to room temperature.
  • Place a scoop of the herbed goat cheese mix into each pastry shell.
  • Return the shells to the oven and bake at 350°F for 10 minutes to just warm them.
  • Best served warm with a knife to spread the herbed cheese onto pieces of the pastry.

1 package water crackers

4 ripe figs
2 tablespoons honey
4 ounces arugula (rocket leaves)
4 tablespoons olive oil
4 ounces soft mild goat cheese
1 tablespoon aged balsamic vinegar
4 slices of Prosciutto (Parma ham)

Steps:

  • Wash the figs, cut off the stem and cut a deep X on the stem end. Warm the honey and drizzle a 1/2 tablespoon into each fig. Place the figs on a grill pan and grill under the broiler for 2 minutes, or until partly cooked. Allow to cool to room temperature then stuff each fig with 1 ounce of goat cheese. Turn each fig upside down onto the centre of a Prosciutto slice and the wrap the fig into a little parcel with the ham. Set these aside for a moment and toss the washed and dried arugula leaves with the vinegar and half of the oil. Heat the remaining oil in a small frypan and fry the fig parcels, starting with the "seam" side, flattening them slightly and then turning only once to fry the other side. Fry about 3-4 minutes each side, or until the ham crisps up and seals together somewhat. Divide the dressed arugula onto four small serving plates and top each with a fig parcel. (You can make less salad and serve two parcels to each person for a more filling appetizer.)
