MINI BBQ CHEDDAR MEATLOAVES
Mini BBQ Cheddar Meatloaves are flavored with melty cheddar cheese and sweet BBQ sauce. This tasty twist on classic meatloaf is a hit with my family!

Steps:
- Cut onion in half then each half into thin slices. Melt butter in a large skillet or pot over medium heat then add onion and a dash of salt. Cook, stirring every couple of minutes, until onions are golden brown and caramelized, about 20 minutes. Turn heat down if onions start to burn. Set aside to cool slightly - can be made ahead of time.
- Preheat oven to 425 degrees. In a large bowl combine ground beef, egg, Worcestershire sauce, 2 Tablespoons BBQ sauce, bread crumbs, salt, pepper, cheese cubes, and caramelized onions, then mix until just combined. Divide mixture into 4 equal-sized portions then form into loaves and place on a foil-lined, non-stick-sprayed baking sheet. Spread 1 Tablespoon BBQ sauce over each loaf then bake for 20 minutes, or until no longer pink in the center, and then serve.
MINI CHEDDAR MEATLOAFS WITH BALSAMIC KETCHUP GLAZE
These are really cute and tasty. I have done this with mini cupcake pan for little appetizers. If you can't find the Heinz balsamic vinegar ketchup just use regular ketchup and a little balsamic vinegar.

- Mix first eight ingredients together. Place in greased muffin pan.
- Combine the ketchup, brown sugar, and mustard. Pour over top each loaf.
- Bake 350 degrees for 45 minutes.
GLAZED MINI CHEDDAR MEATLOAFS
These are cute using a mini meatloaf pan. They are fun to serve at parties like appetizers. Everyone is surprised to get their own little meatloaf. You could of course just make one big meatloaf but would have to adjust the baking time. These are good and cheesy and stay together well.

- 1. Preheat oven 350 degrees. Spray a mini meatloaf pan with spray.
- 2. Mix ingredients together for meatloafs. Adjust the moist by using more or less milk. Spoon the mixture into the 8 mini meatloafs pan leaving enough head room for glaze.
- 3. Combine the ingredients for glaze together and spoon over top each meatloaf.
- 4. Bake 45 minutes.
