WW ROASTED BRUSSELS SPROUTS WITH CRISPY PANCETTA image

Number Of Ingredients 9

1 tbsp. olive oil
1/4 lb (115 g) pancetta, diced into 1/2 " pieces
1/3 cup shallots, chopped finely
red chili flakes to taste
2 lbs Brussels sprouts, trimmed and halved
1 lemon, juice and zest of
1/2 tsp salt (I used coarse salt)
1/2 tsp pepper
1 tsp fresh thyme, chopped

Steps:

  • Preheat oven to 350 degrees Heat olive oil in a large pan over medium heat. add pancetta and sauté for about 5 minutes until most of the fat is rendered and pancetta is nicely browned. Add the shallots and the chili flakes and sauté until browned, about 3 minutes. You may need to add more olive oil. Add Brussels sprouts, lemon juice and zest and toss everything together and let cook on medium high heat without stirring until slightly browned 8 to 10 minutes. Place in a pan and drizzle with more olive oil if they seem dry. Place pan in oven and roast 15 to 20 minutes. Sprinkle with salt and pepper. Remove from oven and season with fresh thyme.
