Truly the best black bean chili recipe!! It ultra-quick and easy to make (less than 10 mins prep time), it's naturally gluten-free, vegetarian, vegan (although you can add meat if you'd like), it only calls for 8 main ingredients, and it's SO flavorful and delicious.

Number Of Ingredients 11

1 pound dry black beans, rinsed and picked over
1 medium white onion, peeled and diced
6 cloves garlic, peeled and minced
6-8 cups vegetable stock (or water*)
2 cups (16 ounces) salsa verde, homemade or store-bought
1 (15-ounce) can fire-roasted diced tomatoes
1 (12-ounce) jar roasted red peppers, drained and diced
1 tablespoon ground cumin
2 teaspoons chipotle chili powder**
salt and pepper, to taste
toppings: diced avocado, chopped fresh cilantro, diced red onion, shredded cheese, sliced jalapeños or serranos

Steps:

  • Add black beans (no need to pre-soak), onion, garlic, 6 cups stock, salsa verde, diced tomatoes, roasted red peppers, cumin, chili powder, and a pinch of salt and pepper to the bowl of your Instant Pot. Stir to combine.
  • Close lid securely and set vent to "Sealing".
  • Press "Manual", then press "Pressure" until the light on "High Pressure" lights up, then adjust the +/- buttons until time reads 38 minutes. Cook. Then very carefully, turn the vent to "Venting" for quick release, and wait until all of the steam has released and the valve has dropped. Remove the lid, and give the soup a good stir.
  • Then, if you would like a brothier soup, feel free to add in 1-2 extra cups of vegetable stock. (If not, leave the soup as-is.) Taste, and season with extra salt and pepper as needed.
  • Serve immediately, garnished with lots of your favorite toppings. Or transfer to sealed containers and refrigerate for up to 3 days, or freeze for up to 3 months.

  • Heat 1 tablespoon oil (extra ingredient for stovetop version) in a large stockpot over medium-high heat. Add onion and sauté for 5 minutes, stirring occasionally, until translucent. Add garlic and sauté for 1-2 more minutes, stirring occasionally, until fragrant.
  • Add in beans (pre-soaked overnight***) 6 cups stock, salsa verde, diced tomatoes, roasted red peppers, cumin, chili powder, and a pinch of salt and pepper. Stir to combine.
  • Continue cooking until the soup reaches a simmer. Then reduce heat to medium-low, cover, and cook for 45 minutes, or until the beans are completely tender, stirring occasionally.
  • If you would like a brothier soup, feel free to add in 1-2 extra cups of vegetable stock. (If not, leave the soup as-is.) Taste, and season with extra salt and pepper as needed.

1 tablespoon olive oil
2 large onions, chopped (2 cups)
1/2 cup chopped celery
1/2 cup chopped carrot
1/2 cup chopped red bell pepper
3 cans (15 oz each) Progresso™ black beans, drained, rinsed
2 cups Progresso™ chicken broth (from 32-oz carton)
1 large tomato, chopped (1 cup)
2 tablespoons finely chopped garlic
2 tablespoons honey
2 tablespoons tomato paste
4 teaspoons chili powder or to taste
1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Additional chopped onion
Shredded Monterey Jack cheese
Plain yogurt or sour cream

Steps:

  • 1n 4- to 5-quart Dutch oven, heat sherry and oil over medium heat. Add onions; cook until softened. Add celery, carrot and bell pepper; cook 5 minutes, stirring frequently.
  • Stir in remaining ingredients except garnishes. Heat to boiling; reduce heat to low. Cover; simmer 45 to 60 minutes or until chili is desired thickness. Garnish individual servings with onion, cheese and a dollop of yogurt.

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions, bell peppers, and garlic; sauté until onions soften, about 10 minutes. Mix in chili powder, oregano, cumin, and cayenne; stir 2 minutes. Mix in beans, 1/2 cup reserved bean liquid, and tomato sauce. Bring chili to boil, stirring occasionally. 1 medium white onion (chopped)
1 red bell pepper (diced)
1½ teaspoons sea salt
3 garlic cloves (minced)

3 cups cooked black beans (plus 1 cup of their liquid (amount in 2 cans beans))
1 (14-ounce) can diced fire-roasted tomatoes
1 (4-ounce) can green chiles, no need to drain
1 teaspoon maple syrup

Steps:

  • Heat the oil in a large pot over medium heat. Add the onion, bell pepper, and salt and cook, stirring occasionally, until the onion is translucent, 5 to 8 minutes. Add the garlic and chili powder and cook, stirring, for 30 seconds, until fragrant.

1 lb ground turkey
3 cups yellow onions (chopped (about 3 medium onions))
1 green bell pepper (diced)
1 jalapeno pepper (seeds removed and diced)
1 14-ounce can of fire-roasted tomatoes (with juices)
1 15-ounce can of tomato sauce
2 Tbsp chili powder
1 Tbsp cumin
1 tsp Kosher salt
1/2 tsp cayenne pepper
1/2 tsp regular or smoked paprika
1 14-ounce can of kidney beans (drained and rinsed)
1 14-ounce can of black beans (drained and rinsed)
1 cup gluten-free beer (beef broth or water)
Crunchmaster Crackers
1 cup Mexican-style cheese (shredded)
3 green onions (chopped)
10 grape tomatoes (diced)

Steps:

  • Add 1 tablespoon of avocado oil to a medium Dutch oven (or other heavy bottomed pot) and heat over medium-high heat. When the oil is hot, add the ground turkey and break it apart with a spatula as it cooks. Cook ground meat until browned (no longer pink).
  • Add onions, bell pepper, and jalapeno pepper to the Dutch oven and cook until the onions are softened, about 7-8 minutes, mixing often.
  • Add canned tomatoes, tomato sauce, chili powder, cumin, salt, cayenne pepper, paprika and 1 cup of gluten-free beer, beef broth or water. Mix until well combined, gently scraping the bottom of the pan. Add kidney beans and black beans to the mixture and mix until well combined.
  • Bring chili to a low simmer, then cover and cook chili for 2 hours or longer to allow the flavors to develop.
