This delicious cake is one of my own invention. It's been a huge hit among family and friends and even inspired fierce bidding at a local charity auction! -Greta Kirby, Carthage, Tennessee

1 package white or yellow cake mix, regular size
1-1/4 cups unsweetened pineapple juice
1/2 cup canola oil
3 large eggs, room temperature
FILLING:
3/4 cup sugar
4 teaspoons all-purpose flour
2 large egg yolks
1/4 cup butter, melted
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/4 cup chopped macadamia nuts, toasted
FROSTING:
1/2 cup butter, softened
4 cups confectioners' sugar
2 to 4 tablespoons 2% milk
Additional chopped macadamia nuts, optional

Steps:

  • Preheat oven to 350°. Combine cake mix, pineapple juice, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into three greased and floured 8-in. round baking pans., Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely., For filling, combine sugar and flour in a large saucepan. Whisk in egg yolks, butter and pineapple until blended. Bring to a boil over medium heat; cook and stir until thickened and bubbly, about 2 minutes. Remove from heat; cool to room temperature. Reserve 1/3 cup pineapple mixture for frosting; gently stir nuts into remaining pineapple mixture., Place one cake layer on a serving plate; spread with half of the filling. Repeat. Top with remaining cake layer., For frosting, cream butter, confectioners' sugar, reserved pineapple mixture and enough milk to reach a spreading consistency. Spread over top and sides of cake. If desired, chop and toast additional nuts; sprinkle on top and around bottom of cake.

1 lime, zest and juice
2 tablespoons honey, divided
1/4 teaspoon ground cinnamon, divided
1/8 teaspoon ground nutmeg
2 teaspoons powdered sugar, sifted
1 cup low-fat creme fraiche
2 teaspoons butter
1 fresh pineapple, cut into 8 long wedges, skin and core removed

Steps:

  • Mix the lime juice and half the lime zest with 1 tablespoon honey, 1/8 teaspoon cinnamon and nutmeg. Set this sauce aside.
  • Stir the powdered sugar and 1/8 teaspoon cinnamon into the creme fraiche.
  • Heat the butter and remaining honey in a non-stick frying pan until melted. Add the pineapple and cook over a high heat for 8 minutes, turning regularly until caramelized.
  • Pour in the spiced lime sauce and bubble for a few seconds, tossing the pineapple to glaze in the sauce.
  • Place 2 wedges of pineapple on each plate, sprinkle with the remaining lime zest and accompanied by a dollop of the cinnamon creme fraiche. Serve immediately.

I used Gale Gand's recipe from "Sweet Dreams" episode Sweets By Mail at Foodnetwork. I have tweaked it, to suit our needs for a particular occasion. We served these at a wedding reception that we had for a couple of staff members who never had a ceremony, they only went to the courthouse. This happened about 5 years ago but I forgot about these little tidbits! Used these with my Cranberry-Chutney Brie Appetizers and they turned out great!

Number Of Ingredients 6

4 cups whole macadamia nuts
1/4 cup honey
2 teaspoons cinnamon
1 orange, zest of, grated
3 -4 tablespoons pineapple preserves
1 pinch salt

Steps:

  • Preheat oven to 375 degrees.
  • Toss all the ingredients together.
  • Transfer macadamia nuts to a greased baking sheet.
  • Bake for 25 to 30 minutes until lightly toasted, stirring occasionally.
  • Allow to cool.
  • Store in an airtight container.

1 cup all-purpose flour
1/2 cup butter, softened
3 tablespoons powdered sugar
1 (8 ounce) can crushed pineapple
2 eggs
1 cup sugar
3/4 cup chopped macadamia nuts
1/2 cup flaked coconut
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon rum extract
1/2 cup powdered sugar
2 -3 teaspoons reserved pineapple juice

Steps:

  • Heat oven to 350*. Grease bottom and sides of 8x8 or 9x9 inch square pan with shortening.
  • Drain pineapple well, reserving 3 teaspoons juice for Pineapple Glaze.
  • Mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press in pan. Bake 10 minutes.
  • Beat eggs in medium bowl with wire whisk until blended. Stir in pineapple and remaining ingredients except Pineapple Glaze. Spread over partially baked crust.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 1 hour.
  • Make Pineapple Glaze by mixing the powdered sugar and reserved pineapple juice until smooth and thin enough to drizzle. Drizzle glaze over bars.
