1/2 cup cornstarch
1/2 cup sugar
1 1/2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon guar gum
1 cup applesauce
1/2 cup canola oil
1/4 cup rice milk
1 egg

Steps:

  • Preheat oven to 400 degrees Farenheit and line 12-cup muffin pan with paper liners.
  • Combine all ingredients in large mixing bowl; mix just until blended.
  • Divide muffin batter evenly in prepared pan.
  • Bake for 12-18 minutes or until toothpick inserted in center of one muffin comes out clean.

2/3 cup unsweetened applesauce
1/2 cup organic brown rice flour
1/4 cup ground flax seeds
1 egg, beaten
1 teaspoon non-aluminum baking powder (Argo, Rumford, Watkins and Red Mill all make aluminum-free)
1 teaspoon baking soda
1/4 cup organic raisins
2 tablespoons honey
1 tablespoon organic sugar
1 teaspoon cinnamon

Steps:

  • Mix everything in a large bowl until smooth.
  • Preheat the oven to 350F and spray a large muffin tin with nonstick spray.
  • Pour the batter into the muffin tin, filling each hole about 1/3 full.
  • Bake at 350F for 12-15 minutes or until a toothpick comes out clean.
