1 (12 ounce) sirloin steak, trimmed

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Blend soy sauce, vinegar, brown sugar, sesame oil, garlic, and ginger together in a blender or food processor until dressing is smooth.
  • Press peppercorns into both sides of steak and season with salt.
  • Place steak, scallions, and red bell pepper on the preheated grill and cook for 4 minutes. Flip and cook until vegetables are charred and steak is cooked to desired doneness, about 4 minutes more. Let steak rest on a work surface for 5 minutes before thinly slicing along the grain. Cut scallions into 1-inch pieces and bell pepper lengthwise into strips.
  • Toss curly endive and radicchio with the dressing in a bowl; transfer to a platter and top with steak and vegetables.

8 ounce wild caught fresh Ahi tuna steak (I used Hawaiian Bigeye, ask your fishmonger for tuna that is suitable to eat raw)
1 Tablespoon black sesame seeds
1 Tablespoon sesame seeds
1 teaspoon crushed red pepper
Kosher salt
1 teaspoon canola oil
Salad:
4 cups organic mixed greens (I used a blend of spring greens and baby spinach)
2-3 Tablespoons shelled edamame (optional)
3 Tablespoons diced red bell pepper (optional)
fresh lime (optional)
Dressing/Dipping Sauce (makes 1/2 cup):
1/4 cup plus 1 Tablespoon O Ginger Rice Vinegar (O Yuzu Rice Vinegar would work well, too)
1/4 cup toasted sesame oil
1 1/2 Tablespoons tahini paste (I used Artisana Organic Tahini that I found at Whole Foods, but any tahini paste will work)
1 Tablespoon honey
1 large clove garlic, finely minced
1 teaspoon finely minced fresh ginger (less than a one inch knob)
1/2 teaspoon kosher salt
Sesame Ginger Dressing
Whisk all the dressing/dipping sauce ingredients together until emulsified and well blended.

Steps:

  • Using your hands, coat both sides of the tuna with the sesame seed mixture. Pat and press to be sure it's well coated. Heat non-stick skillet to high and add canola oil to coat bottom of pan. Skillet should be extremely hot, then place sesame-coated tuna in pan and allow to sear for 45 seconds then flip and sear another 45 seconds. Pulling it all together: Mix ingredients for salad (mixed greens, edamame, bell pepper) together and toss with a small amount of dressing. Arrange on plates and top with the sliced tuna. Serve with extra dressing on the side to dip your tuna in.

3 large whole skinless, boneless chicken breasts, about 3 pounds
24 ounces fresh Chinese thin egg noodles or fresh linguine
6 cloves garlic, minced
2 tablespoons minced fresh ginger
1/2 cup Oriental sesame paste
5 1/2 tablespoons low-sodium soy sauce
1 tablespoon sugar
1 tablespoon hot chili oil
3 tablespoons Oriental sesame oil
3 tablespoons rice vinegar
3 tablespoons white wine or dry vermouth
6 scallions, sliced
6 tablespoons chopped fresh coriander

Steps:

  • Preheat the oven to 375 degrees.
  • Divide the breasts in half, remove the cartilage and place them in a roasting pan. Roast for 25 minutes. Remove from the oven and cool.
  • Cook the noodles in boiling water until done, about two minutes. Drain and run cold water over them. Drain.
  • Combine the garlic, ginger, sesame paste, soy sauce, sugar, chili oil, sesame oil, rice vinegar and wine; mix well. Toss with the noodles and scallions.
  • Shred the chicken and mix with the noodles. Add the coriander and toss.

There, it is served on a strawberry fields salad, but it makes a delicious dressing on any salad, fruity, oriental, or as a mariande. Just like at the resturaunt it is oily, but thats what makes it so tasty! Shake well before using, and try not to eat it as soup!

2/3 pound Kirby cucumbers
2 cloves garlic
Enough fresh or frozen ginger to yield 1 tablespoon coarsely grated
2 tablespoons Asian sesame paste
1 1/2 tablespoons reduced-sodium soy sauce
1 teaspoon sugar
2 teaspoons Asian sesame oil
1 teaspoon hot-chili oil
1 tablespoon rice vinegar
1 tablespoon white wine or dry vermouth
8 ounces very thin Chinese noodles or Italian spaghettini
2 scallions
Few sprigs cilantro to yield 2 tablespoons chopped
10 cherry tomatoes

Steps:

  • Bring some water to boil in a covered pot for the pasta.
  • Poach the chicken breasts in 1 cup of white wine, adding water if necessary to cover, for 10 to 15 minutes; drain, then shred.
  • Wash, trim and coarsely shred cucumbers; mince garlic; grate ginger. Combine with sesame paste, soy sauce, sugar, sesame oil, hot-chili oil, rice vinegar, and wine or vermouth; mix thoroughly.
  • Cook noodles according to package directions.
  • Wash, trim and slice scallions. Mix scallions with cucumber mixture, and chicken.
  • Wash, dry and chop cilantro.
  • When noodles are cooked, drain and mix with chicken and sauce, and sprinkle with cilantro. Decorate with tomatoes.

2 teaspoons sea salt
1 (1 1/2 kg) sea bass
2 tablespoons sunflower oil
2 cm piece gingerroot, shredded
1 garlic clove, finely chopped
1 red chili pepper, seeded and shredded
4 tablespoons soy sauce
2 teaspoons white vinegar
2 teaspoons sesame oil
4 green onions, shredded
50 g fresh coriander
salt & freshly ground black pepper

  • Preheat the oven to 200°C.
  • Mix together the sesame seeds and salt. Season the cavity of the fish then make 3 diagonal slashes across each side of the bass so it cooks evenly.
  • Transfer the fish to a large roasting tin and brush with a little oil. Scatter over the sesame salt and roast for 25-30 minutes until the fish is cooked and lightly golden.
  • Meanwhile, splash a little sunflower oil into a small pan and cook the ginger, garlic and chile for 2 minutes, without browning. Add the soy sauce, vinegar and sesame oil and remove from the heat.
