This is an excellent recipe for an often overlooked and unpopular root vegetable. Even folks who dislike Rutabagas love this delicious dish. Added bonus is this is a great way to introduce this vegetable to kids. A Southern staple with a sweet Asian twist!

¼ cup butter
6 tablespoons brown sugar, or to taste
1 cup hot water
6 tablespoons soy sauce
1 large rutabaga, peeled and cubed

Steps:

  • Melt butter in a large skillet over low heat; add brown sugar and cook and stir until brown sugar has dissolved. Stir water and soy sauce into butter mixture, increase heat to medium-high, and bring mixture to a boil. Stir in chopped rutabaga and return to boil.
  • Reduce heat to low and simmer, uncovered, stirring frequently, until liquid is absorbed, about 45 minutes.

1/4 cup maple syrup
1 1/2 teaspoons butter, melted
7 cups cubed peeled rutabagas, 1/2 inch cubes (about 2 medium)
1/4 teaspoon salt
1/4 teaspoon black pepper
cooking spray

Steps:

  • Preheat oven to 425°.
  • Combine syrup and butter in a large bowl, stirring with a whisk. Add rutabaga, salt, and pepper; toss to coat.
  • Spread rutabaga mixture on a jelly roll pan coated with cooking spray.
  • Bake at 425° for 35 minutes or until rutabaga is tender, stirring occasionally.

1 large rutabaga, peeled and cut not 1/2 inch dice (about 2 pounds)
2 tablespoons unsalted butter
2 tablespoons dark brown sugar
1 tablespoon cider vinegar
1 teaspoon salt

Steps:

  • Put rutabaga in a large skillet and add enough d]salted water to cover. Bring to a simmer and cook for 10 minutes, or until slightly tender.
  • Drain off water and add the brown sugar, vinegar, and salt. Bring to a boil, reduce heat to low, and simmer for 12 minutes, or until the rutabaga is very tender and the butter starts to brown. Serve warm.

MASHED RUTABAGA AND YUKON GOLD POTATOES



Mashed Rutabaga and Yukon Gold Potatoes image

1 large rutabaga, waxy skin removed and cut into 1-inch chunks
Kosher salt
4 large Yukon gold potatoes, cut into 1-inch chunks
3/4 cup heavy cream
1 stick cold butter, cut into 5 to 6 pats

Steps:

  • Toss the rutabagas into a large pot and cover generously with water. Season the water generously with salt.
  • Bring the water to a boil, reduce to a simmer and simmer for 45 minutes. Toss in the potatoes and simmer until the potatoes are fork tender, another 20 minutes.
  • Strain the rutabagas and potatoes from the water and pass through a food mill into a large bowl.
  • In a small saucepot, bring the cream to a boil and turn off.
  • Take 1 to 2 pats of butter and a splash of hot cream and whip them into the potato mixture. Continue this until all the butter and cream are incorporated. Taste and re-season with salt if needed. Serve immediately or keep warm in a low oven.

Slow cooked root veggies glazed with honey and olive oil turn into a wonderful side dish.

6 medium carrots, cut diagonally into 1-inch pieces
4 medium parsnips, peeled, cut diagonally into 1-inch pieces
2 medium red onions, cut into thin wedges
2 medium dark-orange sweet potatoes (about 1 lb), peeled, cut into 1-inch pieces (3 cups)
3 tablespoons honey
1 tablespoon olive oil
5 teaspoons chopped fresh thyme leaves
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon white balsamic vinegar

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In slow cooker, mix carrots, parsnips and onions. Top with sweet potatoes.
  • In small bowl, mix honey, oil, 2 teaspoons of the thyme, the salt and pepper. Pour over vegetables; stir to coat.
  • Cover; cook on Low heat setting 4 to 5 hours or until vegetables are tender. Just before serving, add vinegar; stir gently. Sprinkle with the remaining 3 teaspoons thyme.

4 cups peeled diced rutabagas
12 dried apricots
2 tablespoons butter
2 tablespoons dark brown sugar

Steps:

  • Cook the prepared rutabaga in a small amount of water until just tender.
  • Drain well.
  • Meanwhile, snip the apricots into quarters and soak them in a little boiling water.
  • Add the drained apricots, the butter and the dark brown sugar to the drained rutabaga and cook over low heat until glazed, stirring frequently; about 3 or 4 minutes.
