40 gingersnap cookies (about 1 1/2 inches in diameter)
1/2 cup pecan pieces
1/2 cup butter or margarine, melted
2 quarts (8 cups) peach frozen yogurt, softened
1 container (8 ounces) Cool Whip lite frozen whipped topping, thawed
1/4 cup finely chopped pecans
2 medium peaches, cut into thin slices

Steps:

  • Heat oven to 350°F. Place cookies and 1/2 cup pecan pieces in food processor. Cover and process until crushed. Add butter; process until mixed. Press evenly in rectangular pan, 13x9x2 inches. Bake 8 to 10 minutes or until center is set when lightly touched. Cool completely, about 25 minutes.
  • Spread frozen yogurt over cooled crust. Freeze 30 minutes.
  • Spread whipped topping over frozen yogurt; sprinkle with finely chopped pecans. Freeze about 4 hours or until firm.
  • To serve, let stand at room temperature 5 to 10 minutes. Cut dessert into squares. Top each square with 2 or 3 peach slices.

1 lb frozen unsweetened sliced peaches or 3 cups peeled fresh peach slices
2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1 tablespoon fresh lemon juice
1/2 cup crumbled gingersnaps (about 8 gingersnaps)
frozen yogurt (optional)

Steps:

  • Preheat the oven to 425*.
  • Evenly distribute the peach slices in the bottom of an unoiled nonreactive 9-inch pie pan or 8-inch square baking dish.
  • Sprinkle the peaches with the brown sugar, cinnamon, and lemon juice.
  • Top with the crumbled gingersnaps.
  • Bake for about 20 minutes, until the peaches are bubbling and tender when pierced with a fork.
  • Serve warm or at room temperature, plain or with frozen yogurt.

LEMON-GINGER FROZEN YOGURT

8 cups plain yogurt
1/2 cup light corn syrup
3/4 cup granulated sugar
3 tablespoons fresh lemon juice
2 teaspoons finely grated lemon peel
1 tablespoon minced fresh ginger
1/4 cup sliced crystallized ginger

Steps:

  • Place yogurt in a cheesecloth-lined colander set over a bowl. Cover and refrigerate for 12 hours. At end of 12 hours, discard the liquid and cheesecloth.
  • In a bowl combine the drained yogurt, corn syrup, sugar, lemon juice, lemon peel, and fresh ginger. Transfer mixture to ice cream maker and process per manufacturer's instructions, about 25 minutes. Transfer frozen yogurt to an airtight container, fold in crystallized ginger and freeze for 2 hours.

2 c plain greek yogurt
1 c greek peach yogurt
3 large fresh ripe peaches
3 Tbsp ginger simple syrup
2 packets splenda
crushed ginger snap cookies

  • 1. In a food processor blend peaches and simple syrup. In a bowl mix pureed peaches with Yogurts and splenda. Place in ice cream machine. Freeze bowl ahead of time Turn on machine and mix away for 25min. Last five minutes You can add some small chopped peaches, of You like the chunks. Serve in bowls topped with crushed gingersnaps. Whipped topping optional.

2 cups 2-percent-fat plain Greek yogurt
3 cups (or 6 store-bought cups, 4 ounces each) lowfat vanilla pudding
1/4 cup (1 ounce) crystallized ginger, finely chopped
4 tablespoons honey
1 teaspoon vanilla extract
2 large (1 1/4 pounds) ripe peaches, pitted and sliced, slices halved (or 10 oz frozen peach slices, thawed )
3 tablespoons sugar
1 teaspoon grated fresh ginger
1/2 teaspoon cinnamon, plus more for garnish

Steps:

  • In a bowl, whisk together yogurt, pudding, crystallized ginger, honey and vanilla until smooth. Freeze until solid, 4 to 6 hours. Remove from freezer and defrost slightly, 15 minutes. In a medium saucepan, bring to a low boil peaches, 1 tablespoon water, sugar, fresh ginger and cinnamon; reduce heat and simmer until liquid thickens and peaches soften slightly, 4 to 5 minutes. Remove from heat; let cool. In a food processor, process frozen yogurt-pudding mixture until smooth. Divide fro yo and peach compote among 6 bowls; sprinkle with cinnamon.

1 firm peach, halved and pitted
1 teaspoon canola oil
2 tablespoons brown sugar
4 scoops vanilla fat-free frozen yogurt
2 gingersnap cookies, crumbled

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Brush peach halves with canola oil.
  • Place peach halves on the preheated grill. Grill until tender and peach is warmed through, about 10 minutes. Place the hot peach on a plate skin-side down. Sprinkle with brown sugar, allowing the sugar to melt. Alternatively, use a small torch to caramelize the sugar. Serve each peach half with 2 scoops of vanilla frozen yogurt and gingersnap cookie crumbles sprinkled on top.
