Here's one of those no-fuss gnocchi recipes you can toss together and cook in one skillet. Ideal for a busy weeknight, it's also good with crumbled Italian chicken sausage if you need to please meat lovers. -Julianne Meyers, Hinesville, Georgia

1 tablespoon olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 package (16 ounces) potato gnocchi
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 package (6 ounces) fresh baby spinach
1/4 teaspoon pepper
1/2 cup shredded part-skim mozzarella cheese
3 tablespoons grated Parmesan cheese

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Add gnocchi; cook and stir 5-6 minutes or until golden brown. Stir in beans, tomatoes, spinach and pepper; heat through., Sprinkle with cheeses; cover and remove from heat. Let stand 3-4 minutes or until cheese is melted.

1 pound frozen gnocchi
8 ounces green beans, ends trimmed, cut into large pieces
5 ounces pancetta, cut into 1/2-inch pieces
1 red bell pepper, cut into 1-inch pieces
1 small yellow onion, cut into 1/2-inch pieces
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
6 tablespoons unsalted butter
6 to 8 fresh sage leaves
1/2 cup grated Parmesan
Fresh basil leaves, for garnish

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Add the gnocchi, green beans, pancetta, red pepper and onion to a large bowl and mix to combine. Spread the gnocchi mixture in a single layer on the prepared baking sheet and sprinkle with the salt and pepper. Cut 4 tablespoons of the butter into pieces and top the gnocchi mixture with the butter pieces and sage leaves. Place on the middle rack and bake, stirring halfway through, until the gnocchi are tender, 16 to 18 minutes.
  • Melt the remaining 2 tablespoons butter and keep warm. When the gnocchi are tender, drizzle the mixture with the butter and gently stir to combine with a rubber spatula. Scoop the mixture into a large serving bowl and garnish with the Parmesan and basil.

Steps:

  • Toss one 17.5-ounce package gnocchi with 1 bunch chopped broccoli rabe or kale, 1/2 cup chicken broth, 1/4 cup grated parmesan, 3 tablespoons olive oil, 1 grated garlic clove, and salt and pepper to taste in a 1 1/2-quart flameproof baking dish. Cover and bake at 400 degrees F until the gnocchi is cooked through, 30 minutes. Uncover; sprinkle with more parmesan and broil until golden.

A simple beans and greens with Gnocchi - Pretty close to what I found in a fancy Italian restaurant nearby, except I didn't have exactly what they used on hand... escarole and such... I still like it, though I think I may need to add some more liquids as it's pretty dense.

16 ounces frozen spinach
16 ounces potato gnocchi
1/2 cup butter
1 cup parmesan cheese
12 ounces garbanzo beans
5 garlic cloves
salt and pepper

Steps:

  • Pan fry Spinach in 2 Tablespoons Butter or Margarine until soft.
  • Melt remaining Butter or Margarine over low heat.
  • Mince Garlic into melted Butter or Margarine and allow to simmer.
  • Add Garbanzo Beans to Butter mixture and stir semi-frequently.
  • Boil Gnocchi to desired doneness and drain.
  • Add Gnocchi and Garbanzo Bean mixture to Spinach, stir, and reduce heat to warm.
  • Add Parmasean Cheese, Salt, and Pepper.
  • Stir.
  • Cover for 2 minutes.
