CREAMY BUTTERY TUSCAN GNOCCHI RECIPE

Soft, tender pillows of gnocchi enveloped in a full-flavoured cream sauce with sun-dried tomatoes, spinach, garlic and fresh basil. Creamy Tuscan Gnocchi is the ultimate comfort food all cooked in one pan!

2 tablespoons butter, ((or olive oil))
1 brown shallot, (chopped (or 1 small onion))
4 cloves garlic, (minced)
1 pound (500 g) uncooked potato gnocchi, ((the dry packaged gnocchi -- not fresh))
1/2 cup jarred sun dried tomato strips in oil, ((reserve 2 teaspoons of the jarred oil for cooking))
1/2 cup chicken broth
1 1/4 cups heavy cream, ((thickened cream or half andf half))
1 teaspoon dried Italian herbs
salt & pepper, (to taste)
1 1/2 cups fresh baby spinach
1/2 cup fresh grated parmesan cheese
2 tablespoons fresh chopped basil, ((or parsley))

Steps:

  • Heat a large skillet over medium-high heat. Melt the butter and sauté shallots until transparent, about 2 minutes. Sauté garlic until fragrant, about 30 seconds.
  • Add the gnocchi and let sear in the butter for a minute. Add the sun dried tomatoes and reserved oil. Cook for a further minute to release flavours into the gnocchi.
  • Pour in the chicken broth, cream and Italian herbs. Scrape up any browned bits from the bottom of the pan.
  • Season with salt and pepper to taste. Mix everything together and reduce heat to medium. Cover pan with lid and let cook for 5 minutes.
  • Stir in the spinach leaves and cook until wilted, about 1 minute.
  • Stir through parmesan cheese and chopped basil. Let simmer for a further minute or until gnocchi is soft, cooked through and the sauce has thickened to your liking.
  • Season with a little extra salt & pepper, if needed, to suit your taste.
  • Serve immediately.*

2 lbs home-made or bought gnocchi
1 small onion
1 carrot
1 celery rib
2 3/4 lbs canned, peeled tomatoes
1 1/2 ounces butter
salt and pepper
8 ounces cream
1 pinch ground nutmeg
parsley (for sprinkling)

Steps:

  • Chop the onion, carrot and celery.
  • Melt the butter in a large frying pan or pot and add the onion, carrot and celery.
  • Cook until tender, about 10 minutes.
  • Preheat oven to 425 fahrenheit (210 celsius).
  • Add the tomatoes,including the juice,to the pan along with salt and pepper.
  • Simmer for about 30 minutes until thickened.
  • Don't forget to stir occasionally.
  • Put in the blender and puree.
  • Pour it back into the pan, remove from the heat and stir in cream and nutmeg.
  • Season to taste.
  • Place the gnocchi in a large baking dish and cover with the sauce. (Precook the gnocchi to package directions if you are using storebought gnocchi.)
  • Bake in preheated oven until very hot and starting to brown on top.
  • About 7-10 minutes.
  • Serve immediatly, sprinkled with parsley.
  • The sauce can be made a day ahead up until adding the cream.
  • Only add the cream and bake just before serving.
  • This makes a great and very tasty vegetarian dish or side dish.
  • I like to make it with spinach gnocchi.
  • Serve with bread to mop up the delicious sauce.

9 potatoes, scrubbed
Kosher salt
2 pounds all-purpose flour
1 egg yolk
10 ounces Parmesan, grated, plus more for serving
2 tablespoons mixed finely chopped herbs (equal parts basil, chives, and parsley)
2 tablespoons mixed finely chopped herbs (equal parts basil, chives, and parsley)
2 tablespoons butter
1 tablespoon finely chopped shallots
1 tablespoon vodka
1 tablespoon heavy cream
1 cup Gabriel's Tomato Sauce, recipe follows
14 ounces canned or fresh ripe tomatoes
3 tablespoons olive oil
6 fresh basil leaves
Kosher salt and freshly ground black pepper

Steps:

