SOUTHERN PECAN PIE MUFFINS image

These Southern Pecan Pie muffins have only five ingredients and taste just like a pecan pie in muffin form! A sweet treat that everyone loves!

1/2 cup all-purpose flour
1 cup light brown sugar, packed
1 cup chopped pecans
2 large eggs
11 tbsp real butter (about 1 1/3 sticks) (melted)

Steps:

  • Preheat oven to 350F degrees. Place 9 cupcake paper liners into regular muffin pan and spray each of the liners with nonstick cooking spray.
  • In a bowl, combine the flour, brown sugar and pecans until mixed well.
  • In a separate bowl, beat the eggs until foamy and then add melted butter. Stir well.
  • Combine the egg mixture with the flour mixture. Stir until moistened.
  • Spoon the batter into the muffin cups. You will need to fill them to almost full. There is no leavening agent (like baking powder or baking soda) in these so they won't rise up at all.
  • Bake for about 20-25 minutes (it took closer to the 25 minute mark in my oven.) Optional: Around the 15 minute mark, pull them out and sprinkle with chopped pecans or place one pecan half on each one, then put them back into the oven to finish baking. (This is just for aesthetics and not necessary).
  • Bake until a toothpick inserted into the middle comes out clean.

1/2 cup all-purpose flour

1 1/3 sticks butter, melted

Steps:

  • Preheat the oven to 350 degrees F. Place paper liners in 9 muffin cups and spray with nonstick cooking spray.
  • In a large bowl, combine the pecans, sugar and flour. Make a well in the center of the mixture.
  • In a separate bowl, beat the eggs until foamy. Add the melted butter and stir to combine. Pour the egg mixture into the well in the dry ingredients, stirring until moistened.
  • Spoon the batter into the cups, filling each almost full. Bake until a toothpick comes out clean when inserted in a muffin, about 20 minutes.

This is not my recipe, but they are so dang good, I just had to share them! To make it even more indulgent, dish out a scoop of vanilla bean ice cream on one while it is still warm, and drizzle with a little caramel sauce...or even chocolate sauce! Worth every calorie!!!

2/3 c butter, softened
2 large eggs, beaten

  • 1. Preheat oven to 350. Generously grease 12 muffin cups. Grease them well or the muffins will stick. Baker's Joy is recommended.
  • 2. In a medium bowl, stir together brown sugar, flour and pecans.
  • 3. In a separate bowl, beat the butter and eggs together. Stir into dry ingredients just until combined.

1 cup pecans, chopped
1 cup brown sugar, firmly packed
1/2 cup flour
2 large eggs
1/2 cup butter, melted
1/2 cup chocolate chips
3 tablespoons sugar
2 tablespoons brown sugar

Steps:

  • Combine pecans, brown sugar, flour and chocolate chips.
  • Make a well in center of mixture.
  • Beat eggs until foamy.
  • Stir together eggs and butter.
  • Add to dry ingredients.
  • Stir until moistened.
  • Spoon batter into cups, makes 4 large muffins, or 6 smaller muffins.
  • Mix topping ingredients together.
  • Sprinkle on top of each muffin.

I read the label, remembered the ingredients, and instantly came to the computer to start my search. I found this on AmericanProfile.com. I think this is the exact recipe, because I had to add 2 eggs and 2/3 cup melted butter to the mix.

This recipe came from Trisha Yearwood, who married Garth Brooks and wrote a cookbook called Georgia Cooking in an Oklahoma kitchen with a forward by Garth Brooks himself! Gotta try these! :) Be sure to use paper liners in the muffin tins and spray them with nonstick spray; otherwise, they will crumble when you peel off the liners. This recipe also makes great mini muffins; just shorten the baking time by 5 minutes. You might also try using oat flour instead of all purpose for a healthier muffin.
