CINNAMON SWIRL QUICK BREAD image

Swirl
1/3 cup granulated sugar
1/2 cup finely chopped Walnuts, toasted
3 teaspoons ground cinnamon
Dough
1 cup granulated sugar
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 cup buttermilk
1 teaspoon vanilla
1/3 cup cooking oil
You can replace the buttermilk with regular milk, but due to the loss of acidity the soda should be replaced with an additional 1 full teaspoon of baking powder.

Steps:

  • Heat oven to 350 degrees. Grease a loaf pan. Combine ingredients for swirl in small bowl and set aside. Combine sugar, flour, baking powder, baking soda and salt in large bowl. In another bowl mix the rest of the wet ingredients. Combine the wet into the dry ingredients. Pour 1/2 of batter in loaf pan. Sprinkle on swirl ingredients. Top with remaining batter. Bake for 40-50 minutes. Cool in pan for 10 minutes. Remove to wire rack to cool completely.
