Yield Makes about 1 cup

Number Of Ingredients 6

three 3.5-ounce logs of mild soft goat cheese such as Montrachet
1 stick (1/2 cup) unsalted butter, softened
1 large garlic clove, minced and mashed to a paste with 1 teaspoon salt
1/4 cup chopped pistachio nuts, toasted lightly and cooled
1/4 cup thinly sliced chives plus chive blades for garnish
1 loaf of French bread, cut into 1/4-inch-thick slices and toasted lightly

Steps:

  • In a bowl with an electric mixer beat together the goat cheese, the butter, the garlic paste, the pistachio nuts, the sliced chives, and salt and pepper to taste until the mixture is combined well, spoon the spread into a serving dish, and chill it, its surface covered with plastic wrap, overnight. The spread may be made 2 days in advance and kept covered and chilled. Garnish the spread with the chive blades and serve it with the toasts.

1 garlic clove
1/4 teaspoon kosher salt
5 ounces goat cheese, room temperature
3 tablespoons unsalted butter, room temperature
1/4 cup pistachio nut, shelled, finely chopped
3 tablespoons fresh chives, finely chopped
1 dash ground pepper, to taste

Steps:

  • In a food processor fitted with a metal blade, process the garlic & salt until garlic is finely minced, then add the goat cheese & butter & process until combined & smooth.
  • Scatter nuts & chives over the top, then add a little ground pepper & pulse 2-3 times until combined.
  • Taste & adjust the seasoning, if necessary, then transfer to a serving bowl & ENJOY!