  • To make the gnocchi: place the potatoes in a large pot. Cover with water. Add salt and bring the water to a boil over high heat. Reduce the heat to medium and simmer the potatoes until they are tender, about 35 minutes. Drain the potatoes. When they are just cool enough to handle, peel them then pass them through a food mill.
  • In a large bowl, mix the flour with the egg yolk, cheese and warm potatoes. Work the mixture until it becomes a smooth dough, then incorporate the herbs. Form the dough into 2 balls.
  • On a lightly floured work surface, roll each ball of dough into a 'rope' about 1/2-inch thick. Cut the 'ropes' into 3/4-inch pieces. Arrange the gnocchi on a lightly floured baking sheet. (You can freeze the gnocchi at this point and use straight from freezer.)
  • Shortly before serving, bring a large pot of salted water to boil over high heat. Reduce the heat so the water maintains an active simmer. Working in small batches, drop gnocchi into the water. Cook the gnocchi until they float 3 to 4 minutes, then remove with a slotted spoon and drain fully in a colander.
  • To make the sauce: Melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until they soften. Add the vodka, cream, and tomato sauce, and simmer until the flavors blend, 2 to 3 minutes.
  • Immediately before serving, add the gnocchi to the sauce and heat, stirring gently to coat. Spoon the gnocchi into warm bowls and serve.
  • Puree whole tomatoes without their liquid in a food mill. Heat the oil in a large deep skillet over medium heat. Add the pureed tomatoes. Add the basil, season with salt and pepper and simmer, stirring frequently until the sauce is concentrated, about 25 minutes. Remove the basil and refrigerate or freeze until ready to use.

1/2 teaspoon salt
GNOCCHI:
1 carton (15 ounces) whole-milk ricotta cheese
2 eggs, lightly beaten
1 cup grated Parmesan cheese
2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon pepper
2 to 2-1/2 cups all-purpose flour
1/2 pound fresh mozzarella cheese, cubed
Minced fresh basil, optional

Steps:

  • In a large saucepan, heat oil over medium heat. Add garlic; cook and stir 1 minute. Stir in tomatoes, tomato paste, water, sugar and salt; bring to a boil. Reduce heat; simmer, uncovered, 1 to 1-1/2 hours or until flavors are blended, stirring occasionally., Meanwhile, for gnocchi, in a large bowl, mix ricotta cheese, eggs, Parmesan cheese, garlic powder, salt and pepper until blended. Stir in enough flour to form a soft dough that holds its shape., In a Dutch oven, bring 4 quarts water to a boil. Divide dough into eight portions. Roll each into a 1/2-in.-thick rope; cut crosswise into 3/4-in. pieces., Cook gnocchi in batches in boiling water 2-3 minutes or until they float; remove with a slotted spoon. Drain well. Add gnocchi to sauce; gently stir in mozzarella cheese. If desired, sprinkle with basil.

3/4 ounce dried porcini mushrooms
1 cup boiling water
2 tablespoons (1/4 stick) butter
1/3 cup whipping cream
1 1/4 cups purchased marinara sauce
1 pound purchased potato gnocchi or 8 ounces dried gnocchi pasta
1/2 cup freshly grated Parmesan cheese

Steps:

  • Place porcini in medium bowl. Pour 1 cup boiling water over. Let stand until porcini are soft, about 30 minutes. Remove porcini from water, reserving soaking liquid. Finely chop porcini.
  • Melt butter in heavy medium saucepan over medium-high heat. Add porcini and sauté 3 minutes. Add cream and 3/4 cup soaking liquid, leaving any sediment behind in bowl. Simmer until liquid is reduced to 3/4 cup, stirring occasionally, about 4 minutes. Stir in marinara sauce; bring to simmer. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill. Bring to simmer before using.)
  • Cook gnocchi in large pot of boiling salted water until tender but still firm to bite. Drain.
  • Add gnocchi to sauce and toss to coat. Divide among 4 plates. Serve, passing Parmesan separately.

1 tablespoon extra-virgin olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1/4 cup dry white wine
1 can (28 ounces) whole plum tomatoes with juice, crushed by hand
1 can (14 1/2 ounces) tomato sauce
2 sprigs basil
1/4 teaspoon crushed red pepper, flakes
Coarse salt and freshly ground pepper
Basic Potato Gnocchi
Thinly shaved parmesan cheese, for serving

Steps:

  • Heat oil in a large saucepan over medium heat until hot but not smoking. Add onion and garlic; cook, stirring occasionally, until onion is translucent, 5 to 7 minutes. Add wine; cook until most liquid has evaporated. Add tomatoes and juice, tomato sauce, basil, and red pepper flakes. Reduce heat to medium-low; simmer until slightly thick, about 30 minutes. Season with salt and pepper. Remove from heat; cover to keep warm.
  • Bring a large pot water to a boil; add 1 tablespoon salt. Add half of the gnocchi; when they rise to the top (after about 2 minutes), continue to cook until tender, about 15 seconds more. Transfer gnocchi with a slotted spoon to pan with sauce. Repeat process with remaining gnocchi.
  • Reheat gnocchi over low heat; gently toss. Serve with cheese shavings.
