GINGERSNAP STEW

This is amazing! I love the flavors together. You have the sweetness of the celery & carrots, the smoky sausage (I use turkey sausage) and subtle heat from the chili powder... the gingersnap flavor is subtle & wonderful as well. My mom says this is very much like a German dish (Sauerbraten) she had growing up but with a twist. Serve with a crusty slice of rye bread and ENJOY! Man I love this! Number Of Ingredients 11

3 carrots, peeled and cut into 3/4-inch pieces
3 medium celery ribs, cut into 1/2-inch pieces
1/4 cup onion, chopped*I use more
2 teaspoons cooking oil, cooking spray
8 -12 ounces smoked sausage, cooked, cut into 1-inch pieces, smoked turkey sausage works
1 1/2 cups water
15 ounces kidney beans, rinsed & drained
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
14 ounces tomatoes with juice, plain
6 gingersnap cookies, crushed, about 1/3 cup

Steps:

  • In a large saucepan cook carrots, celery and onion in oil over medium heat, about 5 minutes or until onion is nearly tender. Remove vegetables from the pan and set aside.
  • Add sausage to pan, cook over medium heat until lightly browned. Return vegetables to pan.
  • Add water, beans, chili powder and worchestershire sauce. Bring to boiling and reduce heat. Simmer for 20 minutes or until vegetables are tender.
  • Stir in undrained tomatoes. Add crushed gingersnaps. Cook and stir about 5 minutes or until mixture thickens and bubbles. Ladle into bowls.
  • Notes:
  • I add more onions, carrots, low fat smoked sausage, kidney beans than the original recipe calls for. these can be reduced in amount if you desire.
  • I prefer using the dark red kidney beans because they really are *pretty* and colorful in this dish.
  • I have also used whole baby carrots cuz I'm lazy.
  • The chili powder adds a subtle touch of *heat*.
  • I tend to simmer on low for up to 2 hours.

This was my mother-in-law's recipe and my husband's favorite. Shorten or lengthen the cooking time for a softer or crisper cookie.

¾ cup margarine
1 cup white sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
1 tablespoon ground ginger
1 teaspoon ground cinnamon
2 teaspoons baking soda
½ teaspoon salt
½ cup white sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the margarine and 1 cup white sugar until smooth. Beat in the egg and molasses until well blended. Combine the flour, ginger, cinnamon, baking soda and salt; stir into the molasses mixture to form a dough. Roll dough into 1 inch balls and roll the balls in the remaining sugar. Place cookies 2 inches apart onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 pound macaroni
1 ½ pounds lean ground beef
1 small yellow onion, diced
1 green bell pepper, diced
1 cup sliced mushrooms
1 (8.75 ounce) can whole kernel corn, drained
1 (8 ounce) can peas, drained
1 (14.5 ounce) can stewed tomatoes, cut in half and drained
1 (14.5 ounce) can crushed tomatoes
4 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
24 fluid ounces water
1 tablespoon chopped garlic
1 tablespoon grated Parmesan cheese
1 tablespoon dried parsley
1 teaspoon salt
1 teaspoon black pepper
⅛ teaspoon white sugar

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, brown the ground beef with the onion, green pepper, and mushrooms; drain. Add corn, peas, stewed tomatoes, crushed tomatoes, tomato paste, tomato sauce, and water. Stir and bring to boil over medium heat. Mix in garlic, parmesan cheese, parsley, salt, pepper, sugar and simmer for 20 to 25 minutes.
  • Mix together cooked macaroni and meat sauce. Serve hot or refrigerate for later.

2 tablespoons medium (sweet-hot) paprika, or mild with 1/4 teaspoon cayenne pepper added
1 tablespoon vegetable oil
1 medium-size onion, peeled and coarsely chopped (about 1 cup)
1 medium-size red bell pepper, cored, seeded and cut into 1/4-inch dice (about 1 cup)
3 1/2 cups rich meat broth (see recipe)
2 1/2 pounds beef chuck steak, cut into 1/4-inch cubes
2 cloves garlic, smashed, peeled and chopped
1 pound potatoes, peeled and cut into 1/4-inch cubes
1/4 teaspoon caraway seeds
1/2 cup tomato puree
1 teaspoon kosher salt, optional

Steps:

  • Combine paprika and oil in a 5-quart casserole with tight-fitting lid. Form into a mound in the center of the dish. Cook, uncovered, at 100 percent power in a 650- to 700-watt oven for 2 minutes.
  • Add onions and peppers and stir to coat with the oil and paprika mixture. Cook, uncovered, at 100 percent power for 3 minutes.
  • Remove from oven and stir in 1 cup of the broth with all remaining ingredients except salt. Cover and cook at 100 percent power for 15 minutes.
  • Remove from oven and uncover. Stir in remaining broth, re-cover and cook at 100 percent power for 10 minutes.
  • Remove from oven and stir in salt, if desired. Serve over noodles.
