Turkey with stuffing is just fine for Thanksgiving, but nothing comes close to a serving of these bourbon-spiked sweet spuds. As a kid, my uncle once told me I couldn't have any because they had "firewater" in them. I'm pretty sure that was so he could have more for himself. Some people like a sticky marshmallow topping, but I think this version is a much better way to add a little spunk to the humble yam.

3 large sweet potatoes
1/2 cup sugar
1/4 cup butter, melted
1/4 cup Bourbon
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
2 large eggs
1 (5-oz.) can evaporated milk

Steps:

  • Preheat oven to 375˚. Place potatoes on baking sheet; bake at 375˚F for 1 hour or until tender. Cook slightly (about 15 minutes).
  • Reduce oven temperature to 350˚F. Peel potatoes, and mash with a potato masher until smooth. Stir in sugar and remaining ingredients until well blended and smooth. Spoon mixture into lightly greased 11- x 7-inch baking dish.
  • Bake at 350˚F for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.

Sweet Potatoes With Bourbon and Brown Sugar image

These silky mashed sweet potatoes are spiced with cloves, nutmeg and a little black pepper, brightened with lemon zest, and spiked with bourbon (or orange juice, if you'd prefer). Puréeing them in a food processor yields the smoothest, airiest texture, but for something a little more rustic, you could mash them by hand. Whichever you choose, these reheat well, either in a microwave or in a pot over low heat.

3 1/2 pounds sweet potatoes, pricked with a fork (10 to 12 sweet potatoes)
6 tablespoons unsalted butter
3 to 4 tablespoons dark brown sugar, or to taste
1 1/2 tablespoons bourbon or orange juice
3/4 teaspoon grated lemon zest
3/4 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon black pepper
Large pinch of ground cloves

Steps:

  • Heat oven to 350 degrees. Wrap potatoes in foil, place on a rimmed baking sheet, and bake until tender, about 1 hour. Let rest until cool enough to handle but still warm, then remove the foil and peel off the skins.
  • Add sweet potatoes to a food processor, along with butter, brown sugar, bourbon or juice, lemon zest, salt, nutmeg, pepper and cloves. Purée until smooth. (Or, for a chunkier texture, mash them by hand.) Taste and add salt, sugar or both if you like. Serve while still warm or reheat before serving.

6 pounds sweet potatoes
1 lemon, zested and juiced
3 tablespoons pure maple syrup
2 tablespoons light brown sugar
3 tablespoons bourbon
8 tablespoons butter, at room temperature
1 1/2 teaspoons salt
1 teaspoon white pepper
Pecan Crumb Topping, optional
1/2 cup all-purpose flour
1/4 cup packed light brown sugar
1 teaspoon salt
1/2 teaspoon ground white pepper
Pinch dried thyme
1/2 cup chopped pecans
5 tablespoons butter, chilled and cut into bits

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the sweet potatoes on a foil lined baking sheet and roast for 45 minutes to 1 hour, until very soft to the touch. Remove from the oven and let cool 20 minutes. When cool enough to handle, peel them by hand and put the flesh in the bowl of a mixer. Using a paddle attachment, mix in the lemon zest and juice, maple syrup and brown sugar.
  • Place the bourbon in a small saucepan and place over high heat. Let it come just to the boil and then tilt the pan slightly towards you to set it aflame*. Add to the potatoes along with the butter. Mix well. Add salt and pepper and transfer to a 13 by 9-inch oven-safe casserole dish. (Recipe can be made to this point up to 2 days before, refrigerated.) Sprinkle topping over potatoes and bake for 20 minutes until the top is golden brown.
  • Alternatively, you may simply sprinkle the top of the casserole with a little bit of brown sugar and 1/2 cup chopped pecans.
  • Mix the flour, brown sugar, salt, pepper, thyme and pecans together in a small bowl. Add the butter and work with your fingers until a crumbly mass forms.

4 tablespoons (1/2 stick) unsalted butter, plus more for the baking dish
4 to 6 sweet potatoes, peeled and sliced about 1/2 inch thick
Coarse salt and freshly ground black pepper
1/2 cup firmly packed light brown sugar
1/2 cup bourbon
2 tablespoons sorghum, cane, or maple syrup

Steps:

  • Preheat the oven to 350°F. Butter an ovenproof gratin or casserole dish. Arrange the sweet potato slices in the prepared dish and season with salt and pepper.
  • In a large saucepan, combine the sugar, 4 tablespoons butter, bourbon, and syrup and bring to a boil over medium-high heat. As soon as the sauce is boiling, pour it over the sweet potatoes. Bake the casserole, basting and turning the potatoes occasionally, until the sweet potatoes are soft and tender, 45 to 60 minutes. Taste and adjust for seasoning with salt and pepper.

This is a great make ahead recipe for those big family get-to-gathers. I often mix them the day before, adding the marshmallows and baking the day of the feast. I believe they are much better if they are refrigerated overnight or as leftovers the next day.

1 cup sugar
1/3 cup Bourbon (I usually splash in a little more)
1/2 cup butter
1/2 teaspoon vanilla extract
2 cups miniature marshmallows

  • Put sweet potatoes in a large sauce pan.
  • Cook over medium heat, stirring frequently until heated through.
  • Preheat oven to 350F
  • Mash sweet potatoes
  • Add sugar, butter, bourbon, vanilla and beat until well blended and smooth.

2 pounds sweet potatoes
1/2 cup heavy cream
1/4 cup bourbon
3 tablespoons light brown sugar
2 tablespoons molasses
1/8 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Place potatoes on a baking sheet lined with parchment paper. Transfer to oven and bake until very tender, about 1 hour and 15 minutes. Let stand until cool enough to handle.
  • Cut open each potato and scoop out flesh into a large bowl; discard skins. Add cream, bourbon, brown sugar, molasses, and salt; mash with a potato masher until desired consistency is reached. BOURBON SWEET-POTATO PURéE WITH BUTTERED PECANS



Bourbon Sweet-Potato Purée with Buttered Pecans image

6 pounds sweet potatoes (about 6 large)
3 tablespoons bourbon
1 stick (1/2 cup) unsalted butter, softened
2 cups pecan halves (about 8 ounces)
1 teaspoon coarse salt
2 tablespoons packed dark brown sugar

Steps:

  • Preheat oven to 425°F.
  • Prick sweet potatoes with a fork and in a baking pan bake in middle of oven until tender, about 1 hour.
  • When just cool enough to handle, peel potatoes and transfer half to a food processor. Add bourbon and 6 tablespoons butter and purée 30 seconds. Transfer purée to a large bowl. Purée remaining potatoes in food processor until completely smooth and transfer to bowl. Stir purée until combined well and season with salt and pepper. Transfer purée to a 2-quart gratin dish or other shallow baking dish. Purée may be made 2 days ahead and chilled, covered. Bring purée to room temperature before proceeding.
  • Reduce temperature to 325° F.
  • In a shallow baking pan spread pecans in one layer and bake in middle of oven until fragrant, about 10 minutes. Toss hot pecans with remaining 2 tablespoons butter and coarse salt. Pecans may be made 2 days ahead and kept in an airtight container at room temperature.
  • Arrange pecans on top of purée and sprinkle with brown sugar. Bake purée in upper third of oven until heated through and pecans are slightly browned, about 30 minutes.
