2 ounces pineapple vodka
Juice of 1/2 lime, plus 1 lime wheel for garnish

Steps:

  • In an ice-filled glass, add the seltzer, vodka and lime juice; stir. Garnish with a lime wheel.

1/2 cup sliced fresh gingerroot
1 medium lime, sliced
3 cups pomegranate juice
3/4 cup orange juice
3 cups chilled club soda
Optional: Lime wedges, pomegranate seeds and ice

Steps:

  • Place ginger and lime slices in a pitcher; stir in pomegranate and orange juices. Refrigerate overnight. , Just before serving, strain and discard ginger and lime. Stir club soda into juice mixture. Garnish as desired.

Another cool drink from the May 2007 Smoothies & Summer Drinks! A variation of this drink allows for substituting cranberry juice cocktail for the pineapple juice. Preparation & cooking time does not include the 8 or more hours needed to chill the juice in the refrigerator.

2 cups pineapple juice
1 tablespoon crystallized ginger, chopped
1 cup club soda or 1 cup sparkling water
ice cubes or crushed ice

Steps:

  • In a small saucepan combine pineapple juice & ginger.
  • Bring to a simmer, then remove from heat.
  • Pour into small glass bowl, then cover & refrigerate overnight, or at least 8 hours.
  • Strain juice mixture & discard ginger.
  • Gently stir club soda into juice mixture, then serve in glasses over ice.

GRILLED VANILLA-GINGER PINEAPPLE

Sherry Yard has a wonderful recipe in her first cookbook, "The Secrets of Baking," called Roasted Voodoo Vanilla Pineapple. She roasts her pineapple with the dried vanilla pods that you save after you've scraped out the seeds, and fresh ginger. She inserts the pods into the flesh of the pineapple, a great idea if you're roasting the pineapple for a long time. I decided to use vanilla extract instead of the pods, because during the relatively short time on the grill they infused only the section of the pineapple they had been stuck into. I add vanilla to the ginger syrup and baste the pineapple with this sweet and pungent mix. You could also simply drizzle the pineapple with honey.

1 large ripe pineapple
1 teaspoon vanilla extract
1/4 cup ginger palm sugar syrup or honey
Pinch of cayenne
1 tablespoon grape seed oil or canola oil
Fresh mint for garnish

Steps:

  • Cut ends off pineapple. Quarter lengthwise, peel and core.
  • Prepare a hot or medium-hot grill. (If you are using the grill after cooking meat or fish, allow residue to burn off and scrape away with a spatula.) Stir together vanilla extract, ginger palm sugar syrup or honey, and cayenne.
  • Brush pineapple wedges lightly with butter or oil and place on grill. Cook for 6 to 8 minutes per side, basting with the syrup, until you see grill marks and the pineapple is lightly colored. Remove to a platter or to plates and brush on remaining syrup or honey. Garnish with fresh mint, and serve warm.

This is from Mindfood magazine. The recipe calls for fresh pineapple wedges to decorate. I subbed fresh passionfruit for the pulp out of a jar & used lemonade & it turned out great! (^o^)

1/2 cup passion fruit pulp (about 5 6 passionfruit)
2 cups pineapple juice, chilled
1 liter sparkling water (or lemonade or soda water)

Steps:

  • Put ice in 8 tall glasses.
  • Add 1 tbsp passionfruit pulp and ΒΌ cup pineapple juice to each glass.
  • Top with mineral water.
  • Cut pineapple into large slices if using and garnish drinks. Serve immediately.
