1 whole pineapple, peeled and cored, cut lengthwise into 1- to 1½ inch wide spears
2 tablespoons dark brown sugar
1 cup pineapple juice
¼ cup (2 ounces) ginger liqueur,
Barrow's Intense Ginger Liqueur preferred
1¼ cups (10 ounces) rum
Juice of 3 limes (about 2 tablespoons plus 1½ teaspoons)
Ice cubes

Steps:

  • Preheat the grill to medium. Spray the pineapple spears with nonstick vegetable oil spray and sprinkle with brown sugar. Place the pineapple on the grill, and cook for 35 to 40 seconds and, with tongs, rotate (do not turn over) a quarter of a turn to create pretty grill marks. Cook for another 45 seconds, turn over and repeat to create grill marks on the other side. With tongs, transfer to a platter. Skewer and set aside. In a pitcher, combine the pineapple juice, ginger liqueur, rum, and lime juice and stir well to blend. Add at least 2 cups (and up to 6 cups) of ice cubes, pour into glasses and garnish with the skewered pineapple, placing it inside the glass.

2 tablespoons (1 oz) light rum
1 teaspoon chopped fresh gingerroot
1 1/2 tablespoons (3/4 oz) lime juice
1 1/2 tablespoons (3/4 oz) orange juice
Ice
1/4 cup (2 oz) cranberry juice
1/8 teaspoon ground allspice

Steps:

  • In cocktail shaker, add dark rum and light rum. Add gingerroot, then use end of wooden spoon to muddle ginger, releasing its flavor into rum.
  • Add lime juice, orange juice and ice; shake until cold. Pour into cocktail glass filled with ice. Slowly pour cranberry juice into glass; garnish with allspice.

1 orange, sliced into wheels
1/2 cup pomegranate seeds

Steps:

  • Combine the pomegranate juice, pineapple juice, orange juice, dark and white rums and ginger beer in a large punch bowl. Garnish with the orange slices and pomegranate seeds. Serve over ice in chilled glasses such as snifters, rocks, highballs, or cabernet glasses.

200 ml fresh lime juice
125 ml lime cordial
1/2 cup fresh mint leaves, loosely packed
1 1/4 liters ginger beer, chilled
1 lemon, thinly sliced
1 lime, thinly sliced
ice cube, to serve

Steps:

  • Combine the rum, lime juice, cordial and mint in a large serving jug.
  • Add the ginger beer and lemon and lime slices; stir to combine.
  • Add the ice.
  • Pour into glasses to serve.
