CARROT-GINGER DIP

8 ounces carrots (about 2 large), cut into 1 ½ inch pieces
1 (½-inch) piece fresh ginger, peeled and chopped (about 1 ½ teaspoons)
1.5 tablespoon olive oil
0.5 teaspoon pure maple syrup
0.5 garlic clove, chopped (about ½ teaspoon)
0.25 teaspoon fine sea salt
Freshly ground black pepper
Pickled ginger
Crudités, rice crackers, or pretzels

Steps:

  • Place carrots and ginger in a medium saucepan, and add water to cover. Bring to a boil over medium-high; cover, reduce heat to medium, and simmer until carrots are tender, 10 to 15 minutes. Drain carrot mixture, reserving cooking liquid.
  • Transfer carrot mixture to a blender, and add oil, syrup, garlic, salt, and 1/2 cup of the reserved cooking liquid. Remove center piece of blender lid (to allow steam to escape); secure lid on blender, and place a clean towel over opening in lid (to prevent splatters). Process until blended, about 45 seconds; add more reserved cooking liquid, 1 tablespoon at a time, until desired consistency is reached. Transfer to an airtight container, and refrigerate until dip is room temperature or cold, at least 30 minutes. Garnish with freshly ground pepper and pickled ginger slices. Serve dip with crudités, rice crackers, or pretzels.

2 large carrots, cut into 1-inch coins
2 cloves garlic, peeled
1-inch piece fresh ginger, peeled and chopped
1/2 cup raw cashews
Salt and freshly ground black pepper to taste

Steps:

  • Put carrots, garlic cloves and ginger into a medium saucepan and cover with water by 1/4-inch.
  • Bring to a boil over high heat, reduce heat and simmer until carrots are soft and water is nearly gone.
  • Turn the carrots, garlic, ginger and 2 tablespoons of the cooking water into a blender or food processor fitted with a steel blade. Add the cashews and process until smooth. Season with salt and pepper to taste.

The flavorings dress up an "ordinary" vegetable, and put some real zip in any meal! This is an easy, quick dish to make, and it adds a splash of color to your table.

2 tablespoons ginger, peeled and chopped
1 tablespoon soy sauce
3 tablepoons canola oil
1 tablespoon rice wine

Steps:

  • With an electric juicer, juice the carrot and ginger. In a saucepan, combine juices and soy sauce. Bring to a boil and simmer 7 to 10 minutes. Whisk canola oil into sauce in a slow stream. Add rice wine.

1 1/2 lbs raw carrots (peeled and washed)
2 tablespoons olive oil or 2 tablespoons butter
1 medium yellow onion, chopped
3 garlic cloves, minced
1 tablespoon ginger, minced
7 cups vegetable broth (or chicken broth)
1 cup dry white wine (optional)
1 1/2 cups cashew nuts (unsalted and either raw or dry-roasted)
2 tablespoons lemon juice (oj may be substituted)
1 pinch curry (to taste) or 1 pinch coriander powder (to taste)
salt and pepper
fresh chives (to garnish) or fresh parsley (to garnish)

Steps:

  • Peel and cut carrots into 1/2 inch pieces, place oil or butter in large stock pot over medium heat. Add onion, ginger, and garlic, saute for about 15 minute Add broth, carrots, and (if using) wine. Heat to boiling. Reduce heat and simmer uncovered over medium heat until carrots are tender (about 45 min). Putee in blender with cashews. Season with juice, currey, coriander, salt, and pepper, as desired. Serve hot or cold.
