MOLASSES CRINKLES
Thick, chewy cookies with crackled sugary tops. Perfect for an after-school snack with cold milk.

Steps:
- Mix shortening, brown sugar, molasses and egg thoroughly in large bowl. Stir in remaining ingredients except granulated sugar. Cover and refrigerate at least 2 hours.
- Heat oven to 375°F. Grease cookie sheet. Shape dough into 1 1/4-inch balls. Dip tops in granulated sugar. Place balls, sugared sides up, 3 inches apart on cookie sheet. Sprinkle each with 2 or 3 drops of water.
- Bake 10 to 12 minutes or just until set but not hard. Remove from cookie sheet to wire rack.

GLUTEN FREE MOLASSES CRINKLES
This is a gluten free recipe that requires no refrigeration of the dough. It is made from soy and buckwheat flour. Despite the name having wheat in it, there is actually no gluten in buckwheat flour. I adapted this recipe from a traditional molasses crinkle recipe. They are raised version of the gluten free cookies. Hope you enjoy!

Steps:
- Preheat the oven to 350 degrees.
- Mix all the dry ingredients together and remove all lumps.
- Mix in the butter, egg and molasses.
- Shape the dough into balls and drop onto the cookie sheet.
- Bake for around 15 minutes and remove the cookies from the cookie sheet immediately.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Combine all the dry ingredients together: sugar, brown sugar, soy glour, xanthan gum, cinnamon, cloves, ginger. Run through a flour sifter to remove any large pieces of brown sugar.
- Mix well.
- Add in the eggs, softened butter and molasses.
- Mix well, dough should be firm enough to roll into balls.
- Roll dough into spoon size balls and then roll in sugar.
- Put on a baking sheet and bake for 13-15 minutes.
- Remove from baking sheet and enjoy with a glass of milk.
