CUCUMBER AND GINGER FIZZ

5 slices English cucumber
4 fresh mint leaves
1 slice fresh ginger
1/4 cup cucumber juice
2 tablespoons lime juice
Chilled ginger beer, for topping

Steps:

  • In a shaker, combine the cucumber slices, mint leaves and ginger. Muddle the ingredients until they begin to soften. Add enough ice to fill up half of the shaker. Add the cucumber juice and lime juice and shake until the ingredients are combined.
  • Transfer immediately to a tall glass and top with the ginger beer. Serve.

1 1/2 cups vodka
2 English cucumbers (1 peeled and coarsely chopped, 1 whole)
1 lime, cut into 8 wedges
2 bottles (750 ml each) sparkling water
1/2 to 1 cup Ginger Simple Syrup (recipe page 614)

Steps:

  • Put vodka and the chopped cucumber into a nonreactive container. Refrigerate 1 hour. Strain; discard cucumber. Refrigerate until ready to use, up to 2 days.
  • Using a vegetable peeler, shave the remaining cucumber lengthwise into wide strips; discard seeds.
  • Fill 8 glasses with ice. Add 3 cucumber strips and 3 tablespoons infused vodka to each glass. Squeeze a lime wedge into each, and drop into drink. Top with sparkling water, and stir in 1 to 2 tablespoons of the ginger syrup. Serve immediately.

12 ounces fresh ginger, thinly sliced
1 1/2 cups sugar

Steps:

  • In a small saucepan, bring ginger, sugar, and 1 1/2 cups water to a boil over medium heat. Cook 2 minutes. Strain the mixture through a sieve, discarding ginger. Store in an airtight container in the refrigerator up to 1 week.
