This is probably one of the best pork tenderloin dishes I have ever had!!! To keep the meat moist and tender, the tenderloins are first subjected to a salt bath or brining...then finished off on the barbecue with a sweet and spicy hoisin glaze.

2 pork tenderloin, trimmed
salt and pepper
vegetable oil
1 teaspoon vegetable oil
3 garlic, minced
1 teaspoon ginger, grated
1 teaspoon chili pepper flakes
1/2 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar

Steps:

  • Trim the tenderloin of all of the fat and silverskin.
  • Lay tenderloins on cutting board, flat side (side opposite where silverskin was) up. Using a dinner fork, scrape flat side lengthwise from end to end 5 times, until surface is completely scored. Repeat with second tenderloin.
  • Disolve 3 T salt in 1-1/2 quarts cold water in a large container. Submerge tenderloins in brine and let stand at room temperature for 1 hour.
  • Remove tenderloins from brine and pat completely dry with paper towels. Lay 1 tenderloin, scraped side up, on cutting board and lay second tenderloin, scraped side down, on top so that thick ends of 1 tenderloin matches up with thin end of the other. Tie the tenderloins together with kitchen twine, spacing evenly apart.
  • Brush roast with vegetable oil and season with pepper. Transfer 1/3 cup glaze to bowl for grilling, reserving remaining glaze for serving.
  • Clean and oil cooking grate. Heat all the burners to high, cover, and heat grill until hot, about 15 minutes. leave primary burner on high and turn off other burners.
  • Place roast on cooler side of grill, cover and cook until meat registers 115 degrees, 22 - 28 minutes, flipping and rotating halfway through cooking.
  • Slide roast to hotter part of grill and cook until lightly browned on all sides, 4 - 6 minutes. Brush top of roast with amount 1 tablespoon glaze and grill, glaze side down, until glaze begins to char, 2 - 3 minutes; repeat glazing and grilling with remaining 3 sides of roast, until meat registers 140 degrees.
  • Transfer roast to carving board, tent loosley with foil, and let rest for 10 minutes. Carefully remove twine and slice roast into 1/2" thick slices. Serve with remaining glaze.
  • Glaze: Heat oil is small saucepan over medium heat until shimmering. Add garlic, ginger, and pepper flakes; cook until fragrant, about 30 minutes. Whisk in hoisin and soy sauce until smooth. Remove pan from heat and stir in vinegar. Sauce can be done in advance.

2 tablespoons Dijon mustard
1 tablespoon honey
1 tablespoon orange juice
1/2 teaspoon grated orange zest
1/4 teaspoon cinnamon
1/8 teaspoon allspice
1 lb pork tenderloin, trimmed of all visible fat

Steps:

  • Combine in a small bowl Dijon mustard, honey, orange juice, zest, cinnamon and allspice.
  • Set aside.
  • Place the pork tenderloin on a rack in a shallow roasting pan.
  • Roast in a preheated 325 F oven for 30-45 minutes, or until pork reaches an internal temperature of 160 F.
  • During the last 10 minutes of cooking, brush the pork occasionally with the mustard mixture.
  • Remove pork from oven.
  • Let stand for 5 minutes before cutting crosswise into slices and serving.

1 16-20 oz. Pork Tenderloin
Marinade:
1 Tablespoon Fresh Ginger, grated
3-4 Cloves Fresh Garlic,
crushed
1 16 oz. bottle lite soy sauce
Glaze:
1 Tablespoon unsalted butter
1 Pint of dark, spiced jamaican rum
1 10 oz. jar apricot preserves
1 14 oz. can apricot halves, drained
To cook:
1 twig fresh Rosemary leaves
1 Teaspoon coarsely crushed coriander seeds

Steps:

  • Marinate pork overnight (or about 8 hours) in ginger, soy, and garlic mixture (make sure entire tenderloin is covered). Preheat oven to 450 degrees fahrenheit. Remove pork from marinade and wipe away all clinging garlic and ginger particles and place in a 2 qt. roasting pan. Set aside. In a 12 inch skillet over medium heat, melt butter and then add a little rum, all the preserves, and all the apricot halves. allow to lightly boil for a minute or two and reduce heat and simmer, adding splashes of rum as needed, for about ten minutes, or until apricot halves are mushy-but-solid and liquid lightly clings to fork. Pour glaze mixture over pork and arrange cooked apricot halves on top. Pour the rest of the rum (if any is left) in as well. Don't worry, the alcohol will cook off. Sprinkle rosemary and coriander over roast and cover. Roast, covered, at 450 for about 20 minutes or until inside temp of tenderloin reaches 160 degrees. Let sit, covered, about 5 minutes. Cut into medallions and serve. Just a minor oversight on my part: as the pork cooks, the soy will cook out into the pan, turning the "glaze" into more of a juice. It's still just as good, but if you want more of a traditional glaze, add the contents of the skillet to the individual medallions as you serve them.

6 tablespoons soy sauce
6 tablespoons light brown sugar
2 tablespoons peeled and minced fresh ginger (I used my microplane for this)
5 teaspoons Asian sesame oil
5 garlic cloves, finely minced
1/2 teaspoon crushed hot red pepper flakes
1 pork tenderloin, trimmed of excess fat and any thin silver skin
2 scallion (green onion), white and green parts, thinly sliced for garnish

Steps:

  • Notes: I doubled the recipe for the marinade/sauce, because I wanted more leftover to glaze, and only used one pork tenderloin, since I am cooking for 2. (I found that I didn't have as much marinade/glaze as I wanted, until I adapted the recipe.) Feel free to use 2 pork tenderloins, which is how they are usually sold. I only use one pork tenderloin and wanted plenty of extra sauce! Preheat the oven to 400°F. Line a small roasting pan (or use a 9X13-inch baking dish) with foil and lightly oil the foil. This is important because the glaze has a high sugar content and will scorch during roasting. Note: Instead of using a roasting pan, lined with foil, I used a non-stick oven-proof skillet. This made for very easy cleanup. Meanwhile, combine 4 tablespoons soy sauce, 4 tablespoons brown sugar, 1 tablespoon ginger, 3 teaspoons sesame oil, 3 minced garlic cloves, and 1/4 teaspoon red pepper in a self-sealing plastic bag and mix to dissolve the sugar. Add the pork tenderloin and close the bag. Toss the meat in the bag to coat it with the marinade. Marinade for at least 30 minutes or up to 3 hours. Remove the pork tenderloins from the marinade and place in the roasting pan. Drizzle about half of the marinade over the pork. Discard the remaining marinade. Roast for 15 minutes. Baste the pork with the marinade in the roasting pan. Continue roasting until an instant-read thermometer reads 150-155, about 25 minutes more. (The marinade will eventually thicken and scorch, but the foil will protect the pan, so don't worry. (Because I used an oven-proof non-stick skillet, I wasn't the least bit worried. Transfer the pork to a cutting board and let stand for 5 minutes. While the pork is resting, bring the remaining 2 tablespoon soy sauce, 2 tablespoons brown sugar, 1 tablespoon ginger, 1 teaspoon sesame oil, 2 minced garlic cloves and 1/4 teaspoon red pepper to a boil over high heat in a small saucepan. Cut the roast pork crosswise on a slight diagonal into thin slices and arrange the overlapping slices on a platter. Drizzle the hot marinade over the pork, sprinkle with the scallion, and serve immediately.
