This is a really easy muffin recipe that was published in our local EPA paper. I haven't tried it yet, but it sounds delicious. I'm sure this could also be made as regular size muffins, just be sure to cook longer.

Number Of Ingredients 6

1 cup light brown sugar, firmly packed
1/2 cup flour
1 cup chopped pecans
2 eggs, beaten
2/3 cup melted butter
1 teaspoon vanilla

Steps:

  • Mix dry ingredients; add wet ingredients.
  • Prepare a mini-muffin pan with cooking spray. Spoon batter into muffin pan.
  • Bake at 350 degrees for 20 minutes.
  • Start testing after about 10 to 15 minutes; if firm to touch and slight brown, remove from oven.
  • Makes 36 muffins.

1 cup pecans, chopped
1 cup brown sugar, firmly packed
1/2 cup flour
2 large eggs
1/2 cup butter, melted

Steps:

  • Combine first 3 ingredients in a large bowl, make a well in center of mixture.
  • Beat eggs until foamy.
  • Stir together eggs and butter; add to dry ingredients stirring until moistened.
  • Place foil-baking cups in muffin pans.
  • Spoon batter into cups to 2/3 full.
  • Bake at 350 degrees for 20-25 minutes or until done.
  • Remove from pans immediately, cool on wire racks.
  • Best served warm.

Nonstick cooking spray
1 cup chopped pecans
1 cup brown sugar, packed
1/2 cup all-purpose flour
2 large eggs
1 1/3 sticks butter, melted

Steps:

  • Preheat the oven to 350 degrees F. Place paper liners in 9 muffin cups and spray with nonstick cooking spray.
  • In a large bowl, combine the pecans, sugar and flour. Make a well in the center of the mixture.
  • In a separate bowl, beat the eggs until foamy. Add the melted butter and stir to combine. Pour the egg mixture into the well in the dry ingredients, stirring until moistened.
  • Spoon the batter into the cups, filling each almost full. Bake until a toothpick comes out clean when inserted in a muffin, about 20 minutes.

½ cup all-purpose flour
1 cup chopped pecans
⅔ cup butter, softened
2 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 18 mini muffin cups or line with paper muffin liners.
  • In a medium bowl, stir together brown sugar, flour and pecans. In a separate bowl beat the butter and eggs together until smooth, stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin cups. Cups should be about 2/3 full.
  • Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Cool on wire racks when done.

This recipe came from Trisha Yearwood, who married Garth Brooks and wrote a cookbook called Georgia Cooking in an Oklahoma kitchen with a forward by Garth Brooks himself! Gotta try these! :) Be sure to use paper liners in the muffin tins and spray them with nonstick spray; otherwise, they will crumble when you peel off the liners. This recipe also makes great mini muffins; just shorten the baking time by 5 minutes. You might also try using oat flour instead of all purpose for a healthier muffin.

  • Place paper(or foil) liners in 9 muffin cups and spray with nonstick spray.
  • In a large bowl, combine the pecans, sugar, flour, and wheat germ(if using). Make a well in the center of the mixture.

I read the label, remembered the ingredients, and instantly came to the computer to start my search. I found this on AmericanProfile.com. I think this is the exact recipe, because I had to add 2 eggs and 2/3 cup melted butter to the mix.
